I don’t really know how this has happened, but over the course of the last few months, I’ve lost complete control over the television.

At first, I was super busy with the baby,  (you know how they need things like ALLLL the TIMMMME) and I turned into one of those horrible people who sniffs, “I don’t have time for television” when people are discussing the last episode of Grey’s.

If we are being honest, the judgmental sniffing was only masking envy.  Hello, an hour of uninterrupted TV time??  Heaven.

Anyways.  Baby girl is finally on a decent schedule and I’ve come up for air.

And to my dismay — Man Shows.  All night, every night.

Do you know that they make whole shows where people just FISH?

It’s true.

This can only be a precursor to Watching Paint Dry — Hardcore Reality.  I mean, there is a time and a place for fishing, and it’s NOT on my big screen when I’ve sat down with a giant glass of cheap wine.

Also…Discovery Channel?

Enough.  Just…enough.

How about we discover something called television that is awesome??  ABC Family runs Sisterhood of the Traveling Pants on nonstop loop.  THAT is something I can get behind.

To celebrate me taking back control of the television (ain’t nobody got time for Swamp People), I made a whole cake that tastes like my favorite thing — TWINKIES!!!!

Most of you know that my recipes vary. Sometimes I go homemade, sometimes I go box style, and this go around, it’s cake mix and pudding for the win.

The way I see it, regular Twinkies are full of chemicals.  It’s what makes them taste so great.  Why would I leave them out now??

If you like Twinkies — make the cake.  It’s seriously FABULOUS and as close to a giant Twinkie as you’ll ever get.

Twinkie Layer Cake

Ingredients

  • Cake:
  • 1 box yellow cake mix (I used Duncan Hines)
  • 5.1 oz box instant vanilla pudding (the large box)
  • 1 cup water
  • 1 stick salted butter, melted and cooled slightly
  • 4 large eggs, lightly beaten
  • Filling/Frosting:
  • 1 stick salted butter, slightly softened
  • 1/4 cup heavy cream
  • 1 tsp vanilla
  • 7 oz jar marshmallow creme
  • 3 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350. Butter and flour 2 (8 inch) round cake pans and set aside.
  2. In the bowl of your mixer, combine eggs and butter. Add water, pudding mix, and cake mix and beat on medium for about a minute, until batter is smooth and thick. Spread evenly in prepared pans and bake for about 20 -25 mins or until tops spring back when lightly touched, or a toothpick inserted in center of cake comes out clean.
  3. Cool cakes for a few minutes in the pans, then turn out on to wire racks to finish cooling.
  4. For frosting/filling: Beat butter and vanilla in your mixer until combined. Add marshmallow cream and beat until smooth. Slowly add powdered sugar until just combined. Add heavy cream, Increase speed to high, and beat for one minute, until light, smooth and fluffy. Spread on cake layers and serve.

    My husband and father love watching Swamp people also. I love mornings when I get the TV and can catch up on Grey’s, and I completely agree about Sisterhood of the Traveling Pants and re-runs of Gilmore Girls…Bring it on!!
    While I liked Twinkies can honestly say I haven’t had one in a long time. So I think its time I make this and bring it to my best friends house so we can stuff our faces with this Twinkies cake and watch our girly shows!!

    If I have to watch one more episode of Myth Busters or How It’s Made I’m going to loose my mind!!! My husband and son’s reason for watching them ALL the time is that they are LEARNING something. I don’t want to learn something at night. I just want to watch mindless tv.

    OMG it sounds like you need a DVR. It’s the only way to ever watch TV again when you have a baby!!! Heck it’s the only way to watch once they are older too. But this cake, I would take in a fast minute with some New Jersey Housewives on DVR when the kids are asleep.

    I’m totally with you on the swamp fishing thing, watched one episode at my brothers while on vacation and sat wondering WHY? Well I’m not happy with TV at all and since I don’t watch any reality stuff and it seems like that is all that is on, I stick to reruns of seinfeld and friends, and it sure would be nice to have other options at this point. I won’t bore you with the details of the awful stuff my husband watches….ugh…boring….cars, repair stuff and politics, it’s just sick of it all. So I would LOVE this cake, it is a sure fire fix for TV awfulness, right! It looks amazing!

    And trying to fit in ANY tv is pretty much impossible with kids, blog, etc. I DVR things and can hardly even get to those!

    (ain’t nobody got time for Swamp People) Made me crack up!! AMEN!! I got control of the remote one time, I chose some obnoxious girly reality shows that I would never watch, but sat through 2 hours of them biting my lip trying not to laugh as my husband has this totally bewildered look on his face and looking at me like I had lost my mind!! Priceless!
    And the cake? Can’t wait to make it for my daughter!

    I have been baking for 30 years and thought I’d made this today….ugh!! Total Pinterest fail :(
    I was so excited to make this based off your pics but it didn’t turn out anything like I’d hoped. The cake baked up nice but deflated as soon as I took it out. The frosting never really “came together”
    I truly hope this is something that was just a fluke and nobody else has issues too. Anyone else make it? How did yours turn out?

      I’m so sorry to hear that!! My cake certainly did not deflate so I am not sure what the issue is there. As far as the frosting…maybe I’ll change the amount of cream. I think it has a lot to do with how soft the butter is and how packed the powdered sugar is in the cup…lots of variables there. It’s not really intended to be THICK, but it should stay on the cake at least.

    Oh my gosh! I had the same thing happen to me today! The cake turned how fabulously. How could it not. The frosting though…not so much. It was so thin. Not fluffy. It tasted just like twinkie filling though. Yummy! So I added more confectioner’s sugar. So sweet, and not so twinkie tasting anymore. So I added another jar of fluff. Thicker now but not as twinkie tasting. Still a bit too thin. I used it and the cake slide, everywhichway. Even the candles flopped over. We ate it and it was good. What can we do to make the twinkie frosting thick enough? What did you do? Please tell because I want to make this again. Maybe next time I will make cupcakes and use the original unfixed frosting as a filling instead. If the cake is a lemon, then make lemonade. It was really tasty though. Thanks.

      My frosting came out just as pictured, but I’m sorry that yours didn’t!! I think it has a lot to do with the softness of the butter, how packed the powdered sugar in the measuring cup…mine may have been more packed in than yours. I tweaked the measurements just a bit (upped the powdered sugar and slightly decreased the cream) to compensate, and changed it to adding the cream at the end which should help a bit. I hope you give it another try!!

    Made the Twinkie Cake this morning with my 3 year old grandson. He loves to use the Kitchen Aid mixer. The cake turned out perfect and delicious. He wanted to personally deliver slices to everyone In the family. Thanks for a yummy cake that gave us an opportunity to make great memories.

    I just found this recipe today on Pinterest. I am not a baker… so this interestes me very much. My daughter’s birthday is coming up soon (she’ll be 23) and I need to make her something special for her special day!! This is it… and I know that she’ll love it… along with her husband and her kids. It will be the perfect ending to a fun birthday for her!!!

      I agree. Just finished frosting the cake and we had a slice and the frosting was crazy sweet and just tasted like powdered sugar…. I probably should have increased the amount of vanilla for our tastes. But I always like to make a recipe exact the first time. Was good but just too sweet for my taste but of course the kids loved it! However, you know it’s sweet when they can’t finish theirs! It is a beautiful cake and I loved the way it looked!

    After seeing one of those “18 grossest ingredients in food” lists on my Facebook wall, I have decided to give up two things (and try to avoid some others) which are: Carmine (a common red coloring made from beetles) and Castoreum (a “natural flavoring” according to the FDA and only listed as such on ingredient lists… Made from the secretions of a beaver’s anal glands!) which is used and hidden from the public because it is cheaper than vanilla and raspberry flavorings! Now, if I want to eat cr*p, I will at least make it myself! The good news is that I will have to REALLY want it to make it and I might lose weight cutting down frequency! I’m hoarding recipes like this for when I get cravings in the future.

    Made the cake last night. To me, it didn’t taste like the twinkie I remember. Making the frosting, I thought it would come out much more fluffier and lighter like the twinkie filling.

    Made this yesterday for Bible study. Was reallllllly good, but not light and airy like the Twinkies I remember. (Mine looked just like yours!)
    Haven’t had Twinkies for a long time, I could be wrong on the texture. The filling was almost the death of me, soooooo yummy!! Thanks for a great recipe.

    Love this. I made it in a bundt pan. Baked about 30 minutes. Once cooled I scooped out little pockets from the underside and filled with the filling. Delicious and huge hit with my family. Thank you so much.
