Red, white, and blue ambrosia salad is the perfect sweet side dish for your Fourth of July gathering! It’s light, fluffy, and always a crowd pleaser.

I have always been a sucker for desserts masquerading as salads.
I try to eat healthier these days…most of the time. There’s a time and a place for everything, and when it comes to summer cook-outs or a get-together with friends, all bets are off. How can I be expected to eat turkey burgers and celery while everyone else scarfs down hotdogs and cupcakes? That’s a good way to end up crying in the corner, if you ask me.
And I’m talking about them. Because I will have taken their plate, shoved them into the pool, and be stuffing my face with their food. What do you do, no one is perfect.
Campfire® Marshmallows is always killing it with their fun seasonal marshmallow flavors. I was recently sent some of their Red, White, and Blue Roasters, which are berry flavored and so fun! While we love using them for s’mores around the fire pit, I knew I wanted to use them to make one of my favorite sweet salads — Ambrosia. As a kid we often had Ambrosia on the holidays, and it was always my favorite thing on the table. My favorite way to eat it is leftover and piled high on a slice of Angel Food cake, but we don’t have to talk about that.
I know. It’s a lot.
Campfire® Roasters are large, so I cut them into quarters and tossed them with whipped topping, sour cream, coconut, pineapple, and maraschino cherries. The berry flavor of the marshmallows gave the Ambrosia a summery flavor that we all loved.
I may or may not have eaten the leftovers. Piled high on a slice of Angel Food Cake. We don’t have to talk about it.
We always keep a stash of Campfire marshmallows in the pantry. From spur of the moment S’mores parties to krispie treats or crafts, I’m always glad that I have them on hand. And the Campfire website has so many great recipes if you need a little inspiration.

- 8 oz whipped topping, thawed
- 1/2 c. sour cream
- 12 oz bag Campfire® Red, White, and Blue Roasters, cut into quarters
- 20 oz can pineapple tidbits in juice, drained
- 1 cup sweetened, shredded coconut
- 1 1/2 cups maraschino cherries, drained and diced
- In a large bowl, fold together Cool Whip and sour cream. Add marshmallows, pineapple, coconut, and cherries. Stir gently.
- Cover and refrigerate for at least 1 hour or overnight.
