We all know that baking is my thing, but I also cook nearly every evening. And while I don’t necessarily ENJOY cooking, it’s a necessary evil, due to the rising cost of fast food combo meals. And also, all the cholesterol.
Working from home and having two kiddos, I have to stay incredibly organized to be prepared to cook dinner every evening. I work all day, leave the house at 1:30 in the afternoon to get Lucy from preschool and then next thing you know Jon David is home needing help with his homework. We do snacks, I fold laundry, Lucy and the puppy get in forty-seven fights, and then I blink and it’s time for dinner.
More than I’d like to admit, I find that I forgot to prepare. Oftentimes I didn’t put meat in the refrigerator to thaw, and I don’t want to load up the kids and haul the whole circus to the store.
One trick I have discovered to save dinner time on those crazy evenings is to stock up on ham and rotisserie chicken every month.
I buy several rotisserie chickens (they’re so cheap!) and a few ham steaks. Then I pick the meat from the chicken and dice it up. I do the same with the ham and put them in separate freezer bags and freeze. They thaw quickly AND the meat is already cooked, which is great for when I’m in a hurry. Make a super yummy pasta dish that the whole family will love!
Barilla® recently debuted their Pronto One Pan-No Boil-No Drain Pasta and I am loving it for a zillion reasons, the main one being that it truly allows you to cook everything in ONE PAN! NO separate pot for the pasta, NO walking the boiling pot across the kitchen to the sink to drain, and NO waiting for the water to boil before adding the pasta.
You literally add some cold water to the pasta in your pan, boil on high until the water is absorbed, and done. Roughly ten minutes from start to finish.
This creamy skillet recipe, featuring Barilla® Pronto Penne, diced ham and chicken, Parmesan cheese, and a tomato cream sauce, is family friendly and comes together in less than 30 minutes. My husband loves tomato based sauce but I’m more of a creamy pasta kinda girl, so this is the best of both worlds.
The sauce is like a euphemism for marriage if you will. Good things happen when you compromise!
- 12 oz box Barilla Pronto Penne Pasta
- 15 oz can tomato sauce
- 1 cup chicken broth
- 1/3 cup heavy cream
- 1/3 cup Parmesan cheese
- 2 cups cooked, diced chicken (I used rotisserie chicken)
- 2 cups cooked, diced ham
- Pour the entire box of pasta into a large skillet. Pour 3 cups of COLD water into the pan, making sure that the water covers the pasta. Turn the burner on high, adding salt to the water if desired, and set your timer to 10 minutes. Let the pasta cook on high and stir occasionally until almost all of the water is absorbed.
- Pour tomato sauce, chicken broth, cream, and Parmesan into the skillet. Stir over medium low heat until thickened and smooth. Add chicken and ham and stir to coat. Serve.
