I mean, I’ve had some great no-bake cheesecakes in my life. I’m a master at the 8oz of cream cheese + 1 can sweetened condensed milk version, and always get lots of compliments on it.
But as it would turn out, every cheesecake I’ve eaten in my life was preparing me for the task of creating the World’s Most PERFECT No Bake Cheesecake

What makes this cheesecake special? A few things. The texture, for one. It’s perfectly creamy and light and the addition of gelatin means that it cuts like a darn DREAM. No sloppy squares. We all know how terrible THOSE can be, am I right?
The flavor is spot on. Slightly tangy thanks to a bit of sour cream and lemon, and not overly sweet. This is not the stuff that you take two bites of, declare it too rich, and throw the rest away. You’ll be scraping the plate, TRUST ME ON THIS.
And can we talk about that blueberry sauce? Isn’t it glorious? All it takes is about 10 minutes of prep and it’s done. And if blueberries aren’t your thing, use ANY fruit, fresh or frozen. Easy peasy.
