Can we talk about the first time I ever had a birthday cake ice cream cone? I was in the third grade. A certain blonde headed boy had recently gifted me with his entire seasonal eraser collection. There were jack-o-lanterns, Christmas trees…even a cornucopia. It was a pretty big deal.
I mean, I’m not sure what that eraser collection was worth, but I was certain that a tiny piece of his heart came along with it.
Then I chased him on the playground and when I caught him, pinched him good and hard on the arm. You know…to say thank you. I don’t even know, guys. But I can tell you that my husband would not be at all surprised by my tactics.
One day that same year, one of the class moms brought in ice cream cone cupcakes for a birthday. Of course, this was before everything had to be prepackaged or store bought for class parties. Because, you know, stores and bakeries have perfectly clean kitchens and have no access to poison.
Um. It’s a miracle we lived to tell the tale, I guess?
I was amazed by those cupcakes. AMAZED. And here I am a whole grown up, making my very own. Full circle, friends.
These cupcakes are incredibly simple to make, and are so easy to customize. You can change the frosting or sprinkles to match just about anything! I made a chocolate shell to dip these in if you want — feel free to sub white chocolate or butterscotch chips!
