Today is the day I give you all the presents!!
Actually..that was a lie.
I’m not giving you ACTUAL presents, just the tools you need to give gifts to others.
They say that GIVING a gift is the best gift of all, right? But then…what about the people who GET the gifts? Are they getting the SECOND best gift? Are we punishing people by giving them presents?
This just got so confusing.
If you’re still here (please still be here, please still be here) I am so excited to share this recipe with you. This homemade gingerbread pancake mix is a CINCH to whip up and the pancakes smell so Christmasy. Homemade breakfasts are such a special treat, especially if you’re like me and live off of honeybuns.
(Just kidding about the honeybuns. Sometimes I eat cold chocolate covered cherries or Pop Tarts)
The other great thing about this mix is that it fits in a pint sized jar, which you can usually get at Walmart for around $1 each if you buy a box of 12. Then when the pancake mix is gone, they can wash it out and use it to drink wine out of!!
I’ve heard that some people do that (me).
One of my very best friends does graphic design and has an Etsy print shop. She was nice enough to design these free lid labels, instructions (just add water and one egg, so easy!!) and jar labels. And they are free for you to print out and use.

This mix serves TWO (roughly 8 pancakes), so you could easily double and put in a quart jar for a larger family. A couple of things: I used a canning funnel (They had one at Walmart next to the canning supplies for like $2) and it made this SO easy. I was able to scoop the mix into the jars with no mess. You’ll notice that not ALL of the mix will quite fit in the jar. Just get what you can, put the lid on, and give it a good few pounds on the counter. It will pack the mix in the jar and when you take off the lid, you’ll have room for the last little bit.
Here’s the recipe along with instructions for making the pancakes. These instructions are also on the printable tags, so your recipient will be good to go!!
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 TBS dark brown sugar
- 1 heaping tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- In a large bowl, whisk all the ingredients together thoroughly. Spoon into jars. Tightly seal and label.
- To prepare pancakes: Pour mix into a large bowl. In a separate bowl, whisk together one cup water and one large egg. Whisk into pancake mix. Cook on a hot griddle or skillet.
