This Grasshopper Pie is always the first to disappear! If you like mint chocolate chip ice cream, you HAVE to try it! This pie is a simple, easy, no bake dessert perfect for summer time (or any time!)

What the heck is Grasshopper Pie?

The Grasshopper Pie is apparently related to the cocktail called The Grasshopper. The cocktail is equal parts crème de menthe, crème de cacao, and cream, which sounds….interesting, to say the least. The Grasshopper Pie became popular in the 1960s and is still a favorite to this day. There is just something amazing about mint and chocolate together, and I have a ton of recipes featuring this combo. 

The Grasshopper Pie comes together really quickly, thanks to it being no bake. I use a store bought Oreo crust to simply things even more, but feel free to make your own!

Grasshopper Pie - Recipe + Video

This Grasshopper Pie is a classic recipe that everyone loves! It's a cool, creamy, simple no bake dessert that is perfect for any time of the year!

Ingredients

  • 8 oz cream cheese softened
  • 8 oz tub Cool Whip thawed
  • 1 Oreo Cookie Crust Store bought or homemade
  • 7 oz sweetened condensed milk
  • 16 Keebler Grasshopper cookies Mint Oreos will also work
  • Green food coloring Wilton is my favorite

Instructions

  • Crush Keebler mint cookies in a large Ziploc bag.  Some large chunks are fine, but you want mostly very small, even crushed pieces.
  • In the bowl of a mixer, beat cream cheese on medium until smooth. 
  • Add sweetened condensed milk and beat until combined. 
  •   Mix in crushed cookies and fold in Cool Whip. 
  • Add food coloring and fold in until desired color is achieved.  
  • Pour into pie shell and chill for at least 4 hours.

This will make a very very full pie. If you double the recipe, you can get 3 normal pies.

If you like mint chocolate chip ice cream, you will love this pie.  The crushed cookies give a  minty flavor throughout, and the color is festive and perfect for Christmas.  This pie is always hogged down at get togethers, so make it soon!!

Yes, in Arkansas we say hogged down.  It means that people ate it really hard and then it was gone.

    What happens in Vegas stays in Vegas so if you get re-married again there have to blog about it before you leave…maybe while your husband is doing his stilts and possibly unicycle act in Cirque!

    This pie looks delicious. I’m sorry your Grandpa Pat is no longer here to enjoy it with you but I’m certain if there are computers/laptops in heaven, he’s enjoying this and all your delightful posts.

    We don’t get Keebler Grasshopper cookies here, otherwise I would be making this.

    My hubster can ride a unicycle. It probably makes me slightly cooler thank the average bum-wiping, dish-washing, house-cleaning,general chaos-calmer mom, right?

    And I can’t wait to make this pie. I’ll probably sit down and eat it all by myself. The man may be able to ride a unicycle, but he has no appreciation for Grasshopper Goodness.

      Not sure but I *think* it has to do with growing up seriously broke. Amazing how kids can entertain themselves when expensive toys and electronics are removed from the equation!!

      But I’ve never actually seen him on stilts so I suppose he could be lying. Which would suck because I’m really excited.

    Homemade stilts – take two of those giants cans that hold things green beans or corn that you buy at someplace like costco, empty them, punch two holes near the top and pull a string through, then have those strings be really long. Tie them at the top and use them for handles. You have to pull on the strings as you walk, to make the stilts (cans) go with your feet, but I’m pretty sure they’re good for beginners.

    that is how I got started on my stilt walking adventures.

    Quick question. Does “chill” mean freezer or refridgerator? I just made this pie and stuck it in the fridge for 4 hours and it is still a little goopy. It may just need more time. Im going to make another one tomorrow and I want to make sure its done right. I also substituted neuchafatel for the cream cheese (could that be an issue?). The filling is so tasty tho, thank you so much for this easy recipe that ive somehow complicated hahaha!
