Lucy has reached possibly my most favorite age ever — 4 1/2. Everything is new and exciting for her; she has so many questions and opinions. While she’s old enough to be relatively articulate and mature at times, she still loves being babied and always wants to mimic the things I do. She often calls herself my mini-me, which basically makes me melt because good grief, who doesn’t love feeling adored and looked up to?

Right now Lucy is totally obsessed with baking (she has her own baking series!) and she’s surprisingly capable in the kitchen. I have learned that kiddos are the most susceptible to learning when you keep things simple and fun. Frustration, complicated steps and endless ingredients make the whole baking process a dread-worthy event for any small child, so I was thrilled to learn that Pillsbury™ has created ready-to-go Filled Pastry Bags, making the cupcake frosting process a cinch!

Space Exploration Day is right around the corner (July 20), and while Lucy loves ANYTHING outer space-themed, her knowledge of our solar system is mostly nonexistent. So I was thrilled to take an afternoon baking up Galaxy Cupcakes with her with Funfetti® cake mix and Pillsbury Filled Pastry Bags! The best conversations take place over bowls of cake batter and frosting, and I had Lucy’s full attention while we talked about the planets in our solar system and all the cool ways that real men and women have gotten to explore space. It’s funny how the most fascinating things become mundane and ordinary until we have the opportunity to view them again through the eyes of our children. Outer space is really a pretty thrilling thing and I couldn’t help but wonder what we will know by the time Lucy is my age.

Who knows? Maybe she’ll end up being one of the people who makes a new discovery!

Because Pillsbury Filled Pastry Bags are totally disposable, clean-up is a breeze. Lucy and I are both suckers for frosting, so anything that shortens the time from messy kitchen to frosted cupcake feast is a winner in our book. After minimal effort, we wasted no time enjoying our heavily-frosted and sprinkled creations.

Galaxy Cupcakes

Ingredients

  • 15.25 oz box Pillsbury Funfetti® cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 16 oz Pillsbury Filled Pastry Bag, Vanilla
  • Assorted sprinkles

Instructions

  1. Preheat oven to 350. Line 24 muffin tins with liners and set aside.
  2. In the bowl of your mixer, beat cake mix, water, oil, and eggs on low for 30 seconds. Increase speed to medium and beat for two minutes. Fill prepared muffin tins 2/3 full with batter.
  3. Bake for 12-17 minutes, until tops spring back when lightly touched in the center. Remove from oven and let cool completely on wire racks.
  4. Pipe vanilla frosting on prepared cupcakes and decorate as desired.
