Can we all agree that it’s an amazing thing when a delicious dessert is simple enough for a four year old to make?
I’m just saying that it’s time for us to take a break and let the little ones take over for awhile. We paid our dues with the late night feedings and explosive diaper changes and SUPER SPECIFIC snack requests. Let them make themselves useful for once, AM I RIGHT?
Now that’s what I’m talking about.
School is in full swing and I am not mad about it. Quite the opposite — I deemed it worthy of a celebration. And what better way to celebrate than with chocolate treats?
I almost always have a box of Pillsbury Chocolate Fudge Brownie Mix in the cupboard. It’s the perfect jumping off point for trifles, cupcakes, or fudgy little cookies. Or…ya know…brownies, I guess.
This go around, Lucy and I decided to take advantage of a cool new product that we are kind of obsessed with…
Filled Pastry Bags! Because we all know that the only thing better than a brownie cookie is TWO brownie cookies! With fudge frosting in the middle because we are our own bosses.
These little pastry bags are a miracle and I’m not ashamed to say it. They are PRE-FILLED and have a star-shaped tip built in! Just use and toss, which is my motto. Especially for all the men in my life.
Just kidding, husband, gosh. I PROMISE IT WAS A JOKE.
All you need to whip up your own batch of fudgy magic is a box of Pillsbury Chocolate Fudge Brownie Mix, one large egg, a couple tablespoons of water, some oil, and a big handful of milk chocolate chips. Mix it all up with a wooden spoon, scoop onto a cookie sheet lined with parchment…
…and pop them in the oven for about 8 minutes. I like mine slightly underbaked. Don’t we all?!
Enlist your trusty sidekick to take over the frosting and sandwich-ing part of the recipe (bonus — they look darn cute whipping up treats), and there you have it.
A cookie that is perfect for snacking, taking to parties, or tucking into little unicorn lunchboxes.
I have also heard that some people like to eat the frosting right out of the tube. I’m not here to recommend it, I’m just saying that I’ve heard that it’s quite the experience.

Thanks so much to Pillsbury for giving Lucy and I a great excuse to bake together. We had so much fun sharing these cookies with the rest of the family.
