I am often asked about my favorite low-carb meals, particularly lunches or low-carb meals for picky eaters. Finding meals that are yummy and easy AND not full of carbs can be really difficult, especially when you’re short on time or don’t feel like spending a million dollars on special ingredients.
Can we all agree that too many ingredients exist nowadays? Because I’m super not interested in running to the store for a special spice or sauce that I’ll use one teaspoon of and hang onto for the next fourteen years.
One of the meals I always point people to is this Egg Roll in a Bowl. There are several versions of this floating around online, but this one is my absolute favorite. It’s super filling, whips up in about 10 minutes, and makes excellent leftovers! Even my husband loves it, and that’s saying something.
This makes a great lunch or quick dinner after the gym — it’s not heavy feeling in your stomach and has loads of flavor and crunch.
