School is in full swing and a chill is in the air — a sure sign that I’m running around like a crazy person from one fall activity to the next.
Whether it’s dance, gymnastics, youth group, school activities, or sleepovers, there is always somewhere to be. Considering that I keep our schedule pretty laid back and am careful not to overdo the activities or obligations, I really don’t know how some families manage. I love our busy day-to-day SO much, but it makes me appreciate and treasure our time together on the weekends more than ever.
Thankfully, working from home allows me a bit of flexibility with my schedule. I try as hard as I can to wrap up all loose ends by Friday so that I have the whole weekend to enjoy with the kiddos uninterrupted. We never have a lot planned for the weekend, so we usually sleep in, curl up with a movie (or a football game), and whip up a batch of cookies. One of our favorites is the Country Crock® Make It Yours™ cookie recipe. Lucy loves to help me bake, and cookies are her absolute favorite. They never last long, especially if Jon David happens to have friends over. Twelve year old boys can make cookies disappear in an instant!
The Country Crock® Make It Yours™ cookie recipe is a GREAT jumping off point for just about any cookie you can dream up — perfect for spur of the moment cookie cravings! Whether it’s a classic chocolate chip, something more exotic like dried fruits and coconut, or a sweet and salty combo, the Country Crock® Make It Yours™ cookie recipe always turns out perfectly chewy and buttery.
My latest spin on this recipe is possibly my favorite — I subbed white cake mix for part of the flour, added sprinkles, mini M&Ms, and white chocolate chips — and the result is individual portions of happiness! These Confetti Cake Cookies did NOT disappoint — I think my husband loved them the most!

- 1 cup Country Crock® Spreadable Sticks or Tub, cold from the refrigerator
- 3/4 cup granulated sugar
- 3/4 cup firmly packed light brown sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 cup white cake mix
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1/4 tsp. baking soda
- 1/2 cup rainbow sprinkles
- 2/3 cup mini M&Ms
- 2/3 cup white chocolate chips
- Preheat oven to 375°. Mix Country Crock® Spread, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed. Stir in flour, cake mix, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)
- Add rainbow sprinkles, mini M&Ms, and white chips and mix until well-blended.
- Measure dough by 1/4 cup fulls and place on ungreased baking sheets 4-inches apart.
- Bake for about 11 minutes, until edges are lightly golden. Cool 1 minute on wire rack; remove from sheets and cool completely.
