Caramel Churro Chex Mix

This Caramel Churro Chex Mix is the very worst and the very best type of recipe.

Worst because it’s you can’t stop eating it. Best because…you can’t stop eating it.

It’s basically the humble bragging-est dessert on the planet. I’m over here all like, “ugh, I made something SO good that I can’t put it down. I’m going to get SO FAT from the delicious, addictive recipe that I made.”

And can we all agree that humble bragging is the grossest thing on the planet? It really is. It’s like…look, dude. If you’re not actually awesome enough to OWN how awesome you are, you need to just be quiet.

“Ugh, I have SO MUCH MONEY that I can’t stop buying ALL THESE THINGS I DON’T NEEEEED.”

“Oh my gosh, you guys, I am SO POPULAR, I can’t even handle how many people want to hang out with me.”

“I’m SO GOOD LOOKING that girls are too intimidated to be my friend. It’s so annoying. I wish I was uglier.”

Because you’re my friends, I’m going to let you in on a little secret — if a girl ever tells you that she doesn’t have any girl friends because she is too pretty, run. Run like Jillian Michaels is chasing you with a green smoothie in her hands.  Because I assure you — her looks have nothing to do with her current friend situation.

So in the hopes of eliminating humble bragging completely, I’m just going to own how completely amazing this Chex mix is. It’s crunchy, caramel-ey, and sugar cinnamon-ey. Have you ever had a churro dipped in caramel? Well. If you have, you know what I’m talking about.

Obviously I have to warn you that you won’t be able to put this stuff down. You just won’t. You’ll probably make yourself sick and be ruined from any other snack for the rest of your life, but there is just no way around that. There are only a few real concrete truths in life, the addictiveness of this Caramel Churro Chex Mix being one of them.

It goes without saying that this stuff also makes a pretty perfect weapon. We all have that one friend who is just skinny enough to annoy us. Just quietly set a bowl of this out within arm’s length and watch her self-destruct.

Caramel Churro Chex Mix

Prep Time: 15 minutes

Cook Time: 7 minutes

Total Time: 22 minutes

Yield: 15 servings

Ingredients

  • 4 1/2 cups Rice Chex™ cereal
  • 4 1/2 cups Corn Chex™ cereal
  • 1cup packed brown sugar
  • 1/2 cup (1 stick) salted butter
  • 1/4 up light corn syrup
  • 1/4 teaspoon baking soda
  • 2/3 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350. Place cereal in a large, heat safe bowl. Line a large baking sheet with foil and spray with nonstick baking spray.
  2. In a small bowl, combine cinnamon and sugar and set aside.
  3. In a heavy saucepan over medium heat, heat brown sugar, butter, and corn syrup until the mixture comes to a boil. Let boil for one minute, stirring constantly, then remove from heat and stir in baking soda. Pour over cereal and stir until cereal is coated.
  4. Spread cereal on prepared baking sheet. Sprinkle evenly with cinnamon/sugar mixture. Bake for about 5 minutes, then flip with a spatula and bake for 3 more minutes, until cereal turns golden brown. Remove from oven and let cool completely, then break up and store in an airtight container.

    Ha! If a girl tells you she doesn’t have any friends because she’s pretty…. also be weary of girls who say they don’t like girls because they can be… in nice words “catty” because they are the ones who are the worst.

    Making your Caramel Churro Chex Mix would, in theory be a great way to make friends, but i don’t like sharing. When something is good and bad because you can’t stop eating it means it’s a success! I should just make it myself to find out!

    …is there anyway to replace or sub the corn syrup?? I just cant bring myself to use it when we try to avoid eating anything w/ hfcs. thanks!

      I buy an organic corn syrup. We avoid hfc at all times. I’m not sure there is an organic corn chex type cereal. We also try to avoid GMOs.

      Corn syrup is not the same as high fructose corn syrup. HFCS has been altered to make it, well, higher fructose than regular corn syrup. Corn syrup is still sugar, but it doesn’t have the added problems of HFCS.

    Looks wonderful, I will definitely try this. Question…why the baking soda? I have never made regular Chex mix, is it an ingredient in that as well? Would there be any difference in the outcome if I left it out? (No reason why I need to omit it, just the thought of baking soda in this recipe is icky to me.)

      You can definitely make it without the baking soda! Baking soda makes the caramel coating easier to bite…it’s not quite as chewy where it gets stuck in your teeth that way. But it would work without it and still taste great :)

      Karen, you ever made peanut brittle? Doesn’t sound like it. Baking soda causes a chemical reaction in the sugar which generates gas, making the product crunchy, but minimally sticky.

    I followed the recipe exactly. Very easy to get this done in no time at all. This is really excellent. My husband suggested adding peanuts and a sprinkling of sea salt on top.

    These are impossible to stop eating because they are so freakin’ delicious!!! Only make them if you have a place to bring them to and share them or else you will devour them all yourself! :)
    I made mine with a box of Cinnamon Chex because that’s what I had, and one box only equals about 8 cups, but I went ahead with it anyway. I didn’t bother adjusting the other ingredients to make up for the missing cup of cereal, and I also baked the whole mess for 20 minutes total (just keeping my eye on it and waiting until the colour was a nice golden).
    But seriously…..so good. So, so, SOOO good!!!

    This looks delicious! My husband is a huge churro fan. I was thinking of making this and mailing it in a care package to him in Iraq. Do you know how long it lasts in a air tight Tupperware container? Mail is taking two weeks to get to him so I was wondering if it would still be good.

    Just made this for the first time. This stuff should be illegal! Hubby and I can’t stop eating it and it hasn’t even cooled yet. The only thing I did differently was to cut the cereal back to 8 C. and added 1 C dry roasted nuts…we love nuts! This has replaced my caramel corn recipe! YUM!

    Scrolling through pintrest and I see this recipe!! I bake regularly so I had the ingredients on hand… I made it and needless to say the double batch was about a half batch by the time it was cooled off!
    I imagined it with some vanilla ice cream and a little cinnamon sprinkle!! But it is as good as the recipe says AND EASY!!!! My first time making Carmel!!!

    My mother always told me to read a recipe completely before you start baking…
    didn’t listen then, don’t listen now. I mixed the brown sugar with the cinnamon,
    so I went ahead and used it on top also. I added a pinch of salt to the topping to
    cut the sweetness a bit and Y U M M Y !!!!! DELICIOUS!

    We love this, but I replace 1/2 of the Chex mix, with a bag of microwave popcorn, after the mix bakes. It is sweet and salty, we can hardly stop eating it! I will be making gallon bags of this to send home with family at Christmas <3
