Caramel Churro Chex Mix
This Caramel Churro Chex Mix is crunchy, cinnamon-sugarey, and completely addictive!
This Caramel Churro Chex Mix is the very worst and the very best type of recipe.
Worst because it’s you can’t stop eating it. Best because…you can’t stop eating it.
It’s basically the humble bragging-est dessert on the planet. I’m over here all like, “ugh, I made something SO good that I can’t put it down. I’m going to get SO FAT from the delicious, addictive recipe that I made.”
And can we all agree that humble bragging is the grossest thing on the planet? It really is. It’s like…look, dude. If you’re not actually awesome enough to OWN how awesome you are, you need to just be quiet.
“Ugh, I have SO MUCH MONEY that I can’t stop buying ALL THESE THINGS I DON’T NEEEEED.”
“Oh my gosh, you guys, I am SO POPULAR, I can’t even handle how many people want to hang out with me.”
“I’m SO GOOD LOOKING that girls are too intimidated to be my friend. It’s so annoying. I wish I was uglier.”
Because you’re my friends, I’m going to let you in on a little secret — if a girl ever tells you that she doesn’t have any girl friends because she is too pretty, run. Run like Jillian Michaels is chasing you with a green smoothie in her hands. Because I assure you — her looks have nothing to do with her current friend situation.
So in the hopes of eliminating humble bragging completely, I’m just going to own how completely amazing this Chex mix is. It’s crunchy, caramel-ey, and sugar cinnamon-ey. Have you ever had a churro dipped in caramel? Well. If you have, you know what I’m talking about.
Obviously I have to warn you that you won’t be able to put this stuff down. You just won’t. You’ll probably make yourself sick and be ruined from any other snack for the rest of your life, but there is just no way around that. There are only a few real concrete truths in life, the addictiveness of this Caramel Churro Chex Mix being one of them.
It goes without saying that this stuff also makes a pretty perfect weapon. We all have that one friend who is just skinny enough to annoy us. Just quietly set a bowl of this out within arm’s length and watch her self-destruct.
Don’t feel bad. It’s for the sake of your friendship. And how can feeding someone ever be a BAD thing? See what I mean? You’re basically the nicest person ever.
Make this. Share it. NO REGRETS!!

Ha! If a girl tells you she doesn’t have any friends because she’s pretty…. also be weary of girls who say they don’t like girls because they can be… in nice words “catty” because they are the ones who are the worst.
Making your Caramel Churro Chex Mix would, in theory be a great way to make friends, but i don’t like sharing. When something is good and bad because you can’t stop eating it means it’s a success! I should just make it myself to find out!
This snack looks great! I love caramel. I can’t wait to try out this recipe!
Humblebragging is the worst thing ever. Ever. EVERRRR.
This Chex mix is maybe the BEST thing ever. So it’s all about balance :)
I love when you post a recipe and I have everything on hand. I just made this and OMG, YUM! I think this counts for a breakfast food since it’s Chex cereal…at least that’s what I told myself… Love your recipes and your blog..
I seriously love everything about this post.
I could eat this for breakfast! I absolutely love chex mix, probably too much. I like recipes that I can commit to memory, and this is definitely one of them. :)
This post is hilarious!
I made this for work and everyone went crazy over it. We had it with vanilla ice cream, honey, and chocolate syrup. Addicting!!!
…is there anyway to replace or sub the corn syrup?? I just cant bring myself to use it when we try to avoid eating anything w/ hfcs. thanks!
I buy an organic corn syrup. We avoid hfc at all times. I’m not sure there is an organic corn chex type cereal. We also try to avoid GMOs.
Where do you purchase organic corn syrup
Get the brand that doesn’t use hfcs. I avoid it like the plague.
Corn syrup is not the same as high fructose corn syrup. HFCS has been altered to make it, well, higher fructose than regular corn syrup. Corn syrup is still sugar, but it doesn’t have the added problems of HFCS.
NUTS! it’s in the oven and I forgot to put in the baking soda!!!! Hope it still turns out! DANG!
You are hilarious! And very truthful… I sent the recipe to my Texas daughter so she can share in her office. Because of insulin resistance I’d better just pass the recipe along… It looks soooo good!
Looks wonderful, I will definitely try this. Question…why the baking soda? I have never made regular Chex mix, is it an ingredient in that as well? Would there be any difference in the outcome if I left it out? (No reason why I need to omit it, just the thought of baking soda in this recipe is icky to me.)
You can definitely make it without the baking soda! Baking soda makes the caramel coating easier to bite…it’s not quite as chewy where it gets stuck in your teeth that way. But it would work without it and still taste great :)
Karen, you ever made peanut brittle? Doesn’t sound like it. Baking soda causes a chemical reaction in the sugar which generates gas, making the product crunchy, but minimally sticky.
did yours come out okay with out the baking soda? i can’t bring myself to go to the store agggain tonight lol….too many people and lines for baking soda.
It will turn out just fine without baking soda :) Merry Christmas!
I followed the recipe exactly. Very easy to get this done in no time at all. This is really excellent. My husband suggested adding peanuts and a sprinkling of sea salt on top.
I added about a cup and a half of dry roasted salted peanuts after reading this comment. Delicious!! Love the sweet and salty combo!
These are impossible to stop eating because they are so freakin’ delicious!!! Only make them if you have a place to bring them to and share them or else you will devour them all yourself! :)
I made mine with a box of Cinnamon Chex because that’s what I had, and one box only equals about 8 cups, but I went ahead with it anyway. I didn’t bother adjusting the other ingredients to make up for the missing cup of cereal, and I also baked the whole mess for 20 minutes total (just keeping my eye on it and waiting until the colour was a nice golden).
But seriously…..so good. So, so, SOOO good!!!
Thanks for a fantastic, and crazy simple recipe!
Making this for the third time since Friday! I’m finally smarting up and doubling it this time. My people LOVE this!Thank you for sharing it ;)
This looks delicious! My husband is a huge churro fan. I was thinking of making this and mailing it in a care package to him in Iraq. Do you know how long it lasts in a air tight Tupperware container? Mail is taking two weeks to get to him so I was wondering if it would still be good.
My husband took this into work about 15 minutes ago and has already gotten asked for the recipe. I think that makes it a winner. :) (BTW, I added 1/8 tsp. salt to the cinnamon-sugar mixture. Full disclosure.)
Just made this for the first time. This stuff should be illegal! Hubby and I can’t stop eating it and it hasn’t even cooled yet. The only thing I did differently was to cut the cereal back to 8 C. and added 1 C dry roasted nuts…we love nuts! This has replaced my caramel corn recipe! YUM!
I’m SO glad to hear that you are enjoying it. It’s SO SO addictive, it’s dangerous!
I make kinda the same thing– called critter crunch –it has the butter, brown sugar & cinnamon and whatever you want: animal cookies-van & choc, nuts, cereals, pretzels, and once it’s cooled, add in M&M candies. Ladies at work & my daughter’s friends all call it crack.
I can’t wait to try this! We have extra Chex left over after making traditional Chex mix last week and I think my boys will just gobble this up!

I can’t find how to cook it.
Help….how long can this be stored in a zip lock baggie. Need to make enough for 150 gift bags anyway want to start now Will it stay fresh & does it need to be refridgerated?
I’m trying to do early baking, how early can I make this or how long dose it keep? I Can’t wait to try this.
I just wanted to let you know that this is DELICIOUS! My family loves the traditional Muddy Buddy, but they LOVED this even more!! Thank you for an amazing recipe! I was wondering how long you think it will stay fresh at room temperature? I’d like to make ahead of time for gifts, but don’t want to make it too soon. Thanks!
Hi! When people say they added nuts, do they roast them too or add them when it’s out of the oven?
Are you ever going to answer the question about how long it keeps? Adoring fans want to know!
Hey there! If covered/sealed in a bag or container, it keeps for about a week!
I also really need to know how long it will stay crunchy & fresh! I plan to make this for the Christmas baking I do for all my cousins, but I need to make a TON so I need to start tomorrow. Please help!! Thanks :)

AaaaaaaaMAziiiiiiiing!!!! I am on my second batch already! There are no words to describe how ridiculously good this is. By far my favorite Chex mix of all time. Makes a GREAT Christmas gift packaged up in cute holiday canisters or bags!
I am so glad that you love it! Whenever I make it, I have to give some away because I’ll eat it ALL!
I made this for my Christmas party last night and it was a HUGE hit. My pregnant friend would not stop eating it and my husband had it with milk this morning for breakfast. New go to dessert. Thanks so much!
I burnt my tongue eating it out of the pan…does that tell you how good it is??! lol
Kristan, I was thinking of adding mini pretzels for the sweet n salty thing. Would I need to adjust anything?
Saw this on Pinterest and made it. YUM!
This ewcipe is a keeper. Think I am going to have to make another batch! Thx for sharing
Has any one tried making this dairy free? Daughter can’t do gluten or dairy so Chex are ok. Wondered if coconut oil would work or vegan margarine?
Where is the recipe?
Made this for the Christmas holidays last month – loved it! So easy to make and so addictive!
Scrolling through pintrest and I see this recipe!! I bake regularly so I had the ingredients on hand… I made it and needless to say the double batch was about a half batch by the time it was cooled off!
I imagined it with some vanilla ice cream and a little cinnamon sprinkle!! But it is as good as the recipe says AND EASY!!!! My first time making Carmel!!!
My mother always told me to read a recipe completely before you start baking…
didn’t listen then, don’t listen now. I mixed the brown sugar with the cinnamon,
so I went ahead and used it on top also. I added a pinch of salt to the topping to
cut the sweetness a bit and Y U M M Y !!!!! DELICIOUS!
I love to cook and bake but I NEED directions for this. Don’t want to mess it up, my kids would gave a fit.
I made this for my hubby last night. Huge mistake, there went my diet!
OMG I just know this is to die for! It’s on my to make list.I will share it with my friends, cause I know they will love it..
My friend make this for me needless to say I have a best friend now!!! this is super good.
Are you kidding me?!?!?!?!
I will not win this battle tonight, mostly because it’s hard to fight with a butter & brown sugar spoon in my mouth. Delicious! I think next time I make this I might add peanuts?
Thanks for sharing this recipe!
Oh that’s a great idea!!
We made this snack last night and it is delicious! My family loved it. Just a side note…..it is also delicious before adding the cinnamon and sugar and just has the caramel mixed on it. Thanks for the recipe.
How much is a serving size?
This is delicious! So easy too. Thanks!
Is this gluten free?
I’m thinking yes.
This is good but I was thinking it would be more like caramel. but seriously it taste just like Cinnamon Toast Crunch cereal :-)
Made this last month for the holiday gatherings. Everywhere you take it people love it and devour it!! A huge hit!
One of our favorites!
Has anyone tried adding popcorn to this mix?
So good! I made it with some Cheerios added with the rest. Nuts, and some small salty pretzel rings. Very hard to stop gorging on this. I’ll be making this again!
Made 1st batch last night…2nd today for Super Bowl get together…read someone’s comment about adding a bit of salt… WOW! Love just the touch of salt!

Sorry if a repeat question, no time to read them all. Anyone try replacing the butter? What worked? Thanks!
We love this, but I replace 1/2 of the Chex mix, with a bag of microwave popcorn, after the mix bakes. It is sweet and salty, we can hardly stop eating it! I will be making gallon bags of this to send home with family at Christmas <3
