We need to talk about the magic that is dessert salads.
Bowls of sweet, creamy, calorie-laden goodness that, while *technically* a dessert, totally count as a normal side dish.
Which means that you still get pie after your meal.

It should be no surprise to you that I am all the way on Team Dessert Salad. Like I am actually the Team Dessert Salad quarterback, okay, and I take my role on the team VERY SERIOUSLY.
I’ve had all kinds of glorious, fluffy dessert salad concoctions, but I have to say that my most recent contribution might just (definitely) be the best one yet. A creamy, caramel-ey, lightly spiced base is loaded with soft marshmallows and crunchy, tart bits of apple. I mean…so technically this is whipped topping and pudding mix with mini marshmallows and a bunch of other stuff mixed in, but we aren’t here to be judgy. I mean, would there even be a Meryl Streep without a Lindsay Lohan?
Okay, that didn’t make sense. Whatever. I know you understand what I’m saying.
Campfire mini-marshmallows are a staple around here during the holidays, particularly around Thanksgiving. From sweet potato casseroles, Mississippi mud brownies, and creamy fluff salads, mini marshmallows are a key ingredient in many of our favorite holiday sides and desserts. I’m thrilled to say that this caramel apple fluff passed the taste test here with flying colors and is now officially added to our Thanksgiving menu.
Lucy actually gave it four thumbs up! Which is weird because she only has two hands.

- 1 1/4 cups cold milk
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1/4 cup caramel sauce
- 8oz frozen whipped topping, thawed
- 1/2 teaspoon ground cinnamon
- 3 cups Campfire® Mini Marshmallows
- 4 large apples, cored and diced (I prefer Honeycrisp or Granny Smith)
- In a large bowl, whisk milk and pudding mix for 2 minutes, until thickened. Fold in caramel sauce and thawed whipped topping. Add cinnamon, Campfire® mini marshmallows, and diced apples.
- Refrigerate until serving. Garnish with additional caramel sauce before serving.
