I’m going to be honest. It took me a long while to hop on the overnight oats bandwagon.
I didn’t get it. The texture. The cold sadness. IT WAS TOO MUCH TO DEAL WITH.
But then I realized that overnight oats had a lot to offer — they’re easy, full of clean carbs to fuel your morning, and can be heated up if cold oatmeal isn’t your thing.
(is cold oatmeal ANYONE’S thing??)
I’m a texture person, and what I discovered is that using steel cut oats makes a huge difference. I can’t do mushy — steel cut oats keep their texture much better than quick oats as they absorb the liquid overnight.
I add Greek yogurt in addition to almond milk. It thickens it up quite a bit and adds a nice little serving of protein. I try to start every day with some protein + healthy carbs, so this makes for a perfect breakfast to fuel my morning.
