These simple, buttery Sugared Cranberry Shortbread Bars are the perfect holiday treat!

I am so excited about this post today. Not only because these buttery, sugary, festive bars are holiday perfect, but because you are getting an easy (EASY!!) and free way make a positive contribution to the childhood hunger epidemic.

Let me start off by saying that these bars are incredibly simple to whip up — a couple sticks of butter, some sugar, flour, one egg, and some dried cranberries. Easy peasy. As I’ve mentioned in the past, I am an ambassador for Challenge Butter, a company that makes phenomenal butter from California cows NOT treated with rbSTt horomones. Not only are these bars simple, they are sturdy, so they hold up great for traveling, and the cranberries give them a pretty, festive look. I sprinkled the tops generously with sugar before baking — it gives them a snowy sparkle with a bit of sugary crunch. These are the type of cookie bar that go great with tea — not too sweet.

And if you’re interested in whipping up a batch of these yummy bars (you should be, they are basically holiday perfection), here’s the simple recipe:
Ingredients
- 1 cup (2 sticks) salted Challenge Butter
- 1 1/4 cup granulated sugar, divided
- 1 large egg
- 2 cups all purpose flour
- 1 cup dried cranberries
Instructions
- Preheat oven to 350. Line a 9x13 pan with foil and set aside.
- In the bowl of your mixer, beat Challenge Butter and 1 cup sugar on medium speed for 1 minute, until smooth and fluffy. Beat in egg until blended. Add flour and mix on medium until a smooth dough forms. Fold in cranberries.
- Press dough evenly into prepared pan and sprinkle top with remaining 1/4 cup sugar. Bake for about 25-30 minutes or until edges are light brown and bars are barely golden. Remove from oven and let cool before removing foil and cutting into squares.

Maybe I’m a little confused??? I click the link to the Pinterest board, but there are no recipes there… There are a few links, but not these beautiful bars.
Also, these are in the oven right now…except with dried cherries, because I have a ton of them, but have no dried cranberries. I also added a tiny splash of almond extract. I can’t wait to make a cup of tea and get dunkin’.

I made these last night, brought the batch to work and they disappeared in an hour. The recipe is so simple but tastes so good! The only change I made is I only used about half of the 1/4 cup of sugar on top of the bars. I didn’t miss the extra sugar. Thanks for this amazing recipe!
