This Sugar Cream Pie is smooth, cremy and sweet – aka delicious!
When I first started my career as a mom and housewife, I was super defensive about how I spent my time.
But over the years, I’ve learned not to waste my time on people who have snotty things to say. I mean, the best revenge is REALLY letting them think I spend my day eating candy and watching TV while they work at a job they despise, so why not go along with it? I know what I do all day, that’s all I really need.
But when it comes to my husband, I feel defensive about my importantness.
Because he has a job where he talks to real people and they call him needing things and he has lunch at restaurant sometimes and honestly, I just don’t care for that. It feeds the ego, if you ask me.
So when he comes home and his phone is still ringing and he’s all, “wow, I had to be fifty places today”, I’m like “yes, well I’ve been doing homework with the human being that I grew from scratch, so have fun with those fifty people, whoever they are”.
It always works because growing a human trumps everything.
Unfortunately though, my husband knows how to do a lot of things, so sometimes making my day more important gets a little tricky. The other day he came home tired, telling me about the bathroom remodel he’d been doing and how he had to move plumbing in order to put a toilet in a different spot.
Luckily, I had to plunge the downstairs toilet earlier in the day after an “incident” with my child left it disgustingly clogged. So I was all, “yes, well while you were moving your clean toilet pipes, I was unclogging our toilet. Like…I was basically an actual plumber today. Sorry Mr. Fancy Remodeler, some of us actually have to get down to business in the trenches.”
I mean, I’d love to sympathize with him, but I just don’t have the time. Stuff here is just so darn rough what with plumbing and First Grade homework and making sure the DVR is set to record things properly.
Of course, I’m not a terrible wife or anything. Sometimes I sympathize and pat his arm and say things like “oh honey, that sounds like a looooong day” but then I get up to make him some coffee and make sure I’m limping on my way to the kitchen. Being on one’s feet all day just takes it’s toll on my orthopedic well being, you know?
It’s amazing I even have time to make desserts and things. Fortunately, this pie can be thrown together in a flash and tastes like it took all day. You know how some people are like, “I can’t make pie”? Well, they need to make THIS pie. It’s so easy, sets up nice and firm, and cuts like a dream.
- 9 inch pie crust, baked and cooled
- 4 Tablespoons cornstarch
- 3/4 cup white sugar
- 4 Tablespoons butter, melted
- 2 1/4 cups half and half cream
- 1 teaspoon vanilla extract or vanilla bean paste
- 2 Tablespoons butter, melted
- 1/2 teaspoon cinnamon
- In a medium sized heavy saucepan, whisk together cornstarch and sugar. Whisk in the 4 Tablespoons melted butter and half and half. Cook over medium heat, stirring constantly, until mixture is the consistency of a thick pudding. Remove from heat and stir in vanilla.
- Preheat oven broiler to high.
- Pour mixture into pie crust and spread evenly. Drizzle with melted butter and sprinkle cinnamon over the top. Place under the broiler until butter begins to bubble all over the surface--keep a close eye because it doesn't take long.
- Let pie cool to room temperature, then chill several hours before serving.
I used store bought crust, but if you have a favorite recipe you can use that instead.
I used vanilla bean paste in place of the extract and loved the tiny specks that were throughout the filling. Try it!!
This pie is really really good. Kind of like a custard pie, but a bit sweeter, with a creamier texture. I hope you love it too!!
