My Christmas was super duper awesome.
If you don’t count the fact that I came down with the worst stomach bug I’ve ever had in my entire life.
But obviously, I am tough. I mean, I have birthed a child. So I don’t complain about silly little things like stomach bugs.
Things could have been worse, right?
Who cares that I laid on my deathbed, reading Facebook statuses on my phone about how all my friends were “stuffed,” and “ate WAAAY too much,” and were having “the best Chrismas ever”.
Stuff like that doesn’t really bother me.
Okay, it does.
Plus, toughness is really overrated because people don’t admire you like you think they would. They’re all like “oh, she must not have been that sick, so no big deal”, and then you pretty much get ripped off as far as sympathy goes.
So truthfully, my Christmas was kind of stupid.
I finally got my much coveted cotton candy machine, only to get hit with the stomach bug not long after eating a big ol’ pile of it.
I don’t really want to talk about cotton candy for awhile.
Also, my husband came down with the same bug a few hours after it hit me, so Gram had to come pick up my baby boy and take him home with her.
My baby had to spend Christmas away from me.
There was one point where I was laying on my bathroom floor with my cheek pressed to the tile, and my husband was saying something about packing our son’s bag, and I yelled something like “who cares what he wears”, and for anyone who knows me, that pretty much goes against everything I believe in.
I think I was probably delirious or something.
Also, I hate to alarm anyone, but I’m almost positive that there was a moment where a bright light was shining down from above, beckoning to me.
But that could have been the television. I had a George Clooney movie on.
Anyways, I hope your Christmas was better than mine.
I’d be lying if I didn’t say that I also hope you feel really, really, sorry for me.
When I finally got up and around today, I realized that I had nothing to post on my blog, and didn’t feel up to baking. Thankfully, I remembered this super easy coffee cake that I’ve been meaning to try, and I just happened to have all the ingredients.
So, I whipped it up real quick.
The things I do for you guys.
**Just barely adapted from Taste of Home
- 1 package (16oz) pound cake mix
- 3/4 cup canned pumpkin
- 6 tablespoons water
- 2 eggs
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 cup packed brown sugar
- 1/4 cup all purpose flour
- 3 tablespoons melted butter
- Spray a 9 inch round cake pan with nonstick spray.
- In a large bowl, combine the cake mix, pumpkin, water, eggs, pumpkin pie spice, and baking soda. Beat on low speed for 30 seconds. Scrape down the side of the bowl and beat on medium for 2 minutes. Pour half of the cake batter into the prepared pan.
- In a small bowl, combine the topping ingredients. Sprinkle half over the batter. Pour remaining batter over the crumbs and spread carefully. Sprinkle with remaining topping.
- Bake at 350 for about 40 minutes, or until a toothpick inserted in the center comes out clean.
It sort of tastes like if pumpkin bread and coffee cake got married and had a baby.
That was weird.
Why do I keep comparing desserts that I make to food babies?
I have problems. But you know what I mean.
