And I have some good news.
Friday is a good day for good news, isn’t it?
My awesome friend K brought it to my attention early this week that I had nearly reached 100 followers, and she suggested that after I hit the 100 mark, perhaps a giveaway should be in order? And as is the way between awesome friends, I concurred.
Then yesterday, it happened. I hit 100. And went a few more. So the first thing I want to do is thank all of you who spend your time reading what I have to say, leaving comments, and even publicly declaring your loyalty to me by becoming a follower. That can’t always be easy on you…I can be a little weird. Being my friend is a bit of a responsibility at times. So, thanks for putting yourself out there. I promise not to embarrass you…..much.
That’s what I told my husband the day we got married. It was in my wedding vows, actually. Okay, not really. But I probably should have. He’s a good man. He deserved to be warned.
Anyways, the awesome thing about reaching 100 at this point in time is that it coincides with an upcoming trip I am taking!! This Wednesday June 2, I am heading to New Orleans with my awesome friends K and LA. Not only have I never been to New Orleans but I have never been on a girl trip either, so needless to say I am so excited I can hardly stand it. Not only are we planning tons of shopping and quality girl time, but K has also done some research, and discovered that there is a Pinkberry and a Whole Foods in New Orleans. My plan is to hang around both places until Sandra Bullock happens upon me and after a long warm conversation, asks me to be baby Louis’ godmother. (Don’t you dare crush my dreams it can totally happen) I’ve been keeping a small notebook full of witty remarks I’ve written about what a jerk Jesse James is. Just in case she’s in a man bashing sort of a mood.

As I said, I am a first time New Orleans vacationer, so any suggestions for must see or must do’s would be greatly appreciated.
In exchange for your worldly travel wisdom, I am sharing a simple and refreshing summer pie recipe given to me by K. It’s quick easy, and perfect for any cookout!!
1 Homemade or store bought graham cracker crust. If you are using mini, you will need about 12.
14 oz can sweetened condensed milk, chilled
12 oz container of Cool Whip
6 oz can frozen lemonade concentrate (do NOT thaw)
In a medium bowl, fold together condensed milk and Cool Whip. Add frozen lemonade and continue to fold until well mixed but not soupy. Pour into pie crust and freeze several hours or overnight.
It should be noted that because I could not resist the urge to make this pie pink and mini, I used mini graham cracker crusts and pink lemonade concentrate. The color was not as pink as I wanted, so I folded in a bit of pink gel coloring right before pouring into the shells.
