For the second time, I have come down with a horrible cold right before we’re supposed to be leaving for a camping trip.
I’m pretty sure my body upset at the idea of roughing it and is revolting. Surely this isn’t all a big coincidence.
And I realize that we have a camper and some of you may think that doesn’t qualify as roughing it, but I can assure you that an electrical outlet for my CHI iron is an absolute necessity, and doesn’t take away from my getting in touch with nature at all.
Plus, I’m really bad at roasting hot dogs over a fire (last time I dropped 2 in the fire pit), so if I don’t have a microwave at my immediate disposal there’s a pretty good chance I won’t even get to eat.
Also, I sort of need a television to help me sleep at night, because if I don’t have noise to distract me, I lay awake thinking that every sound I hear is either an axe murderer or an alien spaceship landing.
Which obviously isn’t good for my mental health.
So…I’m pretty much saying that unless I tote a miniature house along to my woodland adventures, I have bad hair, I starve, and I almost probably get murdered or abducted by aliens.
I don’t know why I even go camping.
Let’s talk about something that DOES make sense–chocolate and peanut butter.
These bars are adapted from a recipe I saw in Taste of the South magazine, and couldn’t be easier.
Who says you only make candy at Christmas and Valentines Day? I would never say anything so dumb, that’s fo’ sheez.

8 oz white chocolate, chopped
1 cup creamy peanut butter
3 oz semi sweet chocolate, chopped
mini Reese’s Pieces
Line a 7×11 inch pan with wax paper and set aside.
In a microwave safe bowl, microwave white chocolate on high, stirring every 30 seconds, until melted. Stir in peanut butter. Microwave on high until mixture is smooth and creamy, stirring every 30 seconds.
Spread mixture in the prepared pan.
In a small microwave safe bowl, microwave semi sweet chocolate, stirring every 30 seconds until completely melted.
Spoon chocolate sporadically in the pan. Using a knife, pull through the chocolate from top to bottom. Sprinkle with Reese’s Pieces.
Refrigerate several hours until set.
If you don’t hear from me after a few days, send a helicopter out to the woods to rescue me. Or one of those limos with a hot tub in the back.
Whatevs. You know I’m not picky.
