Surprise!! I made cute food!!
I was just saying a few weeks ago that it’s been hard to wrap my brain around anything creative since having Lucy. Basically what happens when you have a baby is, they eat your brain.
Not literally, of course, but somewhere between sleep deprivation and constant feedings, it gets sucked out a little at a time until the next thing you know, you find your iPhone in the freezer and your shorts are on inside out.
I mean, that’s what I’ve heard.
Jon David and I had our first mother/son date night without the baby a few weeks ago, and we saw Monsters University. It was so cute!! Also, he held my hand and shared his candy with me, so my heart was extra huge that night.
Of course, when we left the movie, I started thinking about how I could turn it into an easy cupcake, and I finally decided that this is as simple as it gets.
These would be cute for ANY monster or alien party, really (you could even use 3 small eyes instead of one big one for a Toy Story party) and they are so easy!! The topper is edible too, which I love.
I am not a huge fan of plastic cupcake toppers. They’re expensive, and what do you do with them when you’re done? Wash them? Throw them away?
Also, true story — yesterday I called my husband at work because I couldn’t find the package of eyes I had bought. I said, “Hi honey, I know there is no normal way to ask this, but have you seen a package of large edible eyes laying around?”
And he was like, “Yes, there is no normal way to ask that. But if you can’t find them, I will stop and buy you some new edible eyes”.
Then I said, “Okay but get the LARGE ones. This is important. NOT THE SMALL ones. Do you understand what I am saying??”
Then he came home and pretended that he had bought the small ones and I had a mini heart attack. But it turned out he got the large ones after all.
And that is what I call Edible Eye Drama in the Roland Household.
Just attach the lollipop sticks to the Oreos using melted candy melts. Pop in the freezer to set up.
Once firm, dip in melted green candy melts (the ones I used were called Vibrant Green), and place on wax paper lined baking sheet. Stick back in the freezer until firm. Then use a dab of melted candy to attach the eye. Boom. Done!!
(You can also attach the eye after dipping the Oreo before the candy has set up, but sometimes the melted candy runs a bit and causes the eye to slide out of place. So I prefer to do it after they are coated and set)
You can find my favorite buttercream frosting HERE.
That’s it!! I hope you enjoy them :) Have a very happy Thursday!!
