Happy Saturday — can you believe it’ll be June on Monday?!
Monday is Jon David’s last day of school and I am THRILLED beyond belief. If I have to pack another lunch or sign another form, I might just run away from home. The other night I actually searched the fridge high and low desperately hoping there might be a rogue Lunchable hiding somewhere. Nope — I had to make a sandwich like usual, and I swear you’d have thought it was manual labor.
Someone please remind me how ready I was for school to be out in July when I’m complaining that my son is bored ALL THE TIME.

I love this one! It’s so easy and always yummy. I’ll usually roast some potatoes or veggies to go with.

Really hoping the weather clears up enough to enjoy these out on the patio.
Thursday: Taco Stuffed Potato
