Oh my gosh, I have been so off my meal-planning game for the past week. I got home from Portland on Sunday and I feel like I’ve behind ever since.
You’d think that I would have taken the 15 minutes to sit down and map out our meals for the week, but I didn’t. Which means that I was running to the store for odds and ends constantly! It was a really good reminder WHY I plan my meals. It makes things run so much more smoothly and really cuts down on trips to the store. Trips to the store inevitably leads to me grabbing “extras” like ice cream bars, Shopkins (life with a toddler…), and scented candles. Like I don’t have enough already.
Monday: 20 Minute Easy BLT Pasta Salad
She had me at easy. And 20 minute. And BLT. And pasta. Yum!
Tuesday: Cheesy Italian Meatloaf Muffins
We all love mini meatloaf, and I thought this would be a fun version to try. You can never go wrong with adding cheese to the middle!
Wednesday: Ranch Chicken
Simple chicken recipes are always a great option for the kiddos. And leftovers are always easy to use up!
Thursday: Easy Homemade Corn Dogs
Corn Dogs are one of my most favorite things in the world, so I’m really excited about trying them homemade! So fun.
Friday: Ham and Swiss Stromboli
A nice change from pizza, but just as kid-friendly.
