OMG I am so late with this week’s meal plan!
I normally strive to have it up on Saturday, but I’ve been moving my office this week and my son got sick. And my husband was out of town. Hashtag: of course.
I am not even kidding — my husband going out of town basically GUARANTEES that at least one of our children will get sick. It’s some kind of cosmic law. Of course, when I leave…nothing eventful happens at all. I’ve tried to tell him that this means that he should never go anywhere EVER, but he’s not buying it.
Here’s what we are having for dinner this week. As usual, be sure to print out a handy grocery list. Everything you need to pick up at the store is already filled out for you. Hooray!
Monday: Taco Lime Grilled Chicken
We are on Spring Break this week and the weather has been sunny and mild. I’m thinking it’s the perfect time to break out the grill!! I’m hoping to have some of this leftover to throw on lunch salads through the week.
Tuesday: Hot Italian Sandwiches
This is ridiculously simple, which makes it perfect. I’m hoping to take the kids on a few fun outings over the break, and it’s always nice to come home and throw together something easy.
Wednesday: Grilled Marinated Flank Steak
Another simple grilled recipe! I’ll serve this with tortillas and rice. (and Margaritas, duh)
Thursday: Taco Bake
Basically layered nachos, which you can never go wrong with in my house.
Friday: Chicken Schnitzel
My favorite way to cook chicken — thin and crispy! I’ll serve this with a simple pasta and a salad.
