I am having a tough time believing that it’s actually Winter! The last couple of weekends we have had the sunniest, warmest weather. Although I do love Fall and Winter, it definitely has me craving Spring.
It’s probably just as well that Spring is around the corner — I need some motivation to fit back into my skinny jeans. I own approximately a zillion pairs, and TWO of them currently fit me. Right now I am living in leggings, which is a sure sign that I may have overdone it with holiday treats.
My kids are incredibly picky, so I don’t normally make a ton of changes to our normal dinners while I’m dieting. I simply make a large salad with my meal and have a much smaller helping. And then I go cry because I want ice cream and Twinkies. Life is hard.
So here’s what we are having for dinner this week. As usual, be sure to print out a handy grocery list HERE. Everything you need is already filled out for you. Hooray!
Monday: Chicken and Gnocchi Soup
One of my favorites! So cozy.
Tuesday: Bacon-Wrapped Pork Loin
We don’t have pork for dinner very often, so this will be a nice change.
Wednesday: Mexican Stuffed Shells
Yes, please! I love that I can prep this early and have it ready in the fridge to pop in the oven!
Thursday: 30-Minute Orange Chicken
I am ALL about a 30-minute meal, especially since I take Lucy to dance on Thursday and don’t get home until 6:15.
Friday: Bacon Cheeseburger Pizza
This looks SO good. We have been having so much fun with homemade pizza and I’m always glad we made our own instead of ordering delivery.
