My weekly meal plan is full of family friendly dinner ideas that are perfect for busy weeknights!
We had our first snow day of Winter yesterday, and it has me craving cozy food. We live in an older house, which means it has a crawl space under it…which means that the floors get so cold! All I want to do is snuggle under a fuzzy blanket by the fire with my Kindle and some hot chocolate.
I’ve been doing a lot of cooking with my Instant Pot lately and I’m LOVING it! It’s a miracle that I can quickly throw together some shredded chicken or a roast without cooking it all day long. The other day I tried hard boiled eggs in it for the first time and they were THE BEST. The peeled more easily than any boiled eggs I’ve ever made! I also fell down an internet rabbit hole last night and was shocked to find how easy and inexpensive it is to make yogurt in an Instant Pot. Just a little bit of yogurt with active cultures and some whole milk and you’re good to go! I’m dying to try it out.

Monday: Spaghetti and Giant Meatballs
Lucy had spaghetti with a giant meatball for lunch at Olive Garden one day and she can’t stop talking about it! I have to make this for her – I know it’ll make her smile.
Tuesday: Crack Chicken Tacos
They had me at crack. And tacos. I’m super curious to try these!
Wednesday: Instant Pot French Dip Sandwiches
We all love French Dips and I’m dying to try them in the Instant Pot!
I love how flavorful and healthy this is! Roasted veggies are one of my favorite things in the world.
Friday: Asian Chicken Noodle Soup
I’ve been craving soup like crazy with this cold weather, and this spicy coconut soup looks PERFECT!
