Anyone else scoop up an Instant Pot during the Amazon Black Friday Sale? It was like $76% off!! I’ve had my eye on for about a year, so I decided to scoop one up while it was around $50. I haven’t sat down and read the instructions yet (I’m sure there’s a learning curve), but everyone I know who has had one for awhile LOVES them!! I’ve heard that the cooking time for things like roasts and pulled pork is a tiny fraction of normal slow cookers, so I’m really excited to give it a go. With that in mind, I did add a couple of Instant Pot recipes to the meal plan this week. But keep in mind that they can be adapted for regular slow cookers.
Monday: Instant Pot Pork Carnitas
Carnitas are one of my favorite things in the universe, so it’s the perfect meal to break my Instant Pot in! Gina’s recipes are always on point, so I know this will be great!
Tuesday: Swedish Meatballs
This is my absolute favorite Swedish Meatballs recipe! So tender and rich and yummy. The whole family loves them! I highly suggest doubling the batch and freezing half without gravy for another day.
Wednesday: Autumn Apple Salad
I know that Fall is just about over, but this salad was calling my name! So many textures and yummy flavors going on.
Thursday: Jambalaya Pasta
This is one of my stand-bys. Always good, super easy, the whole family will gobble it up.
Friday: Instant Pot Rotisserie Chicken
So apparently this recipe makes an entire rotisserie chicken in 40 minutes?! I’m excited to try it out and see!
