Happy Saturday! We are currently on vacation in Orlando, Florida. We surprised the kids yesterday! They thought we were driving to Branson, Mo (a couple of hours away) for a long weekend but instead we drove to the airport and said, “SURPRISE!! WE ARE TAKING YOU TO DISNEY WORLD AND UNIVERSAL STUDIOS!!”
I’ve always always ALWAYS wanted to pull of a surprise like that, and I’m thrilled that we made it work! It was so hard planning and keeping quiet about it!
We rented a condo just a short drive from the parks. We will be doing two days at Disney (Lucy’s never been) and then two days at Universal (none of us have ever been) and I am DYING with excitement over seeing the Harry Potter section of Universal. I’ve dreamed about it for years!
Even though I’m not home, you guys need to eat! So I’ve put together my meal plan like always, just for you! As always, don’t forget the grocery list — everything you need from the store is already filled out for you!

Tuesday: Slow Cooker Korean BBQ Pork Tacos
I’m always looking for ways to change up taco night! That pork looks incredible!
Wednesday: One Pot Greek Chicken and Lemon Rice
I love Greek flavor and my kids love anything with rice and chicken, so this is a win all around.
Thursday: Bacon Cheeseburger Quesadillas
These are genius! My kids will love them! Honestly, what’s NOT to love?
Friday: Chopped Thai Chicken Salad
I love chopped salads! I love all the crunch and flavor this one has.
