Homemade Confetti Cake with Cotton Candy Cloud Frosting

Can we just real talk for a minute?

Ever since I found out I was having a girl (almost exactly a year ago!), I’ve been planning birthday parties.

Is that weird?

I mean…I’ve planned some super cool parties for Jon David in the past, but boys are a liiiiiiitle boring.  No frilly pink table cloths, no jars full of candy necklaces, no adorable birthday tutu, just superheros and a pinata.

Meh.

Anyways.  I’ve got a lot of parties planned for Miss Lucy.  At this rate, homegirl will still be coming over for parties when she’s married and has kids of her own.  I don’t even care.

Hello, last I checked, miniature Mason jars full of punch never stop being cute.

IMG_3939 I know we are all supposed to be over the Pinterest thing by now (I mostly am.  Truly.  Except by “over it” I mean INSANELY JELLY), but Lucy’s parties — they will have the Pinterest stamp ALLLLLL over them.

Dessert table?  Check.

Shabby chic bunting?  Check.

Paper straws?  DO YOU EVEN KNOW ME???  Checkity CHECK!!

And what is one of the most important parts of a Super Winning at Pinterest Girly Girl Birthday Extravaganza?

A cake.  Duh.

This cake has been on my mind for some time, and I was so glad to finally see it come to life.  The homemade confetti cake is sheer perfection –a bit of almond extract gives it an Angel Food-ish flavor and it’s not dense or dry at all.

Homemade Confetti Cake with Cotton Candy Cloud Frosting

Ingredients

  • Cake:
  • 1 cup milk
  • 6 large egg whites
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 1/4 cup cake flour
  • 1 3/4 cup granulated sugar
  • 4 tsp baking powder
  • 2/3 cup rainbow sprinkles
  • 12 TBS salted butter, slightly softened
  • Frosting:
  • 2 cups pink vanilla flossing sugar (the stuff you use to make cotton candy)
  • 6 large egg whites
  • 1/2 cup water
  • 1/2 tsp cream of tartar

Instructions

  1. Preheat oven to 350. Butter and flour 2 (8 inch) round cake pans.
  2. n a large glass liquid measuring cup, whisk together the milk, egg whites, vanilla, and almond extract. Set aside.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and sprinkles. Beat the flour mixture and butter on low speed until the mixture is crumbly, about 3 minutes.
  4. With the mixer on low, beat in all but 1/2 cup of the milk mixture. Increase speed to medium and beat for about 3 minutes, until smooth. Scrape down sides of bowl as needed. Beat in remaining milk mixture until just mixed.
  5. Give batter a final stir with rubber spatula, scraping bottom of the bowl to make sure all is fully combined. Pour evenly into prepared pans, smoothing the tops of the batter. Bake for about 20 minutes or until tops are brown and centers spring back when very lightly touched. Remove from oven and let cool in pans for about 5 minutes before removing to wire rack to cool completely.
  6. Prepare frosting:
  7. Place the cotton candy sugar in a food processor or blender and give it a few pulses -- you don't want it powdered, but you want it to resemble the fineness of normal granulated sugar. 2 cups should give you about 2 1/2 measured, which is what you need.
  8. Place the sugar, egg whites, water, and cream of tartar in a large metal mixing bowl. Whisk together and place over a pot of simmering water. Whisk until the mixture is very warm to the touch and the sugar is dissolved -- do NOT boil.
  9. Place bowl on your stand mixer fitted with the whisk attachment. Beat on medium speed for about 2 minutes, then increase to high and beat for about 15 minutes, or until it forms stiff peaks. Frost layers and serve!!

    Typically I love the cake more than the frosting but with your cotton candy frosting, I would be licking the frosting bowl, the beaters and the spatula. Super cute Lucy photo too.

    I do not have a daughter, but I have a 4 year old sister. Planning her birthday cakes has been so much fun. Just today I was asking her what kind of cake to make this year and of course pink was the first work out of her mouth. This cake is perfect! The frosting is just insane! It is a beautiful cake. I am in awe right not!

    Cotton candy frosting! OMG I have to make this for my sons 24th birthday this month. He has had a cotton candy business for 10 years and we have those flossine cartons in every flavor… What a brilliant idea to use that in the icing.       Above that, it says to add all the milk mixture but 1/2 cup. Mix, then add the 1/2 cup that is left :) I hope you like the cake!!

    My daughter, Eden turns 5 next month and she is requesting a Strawberry cake. I think only because it has pink in it. Sooo, maybe I can convince her to want this instead so I can enjoy it, I mean, so she can enjoy it. It looks so pillowy and dreamlike. Perfect for a Candyland Inspired party :)

    OMG, I’ve gotta live this cake for obvious reasons (it’s Made With Pink!) I’ve got a 2 year old boy and am doing my best to live out my girlie party table dreams through his birthdays. Last years owl themed party was a success and this years Very Hungry Caterpillar party is shaping up to be as well. But I still long for a little girl so I can bake those pretty pink cakes and dress her in birthday tiaras and a tutu.

    I have this cake in the oven as I am typing. It’s been in for 20 minutes in two 8 in cake pans but is no where near done. Looks like it may overflow the pans too. Just making sure I did this correctly. Thanks.

      Just got the cake out of the oven. It did not overflow, just came up over the edges of the pans a bit. My baking time ended up being 42 minutes. I cut away the part of the cake on the edge of the pan and tasted it. Th flavor is wonderful.

      My youngest daughter’s 30th birthday is tomorrow and this is the cake she requested. I can’t wait until she sees it tomorrow! Thanks again

    Fell in love with this cake the minute I saw it! Started making it today for my niece’s first birthday and found I didn’t have enough Wilton rainbow sprinkles. I added other sprinkles in that I had for sugar cookies. Turned my batter grey! Ruined the whole pretty, fluffy, beautiful cake. I can see my perfect Wilton sprinkles floating around in the grey, gooey mess! Moral of the story…never settle for second rate sprinkles!

      Granulated Sugar would be fine, but powdered sugar wouldn’t work. Good luck!!

    I’ve always used a pair of regular oven mitts or a dish towel to remove the hot baked items from my oven.
    Further, these ovens are designed in all
    sizes and forms to suit the set up of modern kitchens.
    In our test kitchen, we have experimented extensively with cheesecakes.

    I made this frosting today and I used the link to buy the vanilla cotton candy floss that was given in the recipe. The color turned out red even though it was marked pink vanilla. It was also somewhat bitter to the taste. I followed the directions to the letter so I don’t know what happened. Please help me because I really like the idea.

    Absolutely gorgeous cake! Bravo! I’m totally making this for a cotton candy fiend friend of mine for her birthday next week. I’m curious…could you use the flossing sugar in the cake batter itself for even more pink candy goodness? Maybe a half and half mix with regular sugar and cut back on the extract?     I’m wondering if you can make the frosting ahead of time. I’m thinking of making it the day before the event but don’t want it to be ruined if it sits in the fridge

    Also, can the cake sit out of the fridge prior to serving ?

      Hey there! I’ve never made it in advance so I can’t say for sure. I think it would be fine in a container in the refrigerator but I recommend mixing it again before using.

    I couldn’t find flossing sugar anywhere )
    (Small town problems) so I used granulated sugar instead and a little food coloring. It was pretty but not very sweet. I added some marshmallow creme and then it was just right. Maybe I should have used 2 1/2 cups granulated sugar? I don’t know. I’m excited to try it with the right ingredients next time.
