Dear Jon David’s kindergarten teacher:
I guess you know that my son brought home his journal from school.
You know…the one that he wrote in every day? More importantly, the one you READ everyday?
I realize that school is out and all, but I think there are a few things I need to explain.
Like this page, where my child claims to have drank a cherry slushee that was so cold, he had to eat a Red Hot immediately afterward in order to warm himself.
I assure you, I do not use Red Hot candy as a way to heat things, including my son’s belly.
But it was sort of a good idea.
And let’s not forget this gem, where my son not only revealed how old my husband was turning on his upcoming birthday, but also claimed that I didn’t purchase a gift.
Which, of COURSE I got my husband a gift. I just…don’t remember what it was.
But I’m sure it was something really cool.
When I saw this entry, I was a bit concerned that the sentence about how my son “lic the hot tub” may have been a bit confusing.
Please be assured that my son doesn’t lick the hot tub. I mean, I don’t THINK he licks the hot tub. And that picture he drew of a turtle by the hot tub that he licks (I mean likes) isn’t actually a real turtle,but a turtle statue that sits by the tub.
So…to clarify–my son likes the hot tub with the turtle statue, but he doesn’t lick the hot tub with a turtle in it.
And my personal favorite, this entry claims that I’m scared of birds and clowns.
I am scared of birds and clowns. And this picture gave me nightmares for the past three nights. Seriously, why did you let him bring it home?
So…anyways, just wanted you to know we are normal family. Totally not weird or anything.
Now if you’ll excuse me, I have to go make sure my son isn’t licking the hot tub.
P.S. Once again, just kidding about the hot tub licking thing. I think.
I’ve wanted to make cake batter frosting ever since I saw THIS recipe for cake batter bark on How Sweet.
But then I was all worried that cake batter frosting on top of cake might be weird. Like maybe…too cake-ish? But I finally convinced myself that it needed to happen. And since cream cheese frosting is my all-time favorite (and slightly less sweet) I thought it would be the perfect base.
And since we’re going all cream cheese, why not add some cheesecake to my confetti cupcakes? It sounds good and I’m a grown up sooo….I get to make whatever I want.
And I want Confetti Cheesecake Cupcakes with Cake Batter Cream Cheese Frosting.
- Confetti (or Funfetti) cake batter, use your favorite homemade or boxed version)
- 8 oz package cream cheese, softened
- 1 egg
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 1 stick salted butter, softened
- 8 oz cream cheese, room temperature
- 1/2 teaspoon vanilla
- 1 teaspoon Baker's Mystery Flavor (you could omit this, but I really liked the baked flavor it adds)
- 3 cups powdered sugar
- 1/2 cup white cake mix (MIX--NOT BATTER)
- Preheat oven to 350 and line 24 muffin tins with liners.
- Spoon cake batter into each tin until it is about 1/2 full. In a medium bowl, beat cream cheese, egg, sugar and vanilla on medium speed until smooth. Spoon one spoonful over the top of each cupcake. Bake for about 15 minutes or until set.
- In the bowl of a mixer, beat butter, cream cheese and extract(s) on medium speed until smooth. Add powdered sugar and cake mix and beat on low until just combined. Increase speed to medium-high and beat for 2 minutes. If frosting is too thick, mix in a bit of heavy cream or milk until desired consistency is reached.
- Once cupcakes are cool, frost generously. And add sprinkles for Pete's sake.
**Just a note: Since seeing Jessica’s Cake Batter Bark recipe, I’ve started keeping white cake mix in an airtight container so I can spoon some out whenever I need it for a recipe like this. So you can do that too. If you want.
You should probably make these cupcake pretty soon.
