No Bake Cinnamon Toast Crunch Biscoff Cookies combine so many delicious flavors, your family will love these super easy no bake cookie treats!

The BlogHer Food conference was in Seattle this year, and I flew out a few days early so Darla and I could explore Forks. We had a ton of fun together — we even took a day trip to Port Angeles and ate at Bella Italia.
However — we never saw a single vampire. Isn’t that weird?

No Bake Cinnamon Toast Crunch Biscoff Cookies
Hi everyone! I’m Darla from Bakingdom, and I am so happy to be able to visit Confessions of a Cookbook Queen and help Kristan out while she gets into the groove of having a sweet, new baby around. I was really excited when Kristan asked me to guest post, because that meant that Lucy would be here soon, and we’ve all been waiting so long!
When I started thinking about what I wanted to make for today’s post, I was sure of two things:
1. It needed to be quick and easy. Kristan may not be cooking or baking for a bit, but what if she suddenly gets a craving for something sweet? This recipe only takes a few minutes to make, and there’s no baking required. Easy peasy.
2. It had to have cereal in it. Kristan does miraculous things with cereal, so I was totally inspired.
With Autumn in full swing, I knew sweet, cinnamon-y flavors would be just right, so I settled on Cinnamon Toast Crunch cereal. Then, I added some Biscoff. And chocolate. Because, duh.
These are made just like those familiar peanut butter-chocolate-oatmeal no-bake cookies that we all know and love, so you’re probably familiar with the instructions: melt the butter, add the sugar, cocoa, and milk, boil for a bit, remove from heat and stir in Biscoff and vanilla, add cereal. Done.
It was pretty much a guarantee that these No Bake Cinnamon Toast Crunch Biscoff Cookies would be good, considering the ingredients, but they’re even better than I hoped for. They’re sweet, cinnamon-y, chocolaty crunch cookies that everyone will enjoy, and they only took about 5 minutes to make. Seriously, what’s not to love?
One sidenote: these really are best eaten fresh the day they are made. The cereal doesn’t hold up well overnight and takes on a stale quality. Kind of a bummer, but since they’re so delicious, I doubt any will be leftover anyway. :)

No-Bake Cinnamon Toast Crunch Biscoff Cookies
Makes about 2 dozen
**These are best eaten the day they are made.**
1/2 cup (1 stick) unsalted butter or margarine
1 3/4 cups sugar
1/2 cup milk or soy milk
1/4 cup cocoa powder
1/2 cup creamy Biscoff spread
1 teaspoon vanilla
6 cups Cinnamon Toast Crunch cereal
In a medium saucepan set over medium heat, melt the butter. Add the sugar, milk, and cocoa powder and stir to combine. Bring to a boil and cook for a minute to a minute and a half. Remove the pan from the heat and stir in the Biscoff spread and vanilla. Once the Boscoff is melted and combined, add the cereal and mix well. Once combined, drop heaping tablespoonfuls onto waxed or parchment paper and allow to cool for allow to cool and harden for at least 1 hour before serving. Serve fresh.
