Pot of Gold Cookies

So.

I made you some St. Patrick’s Day goodies.

I don’t know if any of you actually MAKE special treats for St. Patrick’s Day.  I mean, the banks are still open and my son’s school doesn’t have parties or anything like that, but there are tons of St. Patrick’s Day goodies circulating Pinterest, so I assume that someone has interest in such things.

Also regarding St. Patrick’s Day — pinching me is a good way to get slapped, so don’t EEEEEVEN play.  Hello, assault is a real and ILLEGAL thing.

Anyways — the Pot of Gold Cookies.

They’re so so easy, so if you’re kind of all, “I sorta want to be festive, but I don’t want to put a ton of effort into it”, then these are for you.

But if you’re going for fancy and difficult, might I steer you towards Pinterest?  You’d be amazed at what people dye green in the name of celebration.

These simple little cookies are made from chocolate cookies and yellow candies.

I used Oreo Mint Fudge Cremes (have you HAAAAD those yet??  OMG) but you could use Thin Mints, Grasshopper cookie, or any round chocolate cookie.  No biggie.

The “gold” pieces are mini M&Ms with a bit of luster dust brushed on them.  You can use any yellow candy or sprinkles though.  I think anything yellow and roundish would be cute and get the point across.

Luster dust just gives baked goods or royal icing a shimmery sheen, you can buy it at most cake decorating supply stores or online HERE.

To attach the candy to the cookies, just dip the top 1/3 of the cookie in melted chocolate almond bark, then top with candies and let it set.  Once firm, brush with luster dust…

…and use a bit more melted almond bark to attach a stripey straw or lollipop stick to the back.

Or you can just leave them sans sticks.  Totally fine.

I like the word sans.  I think I’m gonna make it my new thing.

So…that’s it!!  Easy peasy.  Now we’re all St. Patrick-ey.  Yay!!

    Those Oreos are crazy good! I would attempt to make these, but know for a fact that the cookies would only make it directly into my mouth as soon as I opened the package. Maybe I can just have a cookie snack with an M&M chaser.
