Spice Cake Sandwich Cookies with Cream Cheese Frosting

About a week or so ago (I’m being all casual like I’m not sure, but trust me when I say that the date is forever etched in my memory), a cashier at the grocery store asked how far along I was.

WHAT THE WHAT.

The thing is, I know I don’t have my prebaby body back.  The fact that my jeans won’t button and I have to basically pull a Macgyver maneuver to even think about wearing them makes that abundantly clear.

However.

I guess since I know that I was pregnant, and I have my pre-birth comparison to keep in mind, I didn’t think I looked that bad.  But apparently to innocent bystanders, I look like a pregnant person.

I didn’t have Lucy with me at the time, and I awkwardly told the woman that I actually had a baby already and was no longer pregnant.  Here was her chance to quickly think of something to somehow salvage the situation.

But this is what happened instead–

(seriously, I think that she went to the same Wrong Things to Say School that my husband graduated from with a Master’s Degree)

she stammered, “Oh…It’s just that I saw a bit of roundness and assumed…well.  Aren’t babies so fun?”

There was really no good way to end that whole conversation.  I just kind of stared at her and walked away, wishing it was possible to evaporate and rain back down as a thin person who is excellent at punching people and not getting arrested.

Anyways.

Ever since that day, I have been obsessing constantly.  My husband now hates that woman, because she has ruined any chance he had at sanity for at least the next decade.

But in my defense, it’s not every day that a stranger approaches you and blatantly calls you fat.  And obviously, I could probably diet or do some type of exercise to help the situation (is exercise still trendy?  Can we make something else popular instead?  Like books or television?), but cookies taste so good and dang it I GET HUNGRY.  Do you KNOW how many calories breastfeeding burns?

In honor of my baby belly that isn’t a baby belly but still looks like one, I made cookies.  Cookies for everyone!

Except for grocery store lady.  She gets a celery milkshake.  Gross.

Spice cake with cream cheese frosting is one of my favorite things.  It tastes like Grandma’s house and cold weather and I just love it.

Don’t you?

I realize that these cookies are kinda brown and plain, but don’t let that deter you.

Sometimes the ugliest desserts are the yummiest and these are no exception.  I absolutely LOVED them and will be making them often.

Spice Cake Sandwich Cookies with Cream Cheese Frosting

Serving Size: Makes about 24 sandwich cookies

Ingredients

  • 1 box Spice Cake mix
  • 8 oz block cream cheese, softened
  • 1/2 cup (1 stick) butter, softened
  • 1 large egg
  • 1/2 cup powdered sugar
  • Frosting:
  • 8 oz block cream cheese, softened
  • 1/2 cup (1 stick) butter, softened
  • 1 tsp vanilla
  • 3 cups powdered sugar

Instructions

  1. In the bowl of a mixer, combine one block of cream cheese and 1 stick of butter. Beat on medium until smooth. Add egg and beat, then add cake mix until a smooth thick dough forms. Cover and chill for about two hours.
  2. Preheat oven to 350. Spray baking sheets with nonstick spray or line with parchment paper. Using a small cookie scoop, scoop dough out into one inch balls. Roll in powdered sugar, then place on prepared baking sheets and flatten slightly with your hand.
  3. Bake for about 7 minutes, until edges are set but middles are still soft. Remove cookies to cooling rack to cool completely.
  4. Prepare frosting: In the bowl of a mixer, beat butter, cream cheese, and vanilla until smooth. Slowly add powdered sugar, beating on low until just combined. Increase speed to high and beat for about a minute, until frosting is light and fluffy. Turn cookies over to the bottom flat side. Spread with frosting and top with flat side of another cookie.
