Mint Chocolate Gooey Butter Cakes

Gooey Butter Cakes are basically one of my favorite desserts to make.

They’re easy, extremely versatile (the flavor possibilities are endless!), and so, SO good.

Also, some people think they’re kind of rich, so you can cut them into teensy servings so it looks like you made a TON.

But if you’re like me, there is no such thing as dessert that is too rich.

Seriously — sometimes my husband will be all, “Wow…that’s rich, isn’t it?” and I just roll my eyes and tell him he’s a weenie dessert wimp and I eat the rest of his serving.

(just kidding about the weenie dessert wimp thing…I only think that, I don’t say it to his face)

Around October/November-ish, I bought a bag of Mini Peppermint Patties that were shaped like pumpkins.  Then I was all huge pregnant and hated life, then I had a newborn and turned into a zombie, so I never used the pumpkin shaped peppermints.

Then it was almost Christmas and I was like, “well, I can’t even put these out in a candy dish without looking like a total loser at life, can I?  Guests will be all checking for expiration dates and scared to eat them”.

But then I laughed, because we all know that I don’t have guests EVER EVER NEVER, so I decided to chop up the Pumpkin Peppermint Patties and put them in a dessert and serve it to unsuspecting humans at church.

Turns out, you don’t spontaneously set on fire when you bring treats with last season candy in it to church!!  Everyone just eats it and doesn’t know any better and it works out great!!

These were actually really good, and are a great addition to any Christmas cookie tray.  Mint chocolate is one of my all time favorite combinations, and it worked really well in this dessert.

Mint Chocolate Gooey Butter Cakes


  • 1 box dark chocolate fudge cake mix
  • 1/2 cup (1 stick) butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Topping:
  • 1 regular sized bag fun sized York Peppermint Patties, unwrapped and each cut in half
  • 1 (8 oz) block cream cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • 4 cups powdered sugar


  1. Preheat oven to 350.
  2. In a large bowl, mix cake mix, melted butter, eggs and vanilla together with a large wooden spoon. Spread, using your hands to pat it down, in the bottom of a 9x13 inch pan.
  3. Place peppermint patty halves on the crust, about 1/2 inch to 1 inch apart.
  4. Beat cream cheese, eggs, vanilla, and mint extract. Add powdered sugar slowly and beat until smooth. Pour over crust/peppermint patties.
  5. Bake for 40 -45 minutes, until center is soft but not runny, and edges are puffed and firm. Cool and cut into squares.
