Mint Chocolate Gooey Butter Cakes
Gooey Butter Cakes are basically one of my favorite desserts to make.
They’re easy, extremely versatile (the flavor possibilities are endless!), and so, SO good.
Also, some people think they’re kind of rich, so you can cut them into teensy servings so it looks like you made a TON.
But if you’re like me, there is no such thing as dessert that is too rich.
Seriously — sometimes my husband will be all, “Wow…that’s rich, isn’t it?” and I just roll my eyes and tell him he’s a weenie dessert wimp and I eat the rest of his serving.
(just kidding about the weenie dessert wimp thing…I only think that, I don’t say it to his face)
Around October/November-ish, I bought a bag of Mini Peppermint Patties that were shaped like pumpkins. Then I was all huge pregnant and hated life, then I had a newborn and turned into a zombie, so I never used the pumpkin shaped peppermints.
Then it was almost Christmas and I was like, “well, I can’t even put these out in a candy dish without looking like a total loser at life, can I? Guests will be all checking for expiration dates and scared to eat them”.
But then I laughed, because we all know that I don’t have guests EVER EVER NEVER, so I decided to chop up the Pumpkin Peppermint Patties and put them in a dessert and serve it to unsuspecting humans at church.
Turns out, you don’t spontaneously set on fire when you bring treats with last season candy in it to church!! Everyone just eats it and doesn’t know any better and it works out great!!
These were actually really good, and are a great addition to any Christmas cookie tray. Mint chocolate is one of my all time favorite combinations, and it worked really well in this dessert.
I really hope you enjoy these.Mint Chocolate Gooey Butter Cakes

Thanks for visiting my blog! I realize you could be doing more important things with your time. Like watching the news or washing socks. I hope you stay awhile. Much more fun than socks, I promise.

Oh my! This looks so fabulous!
Kristan….these look INSANELY delicious! Heck, I may have some Easter egg peppermint patties in the back of my pantry. Hmmm….
WHAT?!
I must have this cake….
This recipe looks wonderful. Today I’m trying to make my goody presents and while I was ambitious when making the list, I have become less so in the execution of said list. This cake looks so much easier to make than a bunch of cookies or candy – I don’t have peppermint patties but I DO have a bag of andes mint baking chips and those should do just fine! Thanks for such a great recipe!
yum- these screams happy holidays to me!!
Oh my this looks like heaven!!
How do you find the time and energy to keep your blog updated regularly with so many new treats, especially after just having a baby? I run a dessert blog and find myself totally unmotivated to do anything for it anymore. I don’t even have the excuse of being a parent. What’s your secret?
No such thing as too rich, that is for sure!!
I made the cake this morning and it is fantastic! I’ve already given out 2 of my trays and they both said they loved it too. I posted about it and linked back to your post for the recipe – I just posted a picture of mine and talked about you!
[...] thing this morning, I made the Mint Chocolate Gooey Butter Cake from Confessions of a Cookbook Queen – well, minus the mint. I had some chocolate ganache left [...]
Besides this recipe looking great, you have an amazing talent for taking everyday life, making it humorous, and then wrapping it around a recipe. Thanks!
Youare so funny to read ! Merry Christmas to You.
These look amazing, but what I really want to know is what font did you use for the word cake in your photo?? I know that is a crazy question but I love that font and need it in my life!
