Mallow Cup Brownies

I have decided that there is a certain point during pregnancy where a woman just shouldn’t interact with any human besides a doctor.

Like maybe around the 36 weekish mark.

What I am trying to say is, at 37 1/2 weeks,  I kind of strongly dislike people right now.

I know I shouldn’t.

I know it’s bad juju and my sweet baby will probably be born with devil horns and say creepy things in a sing song voice as she gets older and it’s all my fault for hating humankind during the last few weeks of my pregnancy.

But goodness, I just want to lay in bed and eat chocolate until the contractions start.

I’ve been checking the browser history on my computer to make sure my husband hasn’t been researching divorce attorneys.  So far, so good, but this morning, he made an innocent remark about my son’s haircut over breakfast, and I literally contemplated drop kicking him across the Cracker Barrel.

But then I remembered that drop kicking is mean, illegal, and also, I’ve never drop kicked anything in my life because it sounds athletic, so I’m obviously allergic.

A few nights ago, he suggested having our cleaning lady over for an extra day to take care of a few deep cleaning things before the baby gets here.

I collapsed in the recliner sobbing and accusing him of thinking that I’m an unfit mother and wife.

Seriously.

But in my defense, if I had been closed in my room EATING CHOCOLATE, the whole conversation never would have taken place, sooo….

So in getting on track with being a rational and SANE human being (which I am, the sane part is just hiding sometimes right now), I decided to make brownies based on one of my most favorite candies ever — MALLOW CUPS!!

Mallow Cups are also super hard to find, they never have them at Target or Walmart, so I rarely get to actually have any.  Last year, I made homemade giant Mallow Cups for Christmas, which were totally amazing, so I decided that the same filling needed to go on some brownies.

It was a very smart, rational, and delicious idea.

Mallow Cup Brownies

INGREDIENTS

  • 2 (19-20 oz each) boxes brownie mix, plus eggs, oil and water to prepare
  • 1 jar hot fudge sauce (14-16 oz)
  • Coconut marshmallow filling:
  • 1 jar (7 oz) marshmallow creme
  • 3/4 cup sweetened shredded coconut
  • Chocolate fudge frosting:
  • 6 tablespoons butter
  • 6 tablespoons milk
  • 1 1/2 teaspoons vanilla
  • 3 tablespoons cocoa powder
  • 4 cups powdered sugar

INSTRUCTIONS

1.  Preheat oven to 350.  Line a 9×13 pan with foil and spray with nonstick spray.  Set aside.

2.  In a LARGE bowl, combine both brownie mixes, eggs, oil and water called for on boxes, and jar of hot fudge.  Stir until blended and spread evenly in pan.  Bake for about 40 minutes or until toothpick inserted in center comes out with gooey crumbs, but not batter.

3.  While brownies are warm, combine marshmallow creme and coconut in a small bowl.  Spread over warm brownies and set aside.

4.  In a medium saucepan over medium heat, melt butter.  Add milk and cocoa powder and stir until just boiling.  Remove from heat and stir in vanilla and powdered sugar (if too thick, add a bit more milk).  Stir until smooth, then pour carefully over marshmallow topping (you don’t want to have to spread it much).

5.  Cool, then slice and serve.

These are seriously some of my favorite brownies EVER — so so good.

And if they make a pregnant lady happy, that’s saying something.

    First of all, why does your husband seem so cheerful about the cleaning lady? Mine looks at me like I’m a complete failure if I mention hiring that out. Like, seriously, blogging is so hard you can’t even clean the toilet a few times a week? He thinks that, I just know it. I’m going to drop kick him the second he walks in the door.

    Second, I made marshmallow brownies this week too and they were ridic. Yours look better, though.

      I have a feeling that my husband is cheerful because it means that he doesn’t have to help clean anymore. But honestly, I get super defensive about it, because I am hormonal and mean.

      Also, we must have twin brains these last couple weeks!!! I love everything you make, so no wonder :)

    These look so good. I love anything marshmallow. And I despise just about everything else right now. I’m getting ready to move on the 17th. Complete exhaustion has set it and it’s just best that nobody cross my path. My mother and son just stare at me sometimes like some horribly mean creature has taken over my body.

    I may have to give up the low-carb, no sugar diet just to get through the next few weeks. Does it really matter if I weigh 5 pounds less when I move? Life is just too hard without sugar.

    Might be worth looking into and modernizing to include eating chocolate while lying in bed!

    Sorry to hear you’re so fussy. Our stupid hormones go haywire during and right after pregnancy. I use to cry at the drop of a hat. I’m sure your hubby understands. That said I probably would have thought the same about the cleaning gal but I’m sure he was just trying to be nice so you could relax while she cleans and gets the house ready for the arrival of your baby girl.

    Personally, I don’t even want to interact with my doctor after about week 36- too much poking and prodding involved… At that point, all I really want to do is chant to the baby “I’m ready whenever you’re ready. Are you ready yet? I’m READY!” :) Also, if you really don’t want your cleaning lady, could you PLEASE send her my way? All this (in my opinion) debilitating morning sickness has left me incapable of any real scrubbing for the last few months, and my house could seriously use that deep cleaning! I feel like I’ll never get caught up. (My husband won’t get me a cleaning lady… :( And I begged. I even told him it would be a perfect birthday present. So, he bought me a handgun instead… *rolls eyes* You’re so lucky!)

    Hang in there. The last month or so is the worst, but you’re almost there. Just concentrate on the adorable little baby you’ll soon be cuddling! It’ll be worth it… Good luck!

    I’m sorry you can’t find Mallow Cups. I live about an hour away from the Boyer factory/factory store. If you lived closer to Pennsylvania I would bring you some.

      So jealous!!

      The only place I can find them here is Cracker Barrel and they’re expensive there since it’s a specialty type item. Mallow Cups are my favorite…I wish they were more readily available!

        sometimes they have them at the dollar stores, have u ever looked there? I grew up on a variation of mallow cups that didnt have any coconut – just the chocolate and ooeygooey mallow, sooooo good, the coconut ones are good too. But I know what you mean about hard to find because i rarely can ever find the ones without coconut. Your brownies sound soooooo yummy, I must make some! btw just found out I have a bun in the oven and I only hope I can be as gracious in my pregnancy days as you have :) I like the idea of sitting in my room eating chocolate. I cannot even imagine baking as much as you have though, it’s just not in my blood. I only bake on cravings and that is if I cannot find someplace to buy my hearts desire :)

        Mallow Cups are made in my hometown by Boyer Candy Co…Altoona, PA!! They are soo cheap here, lol..sometimes the factory will send them direct!

    Mallow cups! I have never had one but judging by the looks of these scrumptious brownies, I need to get on that–stat. Also, I WISH my family would hire a dang cleaning lady. It’d make my life of baking SO much easier to not do the dishes.. Sigh, a girl can dream :)

    I say sit and eat chocolate all you want. Let the cleaning lady do all the work and just hide and watch some Housewives and stuff. It’s totally time to play the “I could go into labor at any second and I need my strength” card.

    When you mentioned how pregnant ladies shouldn’t have to interact with folks after 36 weeks, I thought there should at least be hands to bring you stuff and give you massages. Without that, you have to get all your own junk, which, let’s face it, straight up stinks.

    i totally remember than feeling. the completely insane, irrational hatred of everyone. All i wanted to do was sit and watch bad tv and eat mcdonalds and salt and vinegar chips. lol.

    haha – you’re too funny. i can’t really relate to any of those “symptoms” but i’m ALL FOR the cleaning lady – just do it! it’ll save your back and you can knit more and bake more :) which is great for all of us because these mallow cup brownies just look HEAVENLY!! i love fluffy toppings!
