Caramel Apple Coffeecake

So, I have decided that I am done with Summer.

Seriously, it’s disgusting.

Do you want to know how hot it was today?  105, that’s what.

How is that even real life?  It’s September.  And hello, I live in a normal town, NOT the desert.

Since I’m not a wizard and have no control over temperature and things, I have decided to just move on with Fall and and stay inside where I can keep my shades closed and pretend that the weather is however I want.

What?

That’s not weird.

To get a head start on Fall (yes people…FALL.  This is happening), I have teamed up with my BFF Shelly to bring you a whole week of Caramel Apple themed treats.

Yay for Fall desserts!!  Go die in a fire, stupid Summer!!

You want in on this, right?

(You don’t have to lie to kick it)

P.S. — Saying “You don’t have to lie to kick it” isn’t really cool anymore, but I’ve decided to bring it back.

Caramel Apple Coffeecake

Adapted from Food Network


Print This Recipe

INGREDIENTS

  • 1 stick butter (I used salted)
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cups peeled, cored, and diced Granny Smith apples (about 2 large apples)
  • Crumble Topping:
  • 1/2 cup packed light brown sugar
  • 1/2 cup all purpose flour
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons softened butter
  • Caramel Topping:
  • 1/2 (11 oz) bag caramel bits
  • 2 tablespoons heavy cream

INSTRUCTIONS

1.  Preheat oven to 350.  Lightly grease a 9×13 pan or spray with nonstick cooking spray.  set aside.

2.  In the bowl of a mixer, cream butter and sugar on medium speed until light and fluffy — about a minute.  Add the eggs one at a time, beating after each.  In a separate bowl, mix the flour, baking soda, cinnamon, cloves, and salt.  Add to the butter mixture with the mixer on low, alternating with the sour cream, starting and ending with the flour mixture.  Add the vanilla and then turn of the mixer and fold in the apples.  Spread in the prepared baking dish evenly.

3.  In a medium bowl, combine the sugar, flour and cinnamon.  Add the butter, but into small pieces and crumble in your fingers until the mixture resembles coarse crumbs.  Sprinkle evenly over the top of the cake and bake until set in the middle, about 35 – 40 minutes.  Remove from oven and cool for about 20 minutes.

4.  Melt the caramel chips and heavy cream in the microwave or in a saucepan over low heat, stirring until combined.  Drizzle over top of cake and serve.

My advice to you — bake this cake. Close your blinds, turn the air down low, and burn some candles that smell like leaves. Then eat this cake.

Surprise!! It’s Fall all up in yo heezee!!

Heezee means house. Also, not cool to say anymore, but whatevs.

    Dang! I just started Weight Watchers yesterday :( I’ll pin the recipe so when I hit my goal (which won’t be too long), I will definitely make this. I love apple/fall recipes. And I agree with you, I am so done with summer!

    I am all the way behind you on that! I am so done with summer. All I’ve been doing is hide out in my room where the air conditioner is turned on way low and I pretend it’s fall already. To help that happen this cake is getting baked today.

    I made pumpkin bread the other day just hoping I could hurry Fall along! So now I feel better… I thought maybe it was weird for me to bake pumpkin bread when it was like 1000 degrees outside, but then I was never “normal”. I am sooo making this cake!!

    I deeeefinitely need this cake in my not-fall-here-either life. I’m SO sick of sweating and having my clothes stick to me like second skin. If they’re selling candy corn in the grocery store, it should be like, illegal for the weather to be gross anymore. Yahearme, Mother N? Anyway, I want this cake and I want it now!

    I’m usually sad to see summer go but this year it was hell. I miss walking outside without instantly breaking a sweat. I’m ready for a chill in the air. This cake is a perfect way to celebrate the changing seasons!

    Um, yeah. I am SO.OVER summer. Our last few days sound like yours….some of the hottest days of the summer so far. I think if my husband hears me ask to move one more time, he may just pack me up on a plane to Alaska.

    So, I think I will do what you suggested….turn down the air and bake this cake. I may even put on boots and a sweater.

    I’m so with you. We’re not even that hot here in Oregon…we may get up to the 90′s this week, but still…I am not a summer lover and I despise the heat even when I’m not pregnant. Thank you for bringing Fall back early!

    After drolling on this for a week,I made it yesterday.Needed as excuse and it came as my birthday and bagfull of fresh picked apples yesterday. Looks just like this pic and taste yummy.The texture is moist and spongey.I took a shortcut and used store bought caramel syrup instead of making one.
