Honeybun Cake and a Giveaway!!

If you’ve read this blog (or my About Me page), for any length of time, you probably know that I am a firm believer in cake mixes.

I mean, really…anything that gets freshly baked cake into my face and the faces of the people I love quickly and efficiently cannot be a bad thing.

Cake mixes also lend themselves to tons of adaptations.  The cupcake, cookie, bar, and whoopie pie possibilities are endless.

So obviously, I am a huge fan of The Cake Mix Doctor.  I have ALL of her cookbooks (she has several), and they are ALL great!!  The things she does with cake mixes are just magical, and I have used her recipes countless times over the years.

I was recently contacted about trying her new cake mixes, and I was so excited to try them out!!  They contain real ingredients — no artificial colors, flavorings, preservatives, or transfat, and can be prepared in one bowl in less than five minutes.

You get a from scratch taste without the effort, which sounded to me like the best idea ever.

I decided to try using the yellow cake mix to make Honeybun Cake.

I’ve been making this cake for years and years — it’s so ridiculously easy, and one of my husband’s favorites!!  I love to make it in the evening so we can have a piece warm for dessert, then have some for breakfast the next day too.

The cake turned out perfectly with The Cake Mix Doctor Mix — it’s my favorite version yet!!

Honeybun Cake

INGREDIENTS

  • 1 box yellow cake mix
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 8oz container sour cream
  • 1 cup brown sugar
  • 1 TBS cinnamon
  • Glaze:
  • 2 cups powdered sugar
  • 4 Tablespoons milk
  • 1 Tablespoon vanilla

INSTRUCTIONS

1.  Preheat oven to 325.  Spray a 9×13 pan with nonstick spray and set aside.

2.  In a small bowl, combine brown sugar and cinnamon.  Set aside.

3.  In the bowl of a mixer, combine cake mix, oil, eggs, and sour cream.  Beat on low speed for a few seconds, then on medium just until batter is fully combined and all large lumps are gone.

4.  Pour half of batter into prepared pan.  Spread evenly (batter will be thick).  Sprinkle all of the brown sugar/cinnamon mixture evenly across the surface.  Cover with remaining cake batter, spreading evenly (spreading can be a bit difficult because the batter is thick — if some of the topping shows through or ends up mixed in with the top layer, it’s totally fine).  Using a small knife, swirl through the batter and cinnamon mixture, making the pattern of a large honeybun.  Bake cake for about 40 minutes, until center is set.

5.  Immediately make your glaze by whisking together the powdered sugar, milk, and vanilla in a medium bowl.  Once it’s smooth, pour over warm cake and spread evenly.

This cake is so easy and perfect for any occasion. We love it!!

    Oh I love the Cake Mix Doctor! My mom has her cookbook and I’ve made quite a few recipes with it. I’d use the cake mix to make one of the gooey butter cakes. :)

    When it comes to baking cakes I need all the help I can get! I would probably try this cake first, then a dump cake of some sort. BUT this honeybun cake has to be made and soon!

    I work in a newsroom full of journalists. And what do journalists love more than great interviews? Free food! I would totally use these yummy mixes to whip up a few variations to share :) This honeybun cake looks FANTASTIC!

    I would use it to make cake for Bible study! I am the coordinator for our med school’s Bible study and since I love to bake, that gives me an awesome excuse to try new things out on my friends. This honeybun cake is going on the list for sure! :)

    I’m with you, I love mixes. I would make some bar cookies and then a cake with lots of different chips and nots in a bundt pan. My friends love it when I make that cake. Usually just empty the pantry of all choc chucks, chips and nuts, its never the same twice. But always good.

    I cook in a secure residential treatment facility for mentally ill and I ofter use my cake doctor cookbook to make their desserts, they love cake and I can make many different ones from a simple mix.

    I have never tried the cake doctor before because they don’t sell it in stores in Nebraska. However, if I got it I found a great recipe to make cookies out of cake mix batter and I really want to try it! also the honeybun cake looks delicious so I would love to try it with cake doctor!

    Cake mix is a staple on Boy Scouts campouts. It gets used often in Lodge dutch ovens for cobblers, upside down cakes, etc. Pretty versatile!!!

    I would make a delicious orange cake that has holes punched in the top while it is still warm and then you pour an ornage glaze over it that soaks in! This cake mix would be perfect for this recipe!

    I love biscotti and have several recipes that use cake mix as the base, so I would definitely use the chocolate to make chocolate pecan or chocolate almond biscotti to with my coffee or hot chocolate as the weather cools off! Thanks! Can’t wait to find these near me!

    I LOVE the honey bun cake!! It’s one of my favorites. I’m going to have to try this version. You can also use cake mixes with melted butter on top of peaches or other fruits for a quick fruit cobbler.

I’ve been collecting recipes, and your chocolate cake mix cookies with the mini peanut butter cups are on my list! I’d definitely use the cake mix to try those cookies!

    I would probably make cupcakes, but the real answer is “whatever my daughter wants me to make.” We have to skip most cake mixes, because she can’t have the artificial colors in them. So my ears really perked up when you said that these mixes don’t contain artificial colors. This could make life a little bit easier. Woo!

    I love a good cake mix, they are hugely successful in the store for a reason – they work and are good!

    Cake mixes are amazing. There are so many different things you can do with them. One of my favorite ways to use cake mixes are to use them as a base when I make streusel toppings. Also, I use small amounts in dips, frosting, and milkshakes to give that cake batter flavor. Works wonderfully!

    I love the Cake Mix Doctor! I had several of her cookbooks but my mother-in-law “borrowed” them and now I don’t have any Cake Mix Doctor cookbooks.

    I absolutely LOVE this cake. I mean, what could be better than something this easy and tasty? The only problem is that i eat most of it on my own. Also, i was not aware of the Cake Mix Doctor and after reading this ordered two of her cookbooks from Amazon. Thanks for the tip! I too, live by your cake mix creed0.     I would make a Pig Pickin cake with the yellow cake mix. Yumm and then some chocolate cupcakes with a chocolate no-crusting buttercream frosting. Double yumm! Never thought about making a honeybun cake. Just always thought of prepackaged buns! Great idea!

    I use cake mix a lot. My favorite is a banana sour cream cake with cream cheese frosting. I use yellow cake. This cake is absolutely wonderful. I also make a lemon cake mix cake with lemon pie filling mix in it with blueberries. That is pretty good too.

    I have never heard of this cake mix. Your cake looks wonderful and I am going to make it when my daughter visits this weekend.

    Well, I would make this, for one.
    I generally don’t keep cake mixes around, partly because I like knowing exactly what is in my cakes, and partly because I also enjoy the getting fresh cake to my mouth faster idea – a little too much. So having to do things like soften butter and sift flour are GOOD for me.
    HOWEVER, I do have some recipes that require cake mixes, and some (like this one) that I would like to try.

    How about using the cake mix to make “honeybun cake “cupcakes?…..the chocolate cake mixes would be great cupcakes for my quilting group. They love and insist on chocolate for refreshment time!

    I would definitely use the cake mixes to make simple cookies for my students! They are fast and I always get told how I’m a great baker from the 5th grade class!

    I love the cake mix doctor books!!! My far my favorite one I have made so far is the sour cream chocolate cake from the 2nd book. It is light, fluffy and moist. It is my go to cake!

    Sounds amazing! I would use the yellow cake mixes to make an amazing rainbow cake for my son’s birthday and the chocolate mixes to make my favorite chocolate cake with homemade chocolate gloss frosting. Yummy!

    I would love to try these cake mixes!! I haven’t seen them in the store but certainly will be hunting them down this week!! If I won a cake mix, I would definitely make a chocolate cake with a hint of espresso and a chocolate ganache filling-heavenly!!!!

    I would make a chocolate chip coffee cake with the yellow mix and also try a chocolate sheet cake with yummy icing with the chocolate mix. Anything with chocolate works for me!

    Two things come to mind for the cake mixes…. this Honeybun cake is a no-brainer but I’d like to try them for cake pops (which my neices love) I’ve used from-scratch recipes that are delicious but a little time consuming especially since the cake pop decorating is already time consuming. I’d love to see if the mixes will give me a from-scratch taste that retains the density and smoothness of cake pops.

    I would use one of the yellow cake mixes, for making a pound cake. The chocolate cake mix I would probably add semi sweet chocolate morsels and chocolate pudding mix to it.

    I made your honeybun cake, with a regular cake mix, this week and sent half of it to my friend who is a teacher (and also my food guinea pig). He shared it with his teacher coworkers. One of the teachers liked it do much she took it to the lunchroom and had the cooks dissect it so they could reproduce it. They want the recipe so they can serve it to the whole school!

    Hi! Oh my, where to begin! I guess the very first cake I would make would be my favorite Pumpkin Crunch cake, then my next favorite would be a chocolate chip cake, they both are to die for!
