Lava Flow Cupcakes
I’m going to be completely honest here — I have way too much personal time invested in the Katie Holmes/Tom Cruise drama.
It’s kind of turned me into a private investigator.
Did she turn to Nicole Kidman for help? Are they friends?
Did she have a secret cell phone??
It’s all very Sleeping With the Enemy, which is one of my favorites movies. Ooooh!! Maybe she got pointers from Julia Roberts? Remind me to look into that.
Also, someone told me that Tom Cruise was responsible for the Dawson’s Creek reunion not happening. Obviously, Tom Cruise is now my least favorite person ever. What, he didn’t like Joey Potter??
What does he even know, he was in Vanilla Sky for Pete’s sake.
Anyways.
Have you ever noticed things like once you get a new car, even though you think you NEVER see anyone else have that car, suddenly they’re EVERYWHERE?
Well. Lately, since I can’t have cocktails, I feel like recipes for them are all over the place. It’s all I see.
I know that really has nothing to do with the car analogy, but whatevs.
Since I can’t have drinks, I decided to make a Lava Flow cupcake. I’ve never HAD a Lava Flow (except for the sno cone flavor…I am an expert at cocktail flavors as sno cones), but it’s all over Pinterest, so I figured it must be good.

It’s a pineapple cupcake infused with strawberry (that’s a fancy way of saying I poked holes in and poured jello on it), with coconut cream frosting and strawberry puree topping.
Preeeeeety sure you need one in your life.
Or four.
These cupcakes will add a fun and colorful twist to any tropical Summer party. Enjoy!!Lava Flow Cupcakes
INGREDIENTS
- 1 box (18.25 oz) white cake mix
- 20 oz can crushed pineapple in juice (NOT SYRUP)
- 1/4 cup vegetable oil
- 3 eggs
- 3 oz box Strawberry Jell-O
- 1 cup boiling water
- 1/2 cup cold water
- Frosting:
- 2 sticks butter, softened
- 1/2 cup Cream of Coconut
- 1 teaspoon vanilla
- 5 cups powdered sugar
- 4 TBS heavy cream
- Strawberry sauce:
- 16 oz frozen sliced strawberries in sugar syrup, thawed
- 2 tablespoons cornstarch
INSTRUCTIONS
1. First, prepare strawberry sauce: Using your blender, blend thawed strawberries and syrup until smooth. Pour into a saucepan, whisking in 2 tablespoons cornstarch. Bring to a boil over medium heat, stirring until thickened. Allow to cool to room temperature, then store in a covered container in your fridge.
2. Preheat oven to 350. Line 24 muffin cups with liners. In the bowl of a mixer, combine cake mix, entire can of pineapple and juice, oil and eggs. Beat on low for one minute, then increase speed to medium and beat two minutes more. Fill muffin tins 2/3 full and bake until tops spring back when lightly touched, 15 minutes or so.
3. In a bowl, combine Jell-O mix and boiling water, whisking until Jell-O is dissolved. Stir in cold water. Using a skewer, poke holes in the tops of your cupcakes and carefully spoon Jell-O mixture over the holes. I preferred to do this while the cupcakes were still in the pans, so the pan would catch any overflow.
4. Once finished, remove cupcakes to cooling rack and let cool completely.
5. Prepare frosting: In the bowl of your mixer, beat butter, cream of coconut, and vanilla until smooth. Slowly add powdered sugar until just combined. Add heavy cream and increase speed to high, beating for a minute or two until light and fluffy. Frost cupcakes and pour strawberry sauce on before serving.
Note: You can find Cream of Coconut with the drink making supplies at your grocery store. I prefer to use the squeeze bottle instead of the can.

Thanks for visiting my blog! I realize you could be doing more important things with your time. Like watching the news or washing socks. I hope you stay awhile. Much more fun than socks, I promise.

Mmmm what a treat!!
These cupcakes look delicious and i absolutely love all of these flavors together. I recently started my own blog and yours was one that inspired me to share recipes I have and love! Thanks for posting awesome cupcakes, can’t wait to try this recipe!!
Im looking for fristing receipes that are like the bakery cloud frosting except no coconut do u have any to share?
so impressive!
I would like 17 of these please.
I’m under the weather now so I’m trying to stay away from alcohol. These cupcakes definitely are great substitutes for now!! They look amazingly scrumptious!! Questions…how do you get the frosting so beautifully light and fluffy? Which attachment should I use? Paddle or whisk? What speed on KitchenAid…is 4 enough? Lastly, beat for how many minutes? Thanks!!
Whoa. Never heard of lava flows before… ever. Except for the whole lava flowing from a volcano type. Obviously I’m living under a rock but most of the time it’s cool since Tom Cruise doesn’t exist in that world. BUUUUT this look really yummy and refreshing. I totally support the eating four of them idea. Gimme!
Yeah. I reckon I might just need them in my life!
(I’m going to the hair dresser’s this weekend. Which means I get to read trashy magazines for an hour and a half with no interruption. YAHOO!)
Omg, when Julia Roberts sees that the towels are lined up perfectly…? Best scene ever.
When I was pregnant it seemed like every other day there was a new sushi restaurant opening so I feel your cocktail pain. Cupcakes look delicious.
i miiiiight have stayed up until 1 am last night watching old dawson’s clips on you tube. yep yep yep.
I just wish Katie would do a tell-all with Martin Bashir or somebody so we can really get the dirt. I wouldn’t expect her to dangle Suri form a balcony window or anything…
I’ve never heard of a Lava flow anything! These look delicious!
Happy Monday! I’ve never heard of these before, but they sure look great.
These cupcakes fit all the criteria: decadent, devine, deadly & delicious! In other words ~ just plain sinful! Yum!!!
Yum! Good birthday treat for me. I need these…..
I love all the “lava”, so fun for kids too. Pineapple, strawberry, and Coconut, this is like summer part in a cupcake. Very cute!
Ohhhhhh yum! These are gorgeous! They could be for Halloween too? Bloody cupcakes? Sorry, if that made you nauseous. I don’t want to upset a pregnant mama! xox
Tom Cruise totally creeps me out. All that crazy totally ate away at his cuteness, too.
Ooooohh! They look delish! :)
These look like fun to make and I am exited to try the flavor combination- strawberry, pineapple and coconut! YUm!
These cupcakes have me swooning!! What a perfect summer treat! :)
I would love to see pictures of your pantry, you seem to have everything you need at your fingertips.
Or do you make a list of ideas and things you need, then head to the grocery store?
I follow many blogs, but your blog is my utmost favorite. You always make me laugh.
Thank you very much, Michelle
I think as a THANK YOU for NOT buying your pretty baby girl a Yoda Suit today, you should make these for me. And I like the random analogies. Kinda like you never see anyone pregnant, until you are, then EVERYONE is preggo, right? Thanks for always making me smile!
PS…I have never had a lava flow either, but I think I should. AND I think it serves Tom right. He ditched poor Nicole right about the time my first husband did the same. They also has simultaneous downfalls. Serves them right JERKS. {PS, I might be way to involved in the whole saga also}
These are adorable. Leave it to you to come up with something so cute. I’m with you on Tom Cruise. I don’t like him at all anymore. I wish I knew what his deal is. He must be VERY controlling.
This frosting alone looks to die for…
These are sooooo creative + fun. That strawberry lava flow makes these extra special!
[...] made Lava Flow Cupcakes!! Give them a whirl, total [...]
One of the things that’s really neat about this particular recipe is that you can substitute different flowers for the cupcake mix and for the sauce to come up with new awesome combinations. Thanks for the recipe, ma’am!
Unfortunately love and religion don’t always mix. Yummy cupcakes.
