Chocolate Cream Pie Cupcakes

So, I’ve had this grand idea that I’d get caught up on sleep before the baby gets here.

You know…sleep in during the Summer mornings when there is no school.  Take naps.  Enjoy the luxury of a quiet house with a son who is almost 8 years old.

It turns out that sleeping attracts children like moths to a porch light.  I would get less of a reaction if I was baking cupcakes and passing out free toys.

I haven’t been sleeping so great at night — the baby kicks, I have to pee three millionty times, and I get calf cramps that make me want to punch life.  So the other afternoon, I decided to close my eyes for a half hour or so and take a much needed power nap.

Five minutes in, I smelled something very near to my nostrils.

I quickly identified it as Cheez It breath, which is honestly my arch nemesis.  There really should be a law about brushing your teeth immediately after consuming cheese flavored crackers.

Anyways, I opened my eyes and there was Jon David, 2 inches from my face, just staring.

Of course, I got mad.  And because Trying To Take A Nap Mad equals three times the mad of Normal Doing Daily Activities Mad, it wasn’t pretty.

Turns out, I shouldn’t have even gotten upset.  Jon David was just “checking on me” to “see if I was asleep”.

Isn’t that considerate?

When he isn’t “checking on me” during naps, he is sneaking in my room early in the morning to wake me up (or as he calls it — snuggle).  Again, I shouldn’t get mad because according to him “I can’t help it that you are so cozy, mom”.

Obviously, mens cluelessness about the fact that sleep often trumps cuddling begins VERY early in life.  Don’t get me wrong — I appreciate that the boy loves a good cuddle, but my goodness I am exhausted.

I wish there was a way to sleep while pretending to do chores, because that would keep my son away for sure.  Especially if it involved laundry or toilets.  Maybe I’ll close myself in his room and play a recording that sounds like picking up toys.

Since the nap thing isn’t quite working out for me, I decided to make better use of my time and whip up some cupcakes.

Chocolate Cream Pie has been a favorite of my husband’s for years, so I’ve had it in mind as a cupcake flavor for awhile.

Chocolate cupcakes with a graham cracker crumb base, filled with chocolate pudding, and topped with a sturdy meringue.

I’ll be honest — it’s so crazy hot here, my air conditioner can’t keep up.  Combine that with my pregnancy, and sometimes getting in the kitchen is unappealing.  So…I took the easy route on these — Devil’s Food cake mix and instant pudding all the way.  If you want to go a homemade route, use your favorite scratch cake and pudding recipes…but I loved that I could throw these together easily but they still came across as very impressive.

It’s too hot to be spending hours in the kitchen, for reals.

Chocolate Cream Pie Cupcakes

INGREDIENTS

  • Chocolate cake batter for 24 cupcakes — either from a mix or your favorite homemade recipe
  • 2 (3.9 oz) boxes instant chocolate pudding
  • 3 cups milk
  • About 7 sheets graham crackers, crushed into crumbs
  • Meringue:
  • 5 large egg whites
  • 1 1/2 cups sugar

INSTRUCTIONS

1.  Preheat oven to 350.  Line 24 muffin tins with liners.

2.  Cover bottom of baking cups with graham cracker crumbs.  Fill cups 2/3 full with batter and bake for about 12 -15 minutes or until tops spring back when lightly touched.  Cool completely on a wire rack.

3.  While cupcakes are baking, prepare pudding.  Whisk both boxes of pudding and 3 cups milk together in a bowl until it starts to thicken, about 2 minutes.  Place in the refrigerator until cupcakes are cool.

4.  Once cupcakes are cool, cut a hole in the top of each cupcake (you want it about 1/2 – 2/3 of the way deep).  Fill holes with chocolate pudding (I used a disposable piping bag and piped it in…way easy).  Place cupcakes in the refrigerator while preparing the meringue.

5.  In a CLEAN (no greasy residue…the meringue won’t rise properly) metal mixing bowl, whisk egg whites and sugar together over a pot of simmering water on the stove until the sugar melts, about 10 minutes.  Remove bowl from pot of water and beat with mixer on low for about 5 minutes.  Increase mixer speed to high and beat for about 5 minutes more, until fluffy and stiff.  Pipe or spoon meringue on cupcakes and brown with a small kitchen torch.

Notes:

If you are going to pipe the meringue on HIGH like mine, you will probably want to double the meringue recipe. If you don’t want to use that many eggs (it’s a LOT), just pipe or spoon on a smaller amount…still impressive!!

If you need a good kitchen torch, something like THIS works great. I rarely use my torch, but it’s great for browning cooked meringues (which hold up better, pile on high, and don’t shrink or weep), and I’m always glad to have it when I do use it!!

    These cupcakes are gorgeous! It’s nine trillion degrees here too, so I kind of feel your pain about turning on the oven. These look totally worth it though!

    AMEN! I’m still trying to get it through my husbands head but then he makes me feel like some kind of monster because I don’t want to cuddle.

    Your son is just so adorable. You should count yourself lucky that he’s “checking up” on you and wants to cuddle just because. I have a son, too, but he’s 14 now with a newly developed manly voice. I sure do miss his fluffy 8-year old cuddly self. Well… these creatures can’t help themselves but grow up. Take care always and I look forward to hearing about your new baby when she comes out.

    I have an AWESOME cure for leg cramps! Now, I know I may sound crazy, but trust me on this one. My whole family swears by it. Put a bar of soap (yes soap) at the foot of your bed just underneath your bed sheet. I don’t know how it works, but it works. My mother and father in law thought I was crazy until one night they slept in a bed without soap and both of them woke up in the middle of the night with leg cramps. Now they take soap to put in hotel beds when they travel lol

    I use Irish Spring, works for me and makes the bed smell nice and fresh too :) I use two bars, because hubby tends to kick one out on a regular basis.

    What a gorgeous cupcake!!!! I love that there is pudding hidden in the center too!! I think it is super adorable that your son is still wanting to cuddle with you. My youngest is 8 and I adore that he is a cuddler too!! I hope you are able to get some sleep soon. And if you figure out how to sleep while cleaning please let us know. That would be a handy trick to know:-)

    Your recipes always make me hungry for sweets! Too bad it is over 100 degrees here, or the oven would be on ASAP!

    On another note, I had to see a podiatrist regarding a foot injury (caused by overuse at the gym-go figure?) and he told me to take magnesium supplements at night for my severe foot and leg cramps. OMG, they have completely disappeared! I take it every night before bed and feel 100 times better. Maybe your OB/GYN would allow you to try it?

    You’re cooking?! In THIS heat???? Good grief!! And on NO sleep! I had bad leg cramps years ago and my doctor prescribed quinine. Can’t remember if it was tonic water or pills. I wasn’t pregnant. I would check with my doctor first. Had a foot doctor who told me it was potassium deficiency and I should eat bananas. (Yuke. Hate bananas.) How’s the heartburn? And I agree with another commenter. Buy a DVD Jon David likes, put it on, go to sleep. Yes, folks there are times we need to use our TVs as babysitters. You try living on no sleep.

    Ew! I have to say, cracker breath is up there with morning breath and garlic/onion breath. Gross! Unfortunately, in conjunction with those smells, I have a smoker boyfriend to contend with. Sigh.

    Maaaaaybe making him these cupcakes will cause him to be nicer to me? His dragon breath will probably enjoy it, too. These look awesome! Cake mix and instant pudding all the way, girlfran’!

    Ok, important things first – I am IN LOVE with these cupcakes – if there is one thing I love almost as much as cookies and that is cupcakes – ok now…….

    I think little boys learn (even if it is not on purpose) at a very young age that when they wake you up it works by saying “I just was just checking on you” when they really want you to wake up!!!!! When they get older they use that ploy in different ways, ie – clang their spoon while stirring their coffee at 2 am when they are getting ready to go fishing and when you get up they say – “You didn’t have to get up – I can make my own breakfast (or sandwiches)”:) – not on purpose but it is in their genes. They cannot help it – they are born with this gene. LOL Your son is such a cutie and I miss those cuddling days but my grandson is coming on Friday and I do miss cuddling – he is 20 months old now and now my daughter tells me he doesn’t cuddle anymore – he RUNS all the time:(. We have acre yard – I wanted to lose weight anyway – guess if I want him to cuddle – I will just have to tire him out:)

    Gorgeous cupcakes- they look SOOOO good! Tip for napping: While pregnant with child 3 (and I work from home), I was WHIPPED. I put dinner in oven, set the timer, and put the children’s favourite TV show on (which I taped previously) and napped on the couch and the timer would wake me up 20-40 mins later depending on how long it took to cook dinner. I even resorted to keeping a blankie stuffed behind the couch cushions to speed the process up. I told the children ahead of time: mummy is napping, you watch this and let me have a little nap, do NOT bug me unless its an emergency. It worked.

    I laughed all the way through and remember what it was like trying to get sleep, especially in my second pregnancy when I wanted to sleep 24/7 the first trimester. Cooking something decadent is a great way to reward yourself for enduring a little boy’s hugs! Be sure to share with him.

    Too funny, my kids wouldn’t bat an eye if I ran around the house screaming and hollerin’ but should I sit down for 10.5 seconds it’s all over and I get my coffee 2 hours later. As I write this I feel kinda guilty…wait no, I don’t ;)
