Brownie Batter Cupcakes
Here in Arkansas, it is stinkin’ hot outside.
I don’t mean mildly uncomfortable hot, either.
I mean temperature in the hundreds, no breeze, medically unsafe and burn bans in full effect hot. It’s miserable.
Of course, we have a pool now, which is supposed to help, except this is our first time having our own pool and it turns out you have to have an advanced degree from Wizardry School to figure out all the chemicals and stuff.
After several go arounds with getting the pool nice and clean only to have it looking funky again in a few days, my husband finally decided to hire a pool maintenance person to keep up with it until we get the hang of things.
I, for one, was fairly excited about this development. By default, when I hear pool boy, I think Zac Efron ( not High School Musical Zac, but 17 Again or Lucky One Zac), and I think we can agree that’s a good thing all around. But then the pool boy showed up today, and needless to say, he was not Zac Efron or even a reasonable facsimile. Obviously, I am married and pregnant, but I am uncomfortable, sweating like a cow in this heat, and no harm ever came from a Zac Efron look alike stopping by to check your PH Levels, right?
Anyways, I took Not Zac Efron outside this afternoon to get him started and show him where we kept our pool supplies, and five minutes in I almost died from heat exhaustion. He kept talking at me and explaining what all we needed to do, but all I kept thinking was how Real Zac Efron would just do it without explaining everything so I could go inside and drink something with lots of ice.
I guess what I’m saying is ladies…be careful what you wish for. Especially if your wish involves Zac Efron.
One thing that was NOT a disappointment today was these cupcakes. I wasn’t sure if it would be possible to stuff them with brownie batter, but then I remembered that people stuff cupcakes with cookie dough all the time. So I used the same method and they turned out seriously amazing.
You’ll need to prepare a box of brownie mix using the amount of water called for on the box, melted butter for the oil called for on the box (an equal amount), and leaving out the eggs. The batter will be thick like a dough, which is totally fine.
Roll the brownie batter into roughly 1 inch balls and place in the freezer for about an hour. I realize that frozen brown dough balls are hardly appetizing, but it’s a necessary evil, people.
Prepare your cupcake batter and fill liners a little less than halfway.
You can use any homemade cake recipe, or a box mix. I used yellow cake because I love yellow cake and chocolate together.
Place a brownie dough ball in the center of the batter and press down slightly. Cover with a dallop of batter. Bake until cupcakes spring back when lightly touched 15 -20 minutes.
Because you froze the brownie dough, it thawed in the oven instead of baking. So what you’ve got is a cupcake filled with brownie batter!!
I may or may not have picked the brownie batter part out of two cupcakes and ate it on it’s own.
Okay, I did.
I topped the cupcakes with Brownie Batter Frosting and brownie crumbs (we happened to have some brownie snack cakes in the cupboard…I did NOT bake a full pan of brownies just for garnish).
Seriously yummy. Do it!!
Of course, since Shelly and I have proclaimed it Brownie Batter Week, she’s got a brownie batter treat of her own…Brownie Batter Milkshakes!! Be sure to pop over and check them out.Brownie Batter Cupcakes
INGREDIENTS
- Cupcake batter (prepared as directed from a mix or your favorite recipe)
- Box of brownie mix (standard size) with water called for on box and melted butter equivalent to the oil needed
- Brownie Batter Frosting:
- 2 sticks butter, softened
- 2 teaspoons vanilla extract
- 1/3 cup unsweetened cocoa powder
- 2/3 cup brownie mix (powdered from a box)
- 3 cups powdered sugar
- 1/3 cup corn syrup
- 2 teaspoons hot water
INSTRUCTIONS
1. In a large bowl, mix brownie mix with water and melted butter (batter will be thick). Roll batter/dough into 1 inch balls and place on a wax paper lined cookie sheet. Freeze for about an hour.
2. Preheat oven to 350. Line 24 muffin tins with cupcake liners. Set aside.
3. Prepare cupcake batter as instructed on box/recipe. Fill liners slightly less than halfway full. Press a brownie dough ball in the center of each, then cover with a spoonful of cake batter. Bake for about 15 minutes or until cake springs back when lightly touched. Place cupcakes on a rack to cool.
4. Once cupcakes have cooled, prepare frosting: In the bowl of a mixer, beat butter and vanilla on medium until smooth. Add powdered sugar, cocoa powder and brownie mix, beating on low until just combined. Add corn syrup and beat on medium until combined. Add hot water, increase speed to medium high, and beat until light and fluffy, about a minute or so. Pipe or frost frosting on cupcakes. Top with brownie crumbs if desired.
I hope you love these cupcakes as much as I do…they’re seriously amazing!

Thanks for visiting my blog! I realize you could be doing more important things with your time. Like watching the news or washing socks. I hope you stay awhile. Much more fun than socks, I promise.

I think I need to siphon that frosting into my mouth.
And if you find a pool guy that looks like zac ephron, I call dibs!
Are you trying to make me weep? I’m still drooling over your brownie batter frosting, and then this?! You’re my new hero!
Oh. my. These are amazing!!
Yep! I want those too! Beautiful piping!!!! :)
Your cupcakes look insanely delicious, especially that frosting! But jeez… now you’ve got me wanting a Zac Efron pool boy lol
Yes, my pool guy is definitely not Zac Efron either. He also grunts instead of smiles. And these cupcakes….mmmmm.
ok now I’m really dying for brownie batter :)
Sorry to hear about the pool guy, if I see Zac’s twin on my block I’ll be sure to send him by.
These cupcakes look amazing! I would totally eat one…or two…ok probably three. I can’t say no to cake. I have no self-control. Also, I’m all over the whole Zac Efron thing. If he was my pool boy I would purposely do stuff to my pool to make him come over more often….haha.
Sounds super yummy! I would take a non Zac Efron pool guy just to have a pool.
Um, yeah. When you find a Zac Efron pool man, definitely let me know. I don’t have a pool, but I’ll find something for him to do, I suppose. Perhaps eat this frosting with me because it looks positively WONDERFUL!? I think so.
You know, I have to say that if I was handed brownie batter that was frozen I probably wouldn’t turn it down. What a great way to fill cupcakes!
These look yummy! Must try them.
I want to top my tongue with that frosting…
I would take grown-up Zac Efron as the pool boy any time… maybe next summer you will be that lucky:-)
These are killer cupcakes!!
Okay, I am LOVING idea of the brownie batter inside the cupcakes–brilliant!!
What a fun idea! I love this instead of a ball of cookie dough!
Genius! I’m loving these brownie batter posts! Good luck staying cool, sorry to hear it was a no-go on the Zac Efron look alike, a girl can dream!
You and Shelly seriously need your own show on Food Network!
I just wanna jump in that picture of brownie cupcakes and milk!!!
It’s so happy!
Trust me! It may be best to have a NOT so yummy pool boy!
Once the cable guy that came to our house was so dreamy I ended up making a complete FOOL of myself!
I was like mesmer~FREAKIN~rized by him!!!
I mean he had me under a spell…and didn’t have a clue until I said you totally need to be in Hollywood making movies instead of being a cable guy!
So not COOL for me to say that!!!!
I mean it was suppose to flatter him but can you imagine what a weirdo he thought I was.
Especially when I told him I’d be happy to QUIT my life as a wife and fur~ball mommy and go with him to Hollywood to be his agent!
NO!!!!
I didn’t say that.
But I wanted to!
Just sayin!
It may be best to have a NOT so dreamy pool boy!!!
xo
p.s. Everything you write always makes me want to leave lonnnnnnng comments!
Ah….haha!
Pinned! These look decadent.
I am always keeping my fingers crossed for a pool boy. So far, no luck. But point well taken!
These sound simply heavenly! Yum!
Oh, sweet heavens! Look at all that frosting! These look incredible! Real Zac Efron would not only just do it, but he would also get you an ice cold lemonade. And if it was Ryan Gosling, he would also give you a foot rub.
A food blogger (I can’t remember who) said that bloggers cut their cupcakes in half and then frost them for that “perfect” look. You obviously have the skill to frost and then cut a cupcake cleanly. Love the cupcake idea and love the mile-high frosting.
Keep writing…
Ahhh fantasy’s, don’t you just love em’ This post had me laughing. I kinda had the same thoughts about a dental hygienist once but she too was not Katy Perry…no siree.
Great post and cupcakes :)
gahhhh! these look amazing. I love that you put a little rolled brownie ball in the middle of the cupcake!
I am pinning these now and making them this weekend. I always look forward to reading your posts. They make me laugh out loud!
These look delicious.
These look yummy-licious! Just want to say thank you for doing what you do. I visit your little acreage of the interwebs almost daily, and you never fail to make me laugh or give my brain pan a thing or two to ponder. You rock woman!
This brownie batter goodness has me going insane. Dangerous in the best way!
I’m a tinsy bit jealous about your weather – here in the UK we are having floods, hail the size of golf balls, freezing cold winds and all when it’s meant to be summer!!
I’m off to bake brownie batter cupcakes to make me feel better!

i think my life is over because i am going to make a dozen of these and eat them in one sitting. twice.
Those look AMAZING. I wish I had seen this a few hours earlier and I would have made them instead of plain chocolate cupcakes. Next time!
I’ve had the experience of pool ownership and pool boy people twice. Both times, they were horrendously Not Zac Efrons. :( Sadness all around.
You and Shelly are killing me with the brownie batter treats. Seriously. Brownies are my favorite of all sweet things ever. I want to make all the brownie batter things. So stop it already.
These are seriously awesome. Now if it would just cool down long enough for me to turn on the oven…I think these might just make me do it anyway. :-)
Thank you, thank you, thank you! I made this frosting this weekend and it was AMAZING and got rave reviews! I believe this may now be my go to chocolate frosting!!
i wantttt that frosting

I always love your cupcakes!! I made the Banana Pudding ones last night and they were a huge hit!! I was wondering….what number tip do you use for piping on your frosting? I love the look!!
best cupcake ever !! Mine are not nearly as pretty as yours, but they taste heavenly :) thank you I needed this today
I love your humor and these look too yummy. There goes the diet [again!]
Keep up the good work!
These tasted great but I would highly recommend taking the cupcakes out of the pan right after being baked. I let mine cool and had meant to take them out sooner but they were in the pan for 12 mins after baking. The brownie ball started to cook and stuck to the bottom of the liner making part of it inedible and the cake came off the brownie bottom. I will definitely try these again.
