Mini Devil’s Food Donuts
I have decided that the First Trimester of pregnancy needs a fast forward button.
My cravings for sweets is nearly non existent and my normally bordering-on-insomniac self spends the entire day on the verge of falling asleep standing up. I have never punched a human being (or animal, to be clear), but if they stood in the way of a quiet place to lie down at around 4 in the afternoon, I cannot be responsible for what hormones drive my body to do.
I am but a passenger on this wild ride of emotions after all.
Also, I’m big enough that people can tell that I’m pregnant, but NOT big enough that I get especially spoiled or anything, which is kind of lame. Why does everyone only spoil the women who are like 8 months? That’s the best part!! Trust me, when I was 8 months pregnant with Jon David, I was practically a normal human being again, except for the part that there was a 6 pound human punching me in the stomach all day. But that isn’t THAT big of a deal, is it??
So basically, I have to force my family into spoiling me and remembering at ALL TIMES, my very sensitive situation. Sometimes, when I feel like my husband and Jon David are being stressful, I stop what I’m doing and yell “STRESS!!! STRESS!!!” until they stop.
Stress is not good for me OR the tiny bean sized baby. DUH.
Although I’m not particularly partial to sweets right now, the occasional craving does strike (today it was McDonald’s soft serve, a few days before that, Fruity Pebbles), and one thing I crave a lot is…DONUTS!!
I decided to try my hand at recreating the new Devil’s Food Mini Donuts from Hostess. And if we’re being honest here, mine are better.
Also, pregnant people can’t lie, it makes the fetus angry. So…you definitely need to believe me on this.

INGREDIENTS
- 1 box Devil’s Food Cake Mix
- 3/4 cup buttermilk
- 2 eggs, lightly beaten
- 2 Tablespoons butter, melted
- For Chocolate Coating:
- 2 cups milk chocolate chips
- 2/3 cup shortening
- Sprinkles, for garnish
- Mini Donut Pan(s)
INSTRUCTIONS
1. Preheat oven to 425. Spray donut pan with nonstick spray.
2. In the bowl of a mixer, combine cake mix, eggs, buttermilk, and melted butter. Beat on medium until just combined. Spoon or pipe (I use a disposable piping bag with the tip cut off) the batter into the donut pan, filling each mold just slightly less than halfway.
3. Bake for about 4 minutes, or until tops spring back when lightly touched. Allow to cool in pans for a few minutes, then remove to cooling rack. Make chocolate coating.
4. Place chocolate chips and shortening in a medium-large microwave safe bowl. Microwave on high, stirring every 30 seconds until smooth. Dip cooled donuts in the coating, allowing excess to drip off. Place on a cooling sheet with wax paper underneath to catch the drips. Shake sprinkles over donuts before chocolate sets, if desired.
5. Once chocolate is set, serve.

First, congratulations on being pregnant! Second, thank you for this delicious looking recipe for a baked, not fried doughnut & I only have a pan for 6 regular size donut pan -will this work? I ask because I don’t play well in the kitchen-follow recipes only. Lol!
yes it will work just fine!! Bake the donuts for about 10 minutes instead though :)

Oh my gosh the same exact thing happened to me Kristan!! The first trimester completely took away my sweet tooth! I was floored! Never fear, it comes back as soon as second trimester starts, lol! I am back in action with craving my sweets :) Love the cute little donuts!!
I honestly want a donut pan, but haven’t been able to reason with myself to buy one yet. Though as soon as I finish course (end of June) and get an admin job I will go out and buy one (along with the 19 harry potter shirts I am eyeing off on http://www.redbubble.com and a new phone because mine just isn’t cutting it at the moment even though its pink) and make these :D. Congrats on your pregnancy, I kept wanting you to have another kid but then got sad because I knew you stopped at one :( honestly I am hoping and praying that its a girl, the outfits you would dress her up in would be so pink, girly, glittery, stylish and pink. All the best, please give us updates maybe have a tab for baby updates on your blog (just a thought)?
First of all – – ohhhmmmyyyggaaawwwdd … I didn’t know you were pregnant!! Congratulations :) Not craving sweets now, just means you have lots of making up to do after the little one is born – in the mean time, I’ll gladly have your share… starting with these doughnuts
Hope you’re feeling better soon, I’d hate to see anyone injured, but if it happens, you have to do what you have to do to get some rest! :) Then you could just give them some of these donuts and they’d totally forgive you! YUM!

As much as I love those Hostess donuts, I hate the waxy feeling on the top of your mouth after you eat them. I’m sure there is no waxy residue with these!!
And I’m totally with you – you should totally get spoiled the ENTIRE pregnancy. Just keep reminding everyone around you!

That little gummibear nds all the energy it can steal from you to get bigger :O) I found that when I was preggy w/ my first baby everyone doted on me..BUT when I got pregnant the 2nd time and I could have actually used a little bit it was like I could only hear crickets…hellooooo anyone ?? anyone ?? Thanks for the recipe. I have been on the hunt for a good baked donut. My question to you is-I know the coating was only 2 ingredients, but what did I do wrong? The coating did not set up. Must eat with a fork or use lots of wet paper towels as napkins. I used the shortening that comes in the bars (measured to 2/3 c.) and 2 cups. chocolate chips. Even though extremely messy, my whole family still loved them. Do you think chocolate almond bark would be OK?
Maybe you didn’t wait quite long enough? I let mine set for awhile…it’s the same coating I used for my Cookies and cream cupcakes the other day. Chocolate almond bark would do, but its going to be thicker and quite a bit hard. If you go that route, I’d definitely thin it with a little bit of shortening. I hope they work better next time!!

True story- one time I bought a package of hostess doughnuts (the crumb variety) and bit into one, and found a stud earring inside! I wrote them a letter and expained the situation, hoping they would send me like $25,000 to cover my pain and sufferings, but only got a few coupons. Long story short- these look super good! :)
I’m not EVEN going to tell you how many of these I would eat. Let’s just say I’d probably have to double the recipe! :)

Yep, me here on my catching up binge. I’m dying laughing at “stress, stress” I might try that with my fiance and daughter, except my little monkey would just talk smack to me in gibber-pokemon language.
I am loving cake mix donuts and these are AHMAZING – I have a quick question though.
What do you think would happen if I switched the buttermilk with another liquid? Does it have to be buttermilk?
