Coconut Filled Fudge Cookies
Thankfully it is Sunday evening and my husband is back home, so I can finally tell you that he was gone on a fishing trip all weekend.
I have been DYING to whine all about it on Facebook and Twitter, honestly it has taken every ounce of restraint NOT to, but I know better than to announce that I’m a sitting duck on the most popular social network in all the land. We all know that murderers troll those sites. And not assassin style murderers, but the kind that hide in your closet all day and wait until you fall asleep to creep around your house and torture you.
I remember when I was a kid and I was scarred for life after seeing Michael Jackson’s Thriller Video. For months following, I swore I saw his glove glittering in my Grandma’s closet when I slept over, so I’d spend the entire night trying to make sure the blanket didn’t move up and down when I breathed.
Because obviously, he wouldn’t turn into a wolf and kill me if I was already dead.
When my husband is gone for the night, I basically do the same thing, only AFTER I have pretend conversations with my husband on my cell phone about machine guns and how my latest kick boxing class went.
It’s seriously stressful. And exhausting.
If I had it my way, my husband would never go on Man Trips. I don’t see the point anyways…men never do anything good. Alls they do is catch fish and stay in a cabin that doesn’t even have a nearby spa or shopping mall. Also, they cook real meals, like it’s an alternate universe or something. I can’t even remember the last time I saw my husband turn our stove ON. But then he goes on a Man Trip and he’s all “hey look at me, I’m cooking things in a pan like a person who makes meals” and I’m all, “I’m here at home about to get murdered and you’re cooking food for people that isn’t ME?!”
It’s just bad all around.
It should come as no surprise that I spent my weekend creating my very own Ryan Gosling Food Blogger husband. He’s supportive, he fights for me, and he is all about food trends. Also…he uses Stumble Upon.
Wanna know what else I did? I made cookies with coconut inside.
I made these the night before my husband left, then I gave him one to try and he said it was really good.
Then I said, “Just good? Or stop what you’re doing and look at it good?”
Then he just looked at me.
So then I walked out of the room and walked back in and pretended to be holding a cookie, then I took a pretend bite all casual and I stopped walking and looked at the cookie all amazed like,”wow…what is this wondrous thing?”. Then I looked at my husband and said, “see, would you do that after you took a bite, or would you have just kept walking without paying attention to the cookie like, no biggie?”
Then he said “I definitely would have stopped what I was doing to find out more about that cookie”.
So…there you have it. A stop walking cookie.
In all seriousness (like I would ever joke about cookies), these are really super delicious. All you need is some Double Chocolate Fudge Cake Mix (Duncan Hines thankyouverymuch), some margarine, eggs, coconut, and sweetened condensed milk.
Make your cookie dough, make your coconut filling, and chill them. To get the coconut inside the cookies, just spoon a bit of cookie dough on the baking sheet, put some of the coconut mixture on top, and top with more dough and seal up any coconut that is showing.
Easy peasy.
You need these in your life.
Coconut Filled Fudge Cookies
INGREDIENTS
- 1 box Duncan Hines Dark Chocolate Fudge Cake Mix
- 1 stick of margarine
- 2 eggs
- 2 cups sweetened shredded coconut
- 1/2 of a 14 oz can sweetened condensed milk
INSTRUCTIONS
1. In the bowl of a mixer combine cake mix, margarine, and eggs. Beat on medium until it is well mixed and a soft dough is formed.
2. In a medium bowl, combine sweetened condensed milk and coconut. Place bowl of coconut mixture in the freezer and cookie dough in the refrigerator. Let both chill for about an hour (more if you have things to do, no biggie).
3. Preheat oven to 350. Using a small cookie scoop (or spoon), scoop cookie dough on ungreased baking sheet, a few inches apart. Top with a slightly smaller scoop of the coconut mixture. Top with another scoop of cookie dough, using a spoon to seal up any coconut that is hanging out.
4. Bake until the edges of cookies are set (for me this was about 14 minutes). Remove from oven and allow to cool on baking sheet for a few minutes before removing to cooling rack.
***makes about 2 dozen cookies
These are some of the best cookies I’ve made in a VERY long time…I hope you enjoy them!!

OHMYGOSH I just died laughing. I seriously laughed so loud my Star-Wars-watching family turned around and looked at me like I was possessed by the devil. I agree. Man Trips are unnecessary, but I just hate having to juggle everything alone. I need him to sit with the kids so I can do things like troll your site and laugh loudly at Ryan Gosling’s jar cakes reference. Best.

Hilarious!! I had a chocolate cookie filled with coconut while I was in Nashville last week, which made me want to make them as soon as I got home. Your recipe and mine are almost identical!! Love yours, they look great :)
Nothing worse than having your hubby gone. Mine is about to head back to Korea so I hear everything and can’t sleep til its late so its closer to morning so less time I have to be alone. But then you get used to it and try not to count down the days til they are home and with 4 kids they keep me busy. BTW those cookies look so good I love coconut and chocolate so this would be a perfect recipe to try out.

Girl-you make me laugh everyday! My hubby is leaving in 2 weeks for a bowling tournament. He asked me if I wanted to go with him and 9 other guys. Really, to sit all weekend in a bowling alley with ten beer drinking, farty men?? I think I will pass. I am thinking that maybe I can bake in bliss without my hubby coming in every twn minutes wondering what I am doing and if I am making lunch yet. Pretty sure these are goingto be on the top of my list!!
I’m glad I’m not the only one who thinks this way! My husband doesn’t take man trips but he does go on 8 month deployments and the nights are the worst. Especially when I watch 20/20 and Dateline.

oh my gosh!!! i’ve never meet anyone else who was as traumatized by the thriller video as i was….until now! I watched it at my cousin’s house when spending the night. I did not sleep for DAYS because I was so scared that the wolf was going to pop out of the closet and kill me!!!! I was also so upset that Michael Jackson had been taken over……I was so concerned he would never be the same again! (I was sort of right)

In some cookies, I find that margarine makes them softer. But I am sure butter would work just fine :)

WHEW! What a relief to know I’m not the only one that has pretend conversations when I’m alone and hear a noise. I would seriously do it when I was younger and my parents wouldn’t be home from work yet (and I might have watched a “scary” movie..) I would have conversations and use different voices so if anyone was around they would know I wasn’t alone LOL .. it apparently worked too!

I absolutely DIED reading this!! I do the EXACT SAME THING when I know there are murders looking for me!! I usually get reeeeallly close to the door (so they can hear me good) and talk to “Bubba” (who of course is a really big man that lives with me *cough*) and then when its time for bed, i crawl in and try to fall asleep verrry still w/ the covers over my head! (if the covers aren’t moving up and down, theres no one in the bed, duh!)

My husband was actually out of town (coming home this afternoon) and while I also wanted to whine about it to the world, I kept having to restrain myself! So when I read your blog I couldn’t help but laugh – glad I’m not the only one. I also took the alone time to make graham crackers…and while they were in the oven, you inspired me to look at 5 zillion Ryan Gosling meme’s – especially those about food and crafting! Needless to say, I didn’t feel alone very long, as Ryan was there for me, too (He loved the graham crackers, btw.) Can’t wait to try these cookies!
Okay so I know I”m a little late to this post, but I had to tell you that you seriously had me dying in laughter throughout the whole thing!!! From the pretend conversation with your hubby, to the Ryan picture (which I’m usually not at all into!), I could so totally relate. But the paragraph about the man weekends, and the alternate universe cooking, I’m pretty sure you were inside my brain writing that! My husband just got home from a guys’ ski weekend that they do every year, and it’s exactly the same: he tells me about the stuff they cooked. I ask who he means when he says “we”. He says that they all do it together. I wonder why that guy never shows up in my kitchen!!! Seriously, this post bonded me to you for life ;)
i think you may be my new best friend! I too love Ryan Gosling. But today I bought some coconut filled chocolate cookies (at a veggie stand) that were quite good and decided I needed to make some of my own. (There were only 3 of them!)
