Love Bug Mini Cupcakes

Over the weekend, I decided that it would be a really good idea to snuggle up with my favorite Pier One blanket, a pint of Haagen Dazs, and the Thorn Birds miniseries on DVD.

Bad idea.  Baaaaaaad.

Not the blanket or the Haagen Dazs parts of course (those are always good ideas DUH) but the Thorn Birds part because I am a horrible horrible person who gets mad at her husband after watching romance stories on TV.

See?  I told you.  Horrible.

Brat brat bratty.

And as if 8 hours of gut wrenching, heart-ripping-out Thorn Birds romance wasn’t enough, I decided to catch the end of The Notebook on ABC Family because I cannot say no to Ryan Gosling.  It’s just a rule.

By the end of the night, I was beside myself.

I mean, I always feel like my husband and I have a pretty good thing going on.  He’s sweet and massage-ish and tells me I look pretty every day, which are the main things I need.

And really, the fact that there is no drama in our relationship is a good thing.  We met 9 years ago and that was kind of that.  We were immediately inseparable and just  always assumed we’d get married.  There wasn’t a big surprise engagement, or a huge break-up-then-get-back-together mess.  We just kind of gravitated towards the conclusion that seemed obvious from our very first date. No huge wedding or  big fuss.  Honestly, I was just glad to be with the man I loved more than anything, and saw our wedding as a tying up of loose ends.

But then I watch the romance movies, which is the stupidest idea ever, and I’m all “Gah, why can’t you be a Catholic Priest who is forbidden to be in love with me?  Why can’t our love be forbidden?  Why haven’t we ever stayed on a private island?  Alls we do for our dates is go to Chilis so I can get a margarita and eat Queso.  Siiiiiiiiiiiiigh”

“Going to an island would involve flying in a plane over water or taking a boat, neither of which you’d ever do soooo…….”

“Also, if I lost my memory, would you read to me about our love story every night?  Would you stay at the Elderly Home with me and slow dance?”

“Yes, of course I would”

“LIAR.  I don’t even think the Elderly Homes have the Hunting Channel.  I can’t believe you chose the Hunting Channel over me.  I can’t believe you’re letting me stay in the Elderly Home alone, all confused about my identity, while you watch people shoot animals on TV”

I really need to be grounded from fake romance stuff.

Except for The Notebook.  I will never give that up.

With all that being said, I am all up in the Valentiney Business already.  Pink, chocolate, and hearts are happening around here, and I think they need to happen at your house too.  These cute little Love Bug Mini Cupcakes are really fun and simple, and are sure to make your loved ones smile.

(unless you were mean to your husband after watching a romantic movie.  If  that is the case, it may take more than a mini cupcake to mend that fence)

Aren’t these little Love Bugs too cute?  I used them as mini cupcake toppers because the size was better suited for a smaller treat.

All you need are Valentines Peanut M&Ms, large heart sprinkles (mine are Wilton brand and I bought them at Michaels), candy melts or almond bark, and a black food marker.

Using a dab of melted candy melts, attach a heart sprinkle to each side of the M&M.  Draw eyes and lines with the food marker.  That’s it!!

For the mini cupcakes, I used my standard buttercream recipe and dyed half of it red.  I piped on alternating colors using a 1M piping tip.

That’s it!!  Totally easy.

These would be great for a class party.  Enjoy and have a happy Monday!!

    The Notebook-always makes me cry-even when I just read the book! I have to confess-I have never seen/read the Thorn Birds-crazy I know! I felt the same way when I met my hubby-didn’t really care avout the whole wedding fess-plus I had to wear a DRESS! A WHITE one at that!! But, it was a great day and count myself very lucky to have him! (Well, most days anyway! LOL!) I was asked to donate cupcakes for a bake sale fundraiser and I am so totally making these!!! Thanks for being so darn crafty and making us all look good by stealing your great ideas!

    I am SO guilty of this! Gah! The other day Casper (yes, Casper) was on and it got to the scene where Christina Ricci’s dead mom returns to tell her husband how she watches overs him and Christina from heaven. Totally emotional, I called my husband over to watch. He laughed. Which lead to me wailing, “I’m never going to come back from the dead to tell you that I look over you. EVER.” He seemed to think that being haunted isn’t a good thing. Sigh. They’ll never understand.

    I do the exact same thing! I rent those romantic movies, or read a love story and then I get super upset with my husband for not being a fictional character and I hold it against him for DAYS! I need to get that under control, because it’s really not his fault he doesn’t write romance novels.

    That is exactly why I’m not allowed to watch the Bachelor. It puts me in the frame of mind where I get mad that my husband didn’t choose me over 25 other unemployed women. Not good.

    Jealous!

    When I had my boys, I was so excited about being able to send the most adorable birthday treats, whatever, to school. Nope. No siree! It all has to be store-bought and pre-packaged here. Total bummer!

    How cute and adorable — just like you! I have been a Coffee Haagen Dazs devotee forever. Then. A friend sat me down, tied my hands behind my back and forced some Ben & Jerry’s Coffee Heath Bar Crunch down my throat.* Earthshattering. The coffee tastes more espresso and well, Heath Bar? Get otta here. You have to try it. Have to. *I refused to try it because I knew the only ice cream for me was Haagen Dazs Coffee. I was wrong.
    Also. I have a question about frosting. I’m not a big fan of buttercream frosting. Overly sweet for my taste. I always use a whipping cream (alone) or cream cheese/whipping cream frosting. The whipped cream alone isn’t pipable — but light and delicious. When I add cream cheese it makes it a bit more pipeable (pipable?**) but nothing like your recipe. Have you ever used the cream cheese/whipped cream and added gylatin? **My spellcheck isn’t working. Aarrgh.

      I have used whipped cream and added piping gel as a stabilizer, but it’s still not very good for piping (and melts quickly). I would really suggest trying swiss meringue buttercream. I don’t have a recipe here, but there are tons on the internet (I know Cookies and Cups has one) and it’s smooth and silky but not nearly as sweet as regular buttercream.

        Thanks, Kristan. I’ve seen Martha make Swiss meringue butter-cream on TV. I’m basically lazy, so I’ve never tried it. Some day when I’m feeling especially ambiguous maybe I’ll give it a go. Here’s my whipping cream/cream cheese recipe. It takes minutes to make. It does pipe better than just plain whipping cream and it’s soooo good. I saw it on America’s Test Kitchen . I’ve been making this since the 1960s — so they obviously stole the recipe from me — without credit. Argh! (Are you listening, Chris Kimble?) Everyone loves it.

        Marie’s Frosting

        8 oz. cream cheese, brick or whipped
        1/2 cup sugar (or even less)
        pinch of salt
        1 teas. vanilla extract
        2 cups whipping cream

        Whip cream cheese, then slowly incorporate whipping cream. Slowly add sugar, then vanilla, pinch of salt. Whip till firm. Don’t over-whip. It will be quite spreadable and I do pipe it. It doesn’t pipe with the sharp edge you get with the butter/sugar frosting but uses way less sugar. I use Baker’s sugar but any sugar works fine. This makes a TON of frosting. Lavishly frosts a 9″ round cake with plenty left over. Just cut the recipe in half if you like.
        Some notes: I buy Trader Joe’s whipped cream cheese. It’s a bit more tangy and I like that taste. Saves the whipping step needed with the block cream cheese. I always use the old fashioned pasteurized NOT the ULTRA-pasteurized whipping cream. If you can’t find it just know ultra-pasteurized whipping cream takes far longer to whip-up. I make it with a hand-held mixer and it takes minutes to whip up. The one I’m using now has a balloon whip but years ago I just used those ordinary beaters. You can add any flavoring you want. I love the plain recipe but add instant coffee, or orange extract or lemon or cherry . . . anything. Enjoy!
