Chocolate Covered German Chocolate Brownie Bites
So, remember when I moved from the sticks to the not sticks over the Summer?
Well. It has been a learning experience for sure.
I already told you all about how I learned that the nice neighbor myth is a lie. But the other thing I learned is that I am not a Big House Person.
When we moved, our house we were living in hadn’t sold yet, but I wanted to get Jon David enrolled in school before Summer was over. So we decided to just rent a place until our house sold, at which point we would start looking to buy.
Rentals, it turns out, are not so plentiful.
There were basically two options: a tiny house/apartment or a very big house. We decided to go with the big house because we were all, “yay!! I always wanted a big house!! It has stairs and everything!! We are fancy now!!” Plus, when you’re used to living in the country and having a huge yard, the thought of a tiny apartment is scary. How do you practice shooting if you don’t have a yard? Where do you park your trailer? (yes, country people always worry about having a spot to park their trailer–not the living in kind, the kind for hauling stuff or helping a neighbor move a washing machine or sofa)
Six months later, I have decided that stairs are from the Devil.
Also, big houses are too much to clean and confusing. I don’t even know where people are half the time. I’m always shouting like a crazy person, just to ask like one simple thing.
And our house isn’t even THAT big!! I mean, how do people in mansions do it? This whole big house with stairs thing has really changed my whole outlook on life, if you want to know the truth. I used to look at big fancy houses and be all jealous. Nowadays, I just shake my head and wonder what their electric bill runs in the Summer.
Anyways, now I’ve been forced to totally rethink all my childhood dreams of having a giant house with secret passageways and my own library. Because with my new perspective, passageways are just a secret living area for hobo squatters and a library is a major dust magnet. No thank you, I think I’ll do without.
I’m a small house person. In small houses, you can hear an axe murderer if he’s creeping around AND get to your ninja sword quickly, since everything is nearby. Pretty ideal, if you ask me. Also, there isn’t much dusting to do, no stairs to climb, and everyone is close enough to grab for a hug whenever you want.
Small houses win!!
Another thing that wins is German Chocolate anything. People love it. They just do. So I decided to top some brownies with German Chocolate (Coconut Pecan) Frosting and cover it all in chocolate.
If you’ve never made your own Coconut Pecan Frosting, you’re missing out. The canned stuff is okay, but making it yourself is really the way to go. I’ve tried several homemade recipes, some that use egg yolks or evaporated milk and brown sugar, but the King Arthur Flour recipe, using melted caramels is my favorite.
Wouldn’t these be the perfect gift to give for Valentines Day?
Chocolate Covered German Chocolate Brownie Bites
INGREDIENTS
- Pan of your favorite brownies, baked and cooled
- 1 lb chocolate candy coating or almond bark (I like Candiquik)
- Frosting:
- 1 cup evaporated milk
- 2 (11 oz) bags Caramel bits
- 2 1/2 cups chopped pecans
- 2 1/2 cups sweetened shredded coconut
INSTRUCTIONS
1. In a medium sized saucepan, heat evaporated milk until it starts to simmer. Add caramel and stir until it melts. Stirring frequently, bring the caramel to a boil and remove from heat. Immediately stir in coconut and pecans. Spread frosting over pan of brownies.
2. Place pan of brownies in the refrigerator for several hours. Once chilled and firm, remove from pan and cut into small squares. Place squares in the freezer for about 30 minutes.
3. Line a baking sheet with wax paper. Melt candy coating according to package directions. Place brownie bites in the melted chocolate, a few at a time. Spoon chocolate over the brownies, then slide a fork underneath and remove, allowing excess chocolate to drip off. Place brownies on wax paper lined sheet to set (since they are cold,they should set fairly quickly). Drizzle additional chocolate over tops of finished brownies.
Notes:
I used Ghirardelli Brownie Mix and baked it in a 7×10 inch pan. If you have a 9×13 pan of brownies, this recipe will still work and you will have plenty of frosting, although you may need a bit more candy coating.

Nope, not hard at all. I spooned the chocolate over, which helped, but they were nice and firm from being chilled.
I’d be really scared if I ever saw a hobo in a secret passage way!! And I never thought about how easily my ninja throwing stars can go missing in a big house – - I admit, I’m a small house convert.

Yup. Small houses is where it’s at. 5 years ago we downsized into a house half the size. It was hard at first but I enjoy it now. (Esp since my ninja sword is always at hand.)

Stairs are the devil. It forces you to get a workout! We’ve had them everywhere we’ve been stationed. The worst… carrying my laundry basket up and down the stairs.

I love your blog. It is seriously awesometasticly cute. But, I have been having an issue lately. You see, there are very few food that I don’t like. Mustard, pineapple, coconut, cherries, and mushrooms. Lately, your recipes have been including these ingredients ( except the mustard and mushrooms) and that makes me sad. Like this sad :( So, in conclusion, please make more yummy and less yucky. Then we will be bffs ( in my head) ( in the least creepy way possible) (for realz, I’m not a stalker) Thanks!
I can totally relate to the secret passage way thing. My husband and I were looking for houses one day and found one with secret passages and he was dying for it. All I saw were places for scary people to hide…or them hiding trying to scare me. NO THANK YOU! And stares are from the devil for sure. Especially if you have kids. Nope not for me. Small and cozy is perfect….but big enough to have one room just for shoes. :)
These brownie bites look delicious. I’m not big on coconut pieces, could the coconut be omitted and replaced with coconut extract? I like the flavor of coconut but not the texture. I feel like I’m chewing straw.
For real? An actual house with an actual secret passageway?! Did you get all dressed up Indiana Jones style to go look at it? And then pretend to get trapped inside? I totally would have.
I too have always lusted after large houses, but thanks to you and your practicality you have talked me out of wanting a big house. You are a genius woman, pure genius! We had a big house-I mean who seriously needs a family room and a living room and formal dining-ugghhh!! It was just too much!! We down sized into a very cute- and more managable house with a dining/kitchen combo-which I love! – a lving room and it still has 4 bed rooms-so we still have tons of space! However, it’s small enough to hear ninjas and ax murderers if they come into the house!! And seriously, I think I can just eat that frosting by the spoonful!

I.hate.stairs. Our house in CA was a ranch. LOVED it. I’m currently staying at my parents’ in MI with my son while the hubs drives the moving truck to MS, and my parents have stairs….with no toddler gate. I’m constantly running up and down the stairs with him. ‘Nuff said.
But, if these brownie bites were at the top of the stairs, I would love stairs. :)
I don’t mind stairs. Even when bringing home groceries they don’t bother me (3rd floor apartment). But moving into or out of a place with stairs is not at all fun.

The lesson I’ve just learned? I should not read your blog while waiting for my hubby to get home for dinner! These look sooooo good that I contemplated making THEM for dinner instead of the meal I had planned! Chocolate is one of the main food groups in the pyramid, right?
My hubster wanted a big house so I made him hire me a cleaner, but when he’s away I live in just 2 rooms, the kitchen and the bedroom……the rest of the house is superfulous to requirements!

These look amazing! My husbands favorite dessert is German chocolate cake so I know If I made this, I’d be lucky to get one.
As for the house, I know just what you mean. This past Summer we moved from a house with stairs to one that, while it has more room, has no stairs and OMG, I love not having to traipse up and down stairs all day to get things done. Stairs suck.
I have been living at my parent’s house while we look for a place to live, and I’m tired of all the vacuuming. It seriously takes me all day!! And caramel in the frosting? I have never heard of such a thing, but you can bet that I will be trying it out!

I love you for two reasons, ok more than that, but two main reasons – First of all anything with the caramel coconut frosting steals my heart and I have never tried making it and now I will! Second, I just read your post about the neighbors and I have your story in reverse. We had a snooty college basketball coach move into our neighborhood, so I do the right thing and make cupcakes, pretty ones, not from a box, and with toasted almonds on top, I wait until I see they are home, I wait 15 minutes to let them settle and I run those puppies over – and what do they do when I ring the doorbell? They don’t answer – they look out their window and I can see them doing it – but they won’t answer the door and take the cupcakes I made. So, I would LOVE for you to move to Iowa, I will deliver you cupcakes and any other treats your heart desires because my neighbors do not appreciate treats!!
I can actually picture you with a Ninja sword. Big house or small house, I suggest that all axe murderers stay away from your house because I have a feeling you’d give them something to remember. The brownie bites are to die for (but not in the axe murderer kind of way)!

I don’t mind the stairs so much…but the electric bill. Ouch. We just moved in and it’s tripled…in the winter. Not looking forward to Summer. But if I have these bites, I might be okay paying $700 to run my air.

I wish I’d known that stairs can really get to you when you’re old and grey. Luckily my house is all on one floor. BUT. In order to take the garbage out or do the wash or take the dog (who wants to go out four times a day) out — I have to walk downstairs. Oy vey. You would be soooo wise to get a small house with zero stairs. Big houses have big gas and electric bills, collect dust in rooms you might use once or twice a year. Remember, you can only use one room at a time. I was recently talking about these huge houses with a woman I know. She lives in a 1,000 square foot, one bathroom home with her husband, one dog, one HUGE pig (yes, I said pig — he’s very cute and very nice) and two cats. The kids, all three, grew up there and no one complained that there wasn’t enough room or cried because they had to wait to take a shower. There really is a cosier feeling in a small home and you won’t need an inter-com or bell horn to find one another.

I too live in the country. In a SMALL house. We have ample room outside to shoot our guns, park our trailers & boat, etc. We hope to build a house in the near future, so I pulled out my favorite houseplans that I have saved over the years. After looking them over, I promptly threw them in the trash. Stairs? No thank you! A separate living room AND family room? Too much to clean! Three bathrooms? Imagine the mess. The plans I am looking a now have little or no wasted space. I have discovered…. I am a SMALL house kind of person too. Love your post. They crack me up!

I’m not a chocolate cake eater but you add coconut and pecan icing on it I’m all over that– its the icing I love it and yes homemake is definately best. When I was younger my mom would buy the canned icing it would be gone soon after she brought it in the house. I gotta try these

HELP! I am going to make these for a shower. One of the Ghirardelli brownie mixes makes an 8×8 (or 9×9) pan. If I use a 13×9 pan, do I just use 2 mixes or am I just supposed to use 1 mix and they will be thin?? Also, after you dip them in the chocolate, do you refrigerate them if you are using them the next day or are they okay to leave out? Thanks for the great recipes! Molly
