Apple Cider Spice Cake

My seven year old son has trouble wrapping his mind around the fact that I am not going to grow anymore.

 

“Mom, when you get taller you won’t have to scootch the seat in the car up so close, won’t that be good?”

 

“Jon David, I haven’t grown taller since I was like nineteen.  If anything, I’m getting shorter.”

 

“WHAT????  Mom you are so wrong.  EVERYONE grows.”

 

Sigh.

 

I’ve gotten to the point where I just go along with his little charade.  I allow myself to dream of all the things I will do and reach and see once I’m like 5’3″.   Or dare I say….5’4″???

 

And I’ve decided that once I “grow up”  and get super tall and important, I will need a new career. So I’ve been thinking it over and after a great deal of deliberation decided that I want to be Chris Hansen.

 

Yes, I’ve been watching To Catch a Predator reruns on cable.

 

I mean, I’m pretty sure that I have what it takes to do the job.  I just need to grow like four feet taller because seriously that man is a giant.  But I think that you have to be in order to confront weirdos and pervs.  Unflinchingly laying out graphic photos sent by the perpetrator hardly has the same impact when it’s being done by a shortie short person.

 

And at the part of the conversation where the bad guy looks up and says “Am I getting arrested when I walk out that door?” instead of responding “It’s not up to me,” like Chris does, I would say “Actually, there are ninjas with throwing stars and flaming arrows aimed for the door, so if I were you, I’d be peeing my pants a little”.

 

So, yeah.  I will be waiting for your call, Dateline.  By my son’s predictions, I am only a few years off from the giant tallness I was destined for.

 

Until that time, I will continue to bake and be short,  obvs.

 

It’s the cider-ey time of year so I decided that a cider cake needs to happen.  This one is topped with cinnamon cream cheese frosting and an apple cider glaze.  You can omit the glaze if you want, but I loved the extra boost of apple it added.

INGREDIENTS

Box spice cake mix (I love Duncan Hines)

1 stick butter (1/2 cup), melted

1 cup apple cider (not the powdered kind you mix with hot water…real apple cider you buy in a jug please)

1/4 cup brown sugar

4 eggs

 

Grease and flour a 10x15x1 inch jellyroll pan (or line with parchment paper).  Preheat oven to 350.

 

In the bowl of a mixer, beat cake mix, butter, cider, brown sugar and eggs on low for about a minute.  Scrape sides of the bowl and increase speed to medium.  Beat for about 2 more minutes.  Spread evenly in pan and bake for 15-20 minutes or until cake springs back when lightly touched in the center.  Remove cake from oven and place on a cooling rack.  Once cake is cool, prepare frosting.

 

Frosting:

8 oz block cream cheese, softened

1 stick butter

2 cups powdered sugar

1/2 teaspoon cinnamon

1 teaspoon vanilla

 

In the bowl of a mixer, beat butter, cream cheese and vanilla on medium until smooth.  Add powdered sugar and cinnamon.  Beat on medium low until just combined.  Increase speed to high and beat for about 2 minutes.  Spread frosting on cake.  Refrigerate until ready to serve.

 

Before serving, prepare glaze.

 

Glaze:

1/2 cup apple cider

1 cup powdered sugar

1/4 teaspoon cinnamon

 

Whisk ingredients together in a small bowl.  If you want thinner glaze, add a bit more cider.  If you want it thicker, add a bit more powdered sugar.  Spoon over slices of cake right before serving.

 

Since this cake has apple in it, it’s full of vitamins to help you grow.

    My boy is already taller than me! So though I spent most of my life wishing I wasn’t such a tall girl, I’m apparently gonna spend this time of my life wishing my boy didn’t take after me. :-) These kids grow up too doggone fast. There should be a rule that they have to be in Middle or High School b4 they get this tall!

    Onto the more important stuff…. this cake seriously looks amazing. I can’t wait to make this for my family. In the meantime, I have a hot pot of coffee and am kinda wishing I could work out a trade with you. :-)

    Yummy! I may have to make this one soon! I wonder how it would be as a poke cake? With the cider glaze poured into the holes before you frost it? I love apple-y stuff as much as I love pumpkin-y stuff. Thanks for sharing this recipe!

    Sadly, I have the same problem as you and my 14 year old son suddenly can look down on me!! I want to scream at the top of my lungs that it is no fair!! I always fib and tell people I am 5’3″, maybe if I say it enough it will be true!! LOL I have to have a step stool handy in the kitchen to reach the high shelves, so I don’t think the fib is working. This cake sounds amazing ….. I may have to steal it (and give you credit of course), to use for the 12 weeks of Christmas Blog Hop that I am involved in! :)

    I feel your pain on being short. I am 5’4.5″ and my boyfriend is 6’6″. Yeah, that’s a foot and 1.5 inches taller than me. He can touch the ceiling while I need a step stool to reach the second cupboard. *le sigh* I am going to make this cake and when he tells me that I shouldn’t sit and eat it all in one sitting, I will glare at him and tell him that I am doing it to get taller … for him … and stuff.

    Big ups for the shorty short pants! I’m 5’3″ in my dreams too.
    And I think they should have ninjas with throwing stars as well.
    AND I agree that this cake should be considered healthy as it is made with apples.

    p.s. Why don’t I have spice cake mix in my pantry? I have every other kind.
    p.p.s. I wish I was eating that piece of cake right now for lunch.

    I feel sad sometimes for being short(5’1″) but other times I like it. I like being summarized as ‘petite’ such a pretty word. XD I just wish i could reach high shelves, not even at home…that one is not that big of a deal. But, looking up in a store at something you want and looking around at all the lucky tall people is sad! I end up without it unless I have someone with me(my shyness will not let me ask for help…it’s a curse, really.)

    Great cake too! I love love love fall flavors! :D Apples and pumpkins everywhere, woo hoo!

    once you hit 5’4″ people automatically become scared of you. you can walk down dark alleys alone, make citizens arrests and stop a runaway train. so once you grow up you can do all of this stuff too. ;)

    I’ve totally grown 1 inch since I graduated high school!! I was 5 foot when I graduated in 93, got measured last week (cause my 13 yo was making fun of me since he’s almost as tall as me) & I’ve totally grown 1 inch!! I’m 5′ 1″!! I bet if I make your cake I can grown another couple of inches!! I will NOT be sharing it w/ my 13 yo, I’ll give the 4 yo some, he’s a little bitty thing. Smallest boy in his preschool. Cake looks awesome! Thanks for sharing it!!

    I tell my kids the only way Mommy can grow is wider, not taller! I love them when they say that though. How great it is to see life still so full of possibility. We could all be giants.

    I have always been the shortest and the smallest in stature, in my family and throughout my school years. In fact, my oldest sister took me to school on my first day of Kindergarten and the principal sent me home (in tears). He said I was too little to be five years old. My mother gathered up my three younger siblings and marched us all back with my birth certificate in hand. More often than not, I’m the shortest and smallest whenever I’m with a group of adults now too. My mother always used to tell me that good things come in small packages :) I’m 5’2″, probably only 5’1″ on a good hair day!

    P.S. I would not be able to function in my kitchen properly without my little step stool

    Thanks for the recipe! So good! Just made it tonight, although I made it in the form of cupcakes (regular and mini) They are very light and fluffy! I hear ya with the short stuff. I’m 5’2″ (almost), and I spent most of my childhood believing that one day I’d catch up to the rest of the kids….I never did.

    I made this yesterday and I was very pleased with the recipe, the cake, you and me! I read your blog to my husband sometimes. He is very funny and quite a humor critic and he thinks you are funny so it means something! I told him that not only are you funny but you make a mean cake too! The cake was so tall and fluffy (the 4 eggs maybe?). The frosting was yummy. I first thought I’d skip the glaze but thought what the heck – you can never have too many toppings. I’m glad I made it because I loved the extra apple cider flavor. I can’t wait to get home tonight to eat more. Thanks!

    Hi there. I am in the process of making this cake now. Unfortunately, it made so much batter that it’s overflowing all over my oven and although it’s smelling amazing, it’s still all liquid in the middle after baking it 20 minutes at 350. :( Maybe I should’ve used a bigger pan.
