Mint Oreo Cupcakes
Sometimes I think that the world would be a lot easier if people would just be normal.
Like, maybe…it’s a subject they could teach in school.
And then, anytime you go to do something, you could stop and think about all the years of Normal you took in school.
Like, do you remember on Real Housewives of New York when Kelly was telling Alex that clomping down the stairs all ubrupt and turning red and being all out of breath and yelling was not what normal people did?
I totally knew what she meant.
I mean, in my opinion, unique and unnormal are not the same thing. You can totally be different and yourself without driving people crazy with your strangeness.
Just in case you aren’t on board with my Normal Class yet, allow me to expand on some of the subjects I would be going over as part of our curriculum:

Appropriate Questions for Dummies
Awkward Hugs–How Long is Too Long?
You and Your Eating Habits–Suitable Conversations/Sound Effects for the Dinner Table
Staring is Not Okay
(and my personal favorite) Texting 101 and Why You Should Never Actually Call a Person on the Phone With Real Voices
Anyways, this is just an idea and obviously in the very beginning stages, but I think if we all call our school boards and demand it, we can probably make this happen.
In other, perfectly normal news, I made cupcakes with Mint Oreos the other day. You probably should too.

INGREDIENTS
For the cupcakes:
24 Mint Oreos
Box Chocolate Cake Mix
1 stick of butter, melted
1 cup water
3 eggs
Preheat oven to 350. Line 24 muffin tins with cupcake liners. Place a Oreo in the bottom of each liner.
In the bowl of a mixer, combine cake mix, melted butter, water and eggs. Beat on low for one minute. Scrape sides of bowl and increase speed to high. Beat for another minute.
Fill muffin tins 2/3 full and bake for about 15 minutes or until tops spring back when lightly touched. Allow to cool completely on a cooling rack before serving.
For Frosting:
15 Mint Oreos, crushed completely into superfine crumbs
4 sticks of butter, softened
4 Tablespoons milk
8 cups powdered sugar
2 teaspoons vanilla extract
2 teaspoons mint extract
A few drops green food coloring
In the bowl of a mixer, beat butter, milk, and extracts on low speed until smooth and combined. Slowly add powdered sugar and beat on low until just mixed. Increase speed to medium high and beat for 2 minutes. Add cookie crumbs and beat on low until well combined. Add a few drops of green coloring until desired shade of green is reached.
Pipe frosting on cupcakes (I used a large round tip like THIS ONE) and top with an extra Oreo, if desired.
You will love these!!
And if you don’t, you are probably not a real human.

Another topic for your Normal class – Common Courtesy and When Not to Say Mean Things. Many people do not understand that their criticisms aren’t actually helping!

those cupcakes are awesomely awesome (is it ok to describe something with itself??!)….my 3 kids love mint (is that weird for kids under 7?) because isn’t mint like an old person flavor? I always loved mint tho too, so they get all the weird stuff from me…like i would always track down a mcd’s for a shamrock shake around st patty’s day…did you know there’s a website where peeps can post which mcd’s have shamrock shakes…? but i digress…!

I would totally take your classes and could even add some topics if you need a guest lecturer. I could cover the following topics in detail and with unwavering expertise:
1. If you are capable of posting on Facebook, you really don’t have a migraine.
2. If you have already run 14 miles and done the amount of chores a normal woman does in a week by 8 a.m. you should keep it to yourself as it makes the rest of us hate you.
I can come up with many more. My friends and I always wonder why everyone isn’t just like us!

I’m ALL in favor of normal classes. Maybe you could even get a license at the end, like a driver’s test! And if you meet someone who isn’t a licensed normal person, you’re allowed to ignore them.

Another class that needs to be taught – “Personal Grooming/Hygiene and why it should be done AT HOME, In Private”
Because some people I know think that flossing ANYTIME ANYWHERE is okay – GROSS! Also brushing your teeth while in my car is disgusting. Applying deoderant at church while at your seat is just out of line as well as applying numerous eye drops while the pastor preaches and you are in the front row.
I think another useful class might be – “THINK BEFORE YOU SPEAK and POSSIBLY DON’T SPEAK”
As my kids would say “My head just about popped off!” Those look awesome and need to be made ASAPronto!!

Just wondering why not follow the directions on the box for the cake mix? Love your recipes…I made the cookies and cream cupcakes and one of my husbands friends called them heroine cupcakes and another guy wanted to know if I had a sister who baked like me. Made me feel great!
You could totally make them like on the box…this way tastes better to me…but they’ll be great either way!!
What would happen if someone failed the class? Even if the class wasn’t graded, everyone in the class would know who needs the ‘extra’ help. I would be sent out of the class because I would be caught laughing at the responds people would give. It sure would be a fun class to take!

Oh–my-gosh- I’m laughing about the pre-oreo discussion on Normal! I think they do need to teach that in school, along with good-ol-manners, and maybe the phrase that all of us need to remember…do unto others as you would want them to do unto you! I love that and say it to my kids all of the time. It makes them think.

My toddler helped me make these last night (well, she dumped the ingredients in the bowl for me and put the oreos in tbe bottom of the cupcake tins, but still!). She wanted to help because they were for her baby sitter’s mom. Anyway, they were fantastic! I was distracted and didn’t follow the instructions properly on the frosting, but they were still soo good! I’m living in SC and we don’t have DQ down here, but the frosting is like a mint-oreo blizzard! YUM!

Those cupcakes are absolutely stunning! Fantastic job! I’ve thought a lot over the years about how I wish they’d taught things like that in school. I understand that kids are supposed to be taught stuff like that by parents, but in circumstances where they didn’t it sure would have been nice to have learned it somewhere!! Thanks for this recipe. I used the frosting without the Mint, and Regular Oreos for my son’s 8th Birthday! It was a hit…everyone LOVED em’. My son said, “It’s the Bestest Cupcake Ever!”
I showed these to my husband while he was watching football the other day, and he actually turned AWAY from the game to basically drool all over my laptop (not really, but you get the idea). I mean, usually the house would have to be on fire for him to tune out the NFL, but I’ve finally found something that can capture his attention mid-touchdown. :)

With Kari – 4 sticks really? With butter at almost $5 a pound and Oreos at the same, I’ll just have to enjoy the photos and dream of mint…and I will!
You can get by with halving the frosting if you don’t pipe it on high like I did. And as for the cost…I realize that they aren’t the cheapest, but even if it costs you $15 to make the batch, that definitely beats $3 per cupcake or more than fancy cupcake places charge…and these are every bit as good!!

Cupcakes do not look like this. Frosting turns grey with Oreos added. Bad recipe.

Just made these for my dad for his 55th birthday tonight, waiting for the cupcakes to cool so I can frost them, and of course I had to lick the beaters after I made the frosting, OMG so good!!! I am on a diary free diet (breastfeeding issues) and these were sooooo easy to adapt and leave out the dairy, thanks for the recipe, cant wait to eat them!

Quick question though. I’ve been reading through cupcake recipes lately and have seen several that use a Oreo cookie bottom. Does the Oreo stay crunchy when it’s baked? I don’t know that I’d like a crunchy bottom with my cupcake. I may have to revise this recipe so that the Oreos are just crumbled in the cake batter.
