Cheesecake Filled Brownie Bites

One of my biggest pet peeves in life is indecisiveness.

Of course, I’m not claiming to be perfect. I’m scared of everything, I prefer robots to human company, and I’m one of those people who orders a Diet Coke with their Big Mac.

(Helloooo, I’ve got to cut calories where I can, right?? Diet Big Mac isn’t an option, obviously)

With all that being said, one thing I AM super great at is decision making.  If there was a job where you could be paid for your ability to make sound decisions quickly and efficiently, I’d be wearing a red velvet robe and a monocle, diving into a room full of gold coins.

So I’ve decided that maybe it would be a good idea to let everyone in on my decision-making secret. It can be my way of making the world a better place.

So here it is:  When faced with a super important decision, I try to imagine how two of my heroes, Punky Brewster or Chuck Norris, would handle the situation.

And I know you’re all, “how do THEY influence your decision, they aren’t even relevant” but seriously, I beg to differ.

I mean, Chuck Norris was able to walk away from explosions without turning back to look, which requires way more self control than I could ever muster.

And Punky made everything she touched turned into a rainbow of magicalness.

When faced with these facts, how can anyone argue?

Honestly, there is really no situation in life that can’t be resolved with a roundhouse kick or a rainbow-ey make-over.

That’s just a fact.

So next time you’re out to lunch with a friend and she’s all, “what are you going to get” and you’re all, “I don’t know, what are YOU going to get”, just remember my advice and order a honkin’ steak (Chuck) and the hugest, most obnoxious sundae the menu offers (Punky).

I think you’ll find that as always, Chuck and Punky have served you well.

Another way I’d like to contribute to world peace and the general well-being of the human population is by offering you a super easy and delicious treat recipe.  Cheesecake bites are covered in brownies, white chocolate, and sprinkles.

What isn’t good about that?!

INGREDIENTS

9×13 pan of fudgy brownies, baked and cooled (not cakey, please)

Small container of frozen cheesecake bites (I used Sara Lee Strawberry Cheesecake Bites)

16 oz white chocolate candy coating (or candy melts)

pink sprinkles, for garnish

Using your hands, crumble up your brownies so you can mash them together with no large chunks.  Take a large spoonful of brownie and mash it into a flat circle in your palm. Place a cheesecake bite in the center and wrap the brownie around it.

Once all the brownie bites are formed (you should get around 20ish), place them on a wax paper lined baking sheet in the freezer for 30 minutes.

Melt your candy coating according to package directions. Dip brownie bites in the melted candy, spooning the candy over to coat. Remove brownie bites by sliding a fork underneath, letting the excess drip off, and placing back on baking sheet. Sprinkle with sprinkles before chocolate sets. Place back in the freezer for about 10 minutes to set.

Makes about 20 brownie bites.

Easy peasy, right??

    I literally squealed when I saw these! Did you hear me? I think all my neighbors did…and probably my relatives in Texas and maybe the ones in Louisiana, too. Its not all that far from here in Arizona.

    I am so making those tomorrow…as a trial and then I’m making them again Monday for my girlfriends….and I will probably have to make them next Wednesday, too, because after all, it will be Wednesday.

    Talk about Yin Yang – I just read another post about a blogger her lost her husband (young) unexpectedly on Saturday and cried.

    I can see how my day is going to go. – Simply adorable and will definitely come in handy.

    Mr. Sweet Butter needs this most of all, his inability to commit to a decision can drive me insane. I’m pretty bad but eventually bite the bullet. (took me nearly three months to settle on a camera).

    Punky Brewster used to be my fave.
    I never got on board with Chuck Norris, but I do have to say that not looking back at explosions when you walk away in slow motion is pretty impressive.

    What brand of candy melts do you use? I’ve been using Wilton’s and even though I’m completely melting the melts, it’s not coming out as smooth as I would like it.
    Great idea! I was thinking last night to make chocolate cake/cheesecake truffles! Great minds think alike!!

      Lately I’ve been using CandiQuik. You can buy it in a big block in the baking aisle at Wal Mart. It comes in a melting tray so all you have to do is just stick it in the microwave and it melts quickly and perfectly smooth!!

    You my friend are dangerous. I shall dub you the Diet Assasin. You never know when you will attack.. all stealth with your with fun colorful sweet treats and then… WHAM diet dead in it’s tracks. The poor curious soul who is like “oooooooh a msg from my bloggy friend ,I wonder what funny things she has to say today.. I mean her blog is pink ,it can’t be dangerous …” WHAM hypnotized by your hilarious quips and awesome pictures that then make me go to the store and have to try and recreate… then eat , and eat and eat… uuuggggh.     Amazing recipe and fun, FUN post! You said Chuck walks away from explosions and Punky makes everything rainbow-y. All I could envision after that was the two of them – hand in hand – walking away from an exploding rainbow!
