Lemon Meringue Cookies

Once upon a time, in a far away land, (or not so far away if you live near Arkansas) a 23 year old girl met a tall, dark, and handsome 29 year old guy.

It was strong-like at first sight.

This guy was wearing a camo hat.  So why the girl didn’t realize that he would one day move her to the country across the street from a field of cows is beyond me.

Anyways.

At first, moving to the country was exciting.  The girl was young and full of ideas like “all you need is love!!”.

But then one day after about 8 years, she realized that love is a lot funner when there is a mall nearby and pizza delivery available.

And since her husband already commuted to the city in his humongous  truck every day, he agreed that they needed to move because their gas bill was like seventeen thousand dollars a month.

Also, I forgot to mention that this husband didn’t like lemon meringue pie.

Which probably means that he is an extra terrestrial, but he is a really nice and cute guy so the girl just kind of ignores the alien thing and hopes that if nothing else, maybe he has a really cool spaceship.

Anyways, they finally moved to the city.

And ordered pizza!!

And someone brought it to their house. Just like that!!

The only bad thing is that the husband still didn’t like lemon meringue pie.

Even city life couldn’t change that.

Because he is an extra terrestrial.

So…the wife made lemon meringue cookies. Because she LOVES lemon meringue pie but doesn’t like looking like a cow, sitting and eating a whole pie alone.

ALONE!!

And then she gave me the cookie recipe. It’s so good. I mean, really really so good. And easy too.

She really hopes that you like it.

INGREDIENTS

2 sticks butter, softened

1 3/4 cup powdered sugar–divided**

2 teaspoons vanilla extract

2 1/2 cup flour

About 1/2 cup lemon curd

In the bowl of a mixer, beat butter, vanilla, and **3/4 cup powdered sugar until smooth and combined. Add flour and beat until dough forms. If too crumbly, add a teaspoon of water or so. Refrigerate for about 30 minutes.

Preheat oven to 350. Roll the dough into roughly 1 1/2 inch balls (about the size that a cookie scoop makes) and place on an ungreased cookie sheet about an inch apart. Press your thumb in the center of each and fill with a very small spoonful of lemon curd. Bake for about 10 minutes, or until bottoms are golden brown. Allow to cool for 5 minutes, then coat with remaining powdered sugar.

For meringue:

5 egg whites

1 1/2 cup sugar

In a metal mixing bowl over simmering water, whisk 5 egg whites and 1 1/2 cup sugar until all the sugar granules have completely dissolved. Place bowl on stand mixer and beat on low with whisk attachment for 5 minutes. Increase speed to high and beat 5 minutes more. Pipe (using a small open-star tip) or spoon meringue on cookies and brown with a kitchen torch (preferably) or your broiler.

Of course, this is purely a fairy tale story.

But if a man I know and love should happen to read this and get offended at the alien thing, I want him to know that I was mostly kidding.

Sort of.

(Really…who doesn’t like lemon meringue pie?? SO weird)

    These look absolutely delicious! I love meringues, but I always feel like they need a little boost – these have that!! I have no idea who would not like a lemon meringue pie – seriously…but it’s good that your friend discovered these cookies – whew!

    Other than your sense of humor always starting my day off with a laugh, thank you for giving me the best cookie I could have wished for. Adore Lemon Meringue in any form. Unless I have guests making a pie isn’t smart because I’d wear my carpet out cutting one small piece of pie at a time until it was gone and I’d have trouble getting through the door when I had finally eaten the last sliver (a hour or so after I started). Thank you, thank you, thank you. It was genius of you to think of cookies. And by the by, did you get that bar you were wanting. Any pix of the new house planned?

    Pizza delivery…yup, I remember that! I now live in a teeny, tiny town in the mountains and no one delivers anything.

    Hey! I love the idea of making lemon meringue cookies because I have a friend who loves lemon meringue pies but its a lot easier to send cookies than a pie in a care package! Just a question: do you have any idea how long these cookies might last in an airtight container? I’m mostly worried about the meringue; I’ve heard its very delicate. :O
