Cherry Limeade Pie in a Jar

So I have decided that having a yard sale is pretty much from The Devil.

Especially when said yard sale is in rural Arkansas in 110 degree heat.

The only time it’s halfway bearable to be outside is like 5:30 in the morning and honestly, I’m pretty sure that being up that early is borderline illegal.

Anyways, the whole thing started with spending two sweaty evenings helping my husband haul old furniture outside which didn’t go well at all. Mostly because I am petite, so I have weak wrists and also I am pretty sure I was born with a heat allergy. I can tell because it’s hard for me to lift heavy stuff and I get super uncomfortable when I’m subjected to high temperatures.

Helloooo…not my fault. Like I can control the way I WAS BORN, HUSBAND.

The festival of fun ended with me sitting outside in the heat (which I’m allergic to, so I was RISKING MY LIFE) arguing with people over what my old stuff was worth and listening to them tell me how it was “too hot to have a yard sale”.

While they were AT. MY. YARD. SALE.

And I really wanted to point out that out, but that may have meant losing out on two sweaty quarters for an old onsie of my son’s from 6 years ago, so I just nodded and kept my mouth shut. It was sort of hard to talk anyways, what with my heat allergy and just focusing on staying alive. Also, my weak bird-like wrists were sore from the previous day’s lifting.

No one even felt sorry for me, except for my husband who did make a trip to the gas station to get me a biscuit and gravy and 3 scratch-off lottery tickets.  Which really makes any bad day just a bit brighter if you ask me.

So anyways, I am done with yard sales forever and ever after. The End.

It’s been so hot out, I thought a nice cold Cherry Limeade Pie would be the perfect dessert. I made them in jars because…it looks cool PLUS you can keep them in the freezer with the lid on until you want to eat them!! Handy dandy.

You’ll Need:

Crust:

2 cups graham cracker crumbs (you’ll need about 15 whole sheets)

8 Tablespoons butter, melted

1/4 cup sugar

Filling:

12 (8 oz) wide mouth, half pint jars (use ones made for canning like Mason or Ball–they won’t crack in extreme temperatures. I bought mine at Wal Mart)

8 oz can frozen limeade

7 oz (half a 14 oz can) sweetened condensed milk

8 oz Cool Whip, thawed

Cherry Whipped Cream:

1 1/2 cup heavy whipping cream

Jar of maraschino cherries

1/4 cup powdered sugar

Preheat oven to 350.

In a large bowl, combine graham cracker crumbs, melted butter, and sugar. Press a few spoonfuls in the bottom of each jar, going up the sides a bit. Place jars on a large cookie sheet and bake for 6 minutes. Cool completely.

Place limeade, Cool Whip, and sweetened condensed milk in a large bowl. Fold together carefully until fully combined. Pour into each jar, leaving room at the top for the lid. Screw lids on each jar and place in the freezer for at least 4 hours or overnight.

Before serving, prepare whipped cream. In a mixing bowl (preferably a metal one that has chilled in the freezer for about 15 min) whip cold cream, 3 Tablespoons of cherry juice from the jar of maraschino cherries and 1/4 cup of powdered sugar, with the whisk attachment until peaks form. Spoon on top of pies and top with a cherry.

If you love Cherry Limeade, you will love these!!

And if you don’t love Cherry Limeade…you probably won’t. BUT–you should make them for someone who will. Geez, stop being so selfish.

    Yum! I’m on a desserts in jars kick, so this is just perfect! And I LOVE the sound of the cherry whipped cream… I’ll have to add that to my mile long “recipes to try” list! So glad you survived your yard sale, even if barely! =)

    This is a GREAT idea. I do like a good cherry lime. In fact you prompted a Sonic run. Had a garage sale this weekend also. But…I am really and truely allergic to the sun. I have vitaligo so no outdoors for me when its like this. On my to do list!

    I agree that garages sales are the devil and so is the heat down there! Holy cow. You cute little pies in jars sound like the perfect treat. I must say I have jealousy issues of your proximity to Sonic which is what I will always think of when I hear “cherry limeade”!

    You are so witty and hilarious! I just found your blog recently and have been enjoying reading it. Your writing is such a joy to read, and I so look forward to your posts! They bring a smile to my face when I read them.

    Those pies look so yummy! I am definitely going to have to make those for my family, they love it when I bring them dessert in individual jars. And I totally agree, those are definitely a great idea to beat the heat!

    these are very sweet looking Kristen. I have wanted to do something “in a jar” lately so these are a great idea…the last “yard sale” I participated in at my neighbors house the people with dinking with me over a 50 cent practically brand new gymboree dress my daughter wore ONCE. Geeeeezzzz…..

    My heart goes out 2 U, U being out in that heat. Consider donating your garage / yard sale lefto-overs to charity or take to goodwill. Saves from haing to store any remaining items back in storage again.
    Now, onto today’s recipe.
    These look Awesome and I must make these……hot and very dry here in Texas as well. I even have everything already on hand. :}

    I convinced my hubby long ago that it was more noble to donate our items than have a yard sale. I enjoy occasionally going to them – but having them? No thanks! You can’t walk away…. Dessert looks delicious and beautiful!

    I have been “planning” my yard sale for about 2 years now, I keep hoping my husband will get the hint and just load up the stuff and go to the Benefit Shop in town. I live in LA (thats Lower Alabama, for the ill informed) and the Devil has moved in! I think I will “plan” for a while longer, and make something cold.

    I LOVE IT, I LOVE IT!! LOL I sympathize with you on the heat!! Heat is not my friend either. I have been to Arkansas and have relatives that live there. The heat and humidity there in the summer is a killer. I live in Texas and we have TERRIBLE heat but not all the humidity like Arkansas. ALSO, I love your blog and your recipes. Can’t wait to try this one!

    I live in rural AR also — no way will I do yard sales in the summer! (The HEAT, BUGS, HUMIDITY, and HEAT . . .) I’m hard pressed to even do one in the fall! I just take all of our old stuff to a local shop that is for unwed moms and give it to them — then I’m not throwing it out, but others can still use it. Love your blog — just discovered it last night and I’m totally hooked!

    Ummm, yes yard sales are straight from the devil himself. I’ve tried my hand at hosting ONE of them in my lifetime. When folks started showing up TWO hours early to argue prices with me, I knew it was gonna be a day and a half. Good grief. I lost a lot of faith in humanity that day and I vowed to never torment myself like that again. :-)

    I firmly believe there is nothing else to do in this summer heat than stay in air conditioning and eat…. and this looks so good! Reminds me of Sonic Cherry Limeades.

    Ok, so I hope this isn’t a stupid question but I bought the great wide mouth jars for a couple of different baking projects that I want to do (including this one!) but have heard that I should or should not sanitize my jars before I use them. Someone told me that I only have to sanitize them if I was planning to make jams. So now I have jars just hanging out because I’m terrified that if I use them without sterilizing them I will give my family food poisioning or something worse but if I do sanitize them and I shouldn’t have then I would ruin the jars or something… Help! Should I or shouldn’t I sanitize my jars before?
