Melted Ice Cream Cupcakes
Awhile back, I came across THIS cake on Pinterest and I immediately knew that I wanted to create an unmeltable cupcake version.
So when my friend Callye and I decided to do a cookie/cupcake collaboration, I knew that I wanted our first theme to be…ice cream!! Ice cream is such a fun summer party theme, and you don’t have to save it for just birthdays. Slumber parties and cook-outs are the perfect excuse to serve these fun treats.
Plus, people will think you worked really hard on them and you will get tons of compliments. And all the other moms will spend the rest of their born days trying to live up to the party treat standard you’ve set.
Which is what we’re aiming for, right?
For these cupcakes you’ll need:
Frosted cupcakes, placed in the refrigerator for about an hour for the frosting to chill.
Use a boxed mix, homemade, whatever. These particular liners are Wilton and can be found at a hobby store or on Amazon.com. If you need a frosting recipe, click HERE for a tutorial on the frosting I use. You can pipe in on with a large open star tip, or just pile it on with a spoon and frost it the best you can.
Candy melts or almond bark
Obviously I used chocolate, but you could use whatever color/flavor you want.
Sugar cones
One per cupcake. If you find small ones, use those. If not, you can cut the bottom 2/3 of the cones off by gently sawing through with a serrated knife. Sounds hard but I promise it’s very easy. I didn’t break a single cone.
Cake donut holes
Again, one per cupcake. Plus a few to eat. You know you will.
Sprinkles
Duh.
Cut your sugar cones and line a large baking sheet with wax paper.
Melt your candy melts/almond bark according to package directions. Spoon small puddles of melted candy on your wax paper (one per ice cream cone).
Using a fork or toothpick, dip donut holes completely in melted candy and place on top of the melted candy puddles. Sprinkle with sprinkles and place a cone on top. Once all your ice cream cones are finished, place in the refrigerator to set.
Once your ice cream cones are set, remove the cones and your cupcakes from the refrigerator. Spoon melted candy over your frosting, and immediately sprinkle with sprinkles. Place one of your “melted ice creams” on top and place back on the baking sheet. Once all your cupcakes are finished, place in the refrigerator to set.

Rather than use donut holes, though, I used Ferrero Raffaello candies and Ferrero Rochers (they’re ball-shaped, about the same size, and probably are my favorite candy ever).
